Your old recipes will all work in a steam canner. And you will be able to can lots of stuff that you cannot do with a water bath. With a water bath canner the food has to have a high acidity, like tomatoes, pickles or fruit. You may can veggies in a steam canner. I still like the waterbath method. Very low tech and I freeze veggies for a higher vitamin retention. Steam canning is faster, however, so if you want to do batch after batch every day that would be a consideration. I put 1 batch on to can about twice a week. Not worth the added expense for me.
