Needing Help on Ideas with New Diet

Hi everyone I just started a new diet today where i am only allowed to have certain foods. I need help in finding ways to cook them following the diet since everything i cook has fats and or dairy in it. You are only allowed to eat:
Meats:
beef, chicken(wo skin or fats), turkey, fish, 3 slices of diet turkey ham, and 3 scrambled eggs, and soups.

Vegtables:
tomatoes, onions, lettuce, cauliflower, pickle, broccoli, cereals, ect.

NO Corn, Potatoes, mayo, sugar, fruits, cocktail diet fruits, juices, alcohol or dairy. I can have any spices that i want.

I can have bread only 40 calories worth a day (im trying to stay away from it as much as possible though), I CANNOT have any milk products at all of any kind. I CANNOT have any type of oil, grease or butter (includidng olive oil). I CANNOT have any rice or pasta.

Hello,
Can you have rice? If so I have made a great healthy version of fried rice. Just make jasmine rice. While thats cooking cook some salmon, carrots and broccoli once almost done add some eggs and then mix all together. You can put some braggs amino acids in it for flavoring. good luck!

Hi. I dont have recipes, but I am concerned about a diet that doesnt allow fruits. Is this a diabetic diet? Also, I am concerned about the kiddos. They still eat fruit, right?

Omelets and salads! I invented this salad with lettuce, beans, pico de gallo (tomato, onion, cilantro and a little bit of serrano pepper). Of course you can include chicken.

Nothing better than a salad with steak.

Cucumber, sliced with the juice of a lime and a touch of salt... irresistible and refreshing.

Omelets: scramble one egg, put on a frying pan and distribute evenly to cover the pan, then turn around to cook both sides and add chopped veggies, ham. Then top with cooked or raw salsa. Yummy!

Well, if you can't have fat or dairy, then I would stock up on rice dream (it's a milk substitute that is made of rice and it's better than soy b/c soy can wreak havoc on your thyroid function in excessive amts.) Rice dream also makes their own non-dairy ice cream. Get a good non-stick skillet like a bialetti or a pampered chef and use wooden or silicon spatulas only. Can you have art. sweeteners? If not, try stevia. You can buy it in a powdered form. No calories in it.
Make yourself egg whites for breakfast in your non-stick. Instead of oil, you can use a little water to saute' or loosen foods up. (It works better if you already have the pan hot before you put food in the pan - but be carefull b/c non-stick cookware hates being heated empty for lengths of time.)
I like making faux crepes. I take egg white, and mix a little stevia, and a little vanilla extract (which has a touch of alcohol in it. You can get vanilla flavored stevia by the way.) and stir it up. Pour it in your little skillet and let it cook till it's ready to flip like a pancake. While that's going, get some strawberries, slice them, and sweeted them with a little stevia. Put them inside the crepe and roll it up. drizzle a little of the leftover strawberry juice from the berries on top and you've got a yummy fat-free crepe. If you skip the yolk, you're all the better. when you're sauteing veggies, use a little water instead of butters or oils. Of course if you can use a little grapeseed or olive oil, go for it. Just go EASY on it. Grapeseed is a little better, though because it's got tons of antiox, defense from free-radicals, and it has a much higher smoke point than olive oil. The one other prob. with olive oil is (and I read this several mos. ago, hopefully it's been remedied) that some companies are labeling bottles olive oil, when it's really mostly canola or veg oil that's been dyed. Also, the problem is that most olive oil comes in these clear containers which contributes to the light/heat exposure causing it to become rancid. All oils should be kept in a cool/dark place. Anyhow, you've got plenty of options now-a-days with so many people being lactose intolerant, or vegan. Good luck on your diet. I wish you great success.

Have you tried making a frittata with eggs and the vegetables you mentioned. This can be served for breakfast or paired with a salad for lunch and dinner.

we like to marinate chicken and beef in balsamic vinegar (or balsamic vinegar dressing). Also, when we're lazy and don't feel like cooking, we throw some chicken on the stove with a can of rotel (or some pace picante sauce). Yum, yum! Add some brown rice, and voila, a meal. If all else fails, throw stuff in a crockpot, that's what I do. I usually put my vegetables in first (carrots, corn, peas, etc, etc) then the meat on top, maybe a cup of water, add spices, set it to cook on low for about 6 hours. godairyfree.org (I think that's the website) has a ton of recipes. I noticed you're allowed to eat cereal, be careful. You would be surprised how many cereals have dairy in them. Rice Dream is pretty good (I like the vanilla flavored one) and Super Target sells it. Whole foods sells it too, but it's like a dollar more. You could also have goat cheese, I believe. Most nondairy people can handle goat cheese (I can). It's just finding one that's a good fit. I've also heard of cheese that's made from rice milk, but I haven't been able to find it yet. I'm curious, if you can't have sugar, can you have sugar substitutes? I think those are worse, IMO. Aspartame (sp) wreaks havoc on my family digestive system (ie always running to the bathroom). Good luck on your diet!

Sounds like we are on the same diet, I agree I also need different ways to cook CHICKEN, it is getting preety old. Maybe some fat free / sugar free sauces would be good, does anyone have any ideas?

I have been using a good low card cook book. It sounds like the recipes my fit your diets restrictions. It's called "500 low card recipes" by Dana Carpender. It's heavy on the lean protein and veggies, but you may have to work around the dairy. Hope that helps.

I try to watch what my family eats and not try to cook in too much oil or fat. My suggestion would be to try the meats on the grill. I take the boneless, skinless chicken breasts and marinade season them with my favorite spices (onion powder, garlic powder, and Tony Cachere's Cajun seasoning), then I pour some soy sauce over them (not a whole lot) and add a little bit of water (to make more of the marinade). I let that set most of the day (if you have the time) turning every so often so the marinade covers all the meat. I then grill them until the middle is done. Even my kids ask for seconds. Great flavor without the fat. The chicken stays pretty juicy also. I usually serve with a steamed vegetable. The broccoli and cauliflower I steam with a little bit of lemon juice in the water and add lemon pepper when done. Just a small idea that my whole family enjoys. We have it at least once every two weeks.

You are setting yourself up for failure if you restrict too much out of your diet. I agree with Djuana. DIET is a nasty four letter word. I prefer Lifestyle change. If you look at it that way, then you will have a better chance of succeeding. You didn't mention whether you had allergies to dairy (unless it's the particular diet you have chosen). If you can stay away from the "white" stuff-white flour, white rice, potatoes (sweet potatoes are a better choice), pasta, anything with "sugar" in any form, then you will succeed. Don't fry anything instead, stir-fry (various oils on the market that are excellent and healthy for you), bake, broil or grill. You do need some good fats-avocado, fish oils (salmon is excellent)since the good fats is what gives your skin it's moisture and elasticity. Also, a diet that also includes whole grains is excellent for your digestion and adds fiber which creates a fullness. It also aids in digestion and will allow your body to eliminate without constipation. Is this a diet provided by a physician? Exercise/walking/yoga, etc whatever makes you happy will also aid in losing weight. Weight bearing exercises are great since it builds muscle which burns fat. Restricting your diet too much not only adds to "cravings" but it also allows your body to hold onto it's fat stores because it will go into "famine mode." I do have some excellent recipes but again you can look online under Food Network and check out what they have to offer. Diets didn't work for me. I lost weight but when I was too restrictive, I became frustrated and gave into my cravings and gained all the weight back and then some. If you create healthier meals, eat small meals throughout the day (5 to 6) then you won't be hungry, you will be giving your body the vitamins and nutrients that it needs and you will give your boys a healthy lifestyle to follow. You would also be doing your husband a favor by creating something better for him to eat as well. Make it a family lifestyle change and you will succeed. I also have 2 boys - had them right back to back...a 2 1/2 yr old and a 15 month old. I know what you are going through. The trick is with all foods..no matter the content...fruits and veggies are your FRIEND...fresh ones not in the can. Those have alot of syrup in them.

I went from 215lbs. to 143lbs in 2 months. I was also on Isegenix...but I still had to watch the amount I ate. It isnt so much what you eat...(except sugars and junk stuff) it is how much you eat. The more often you eat and the less amount of each, is the key..when you fix these things...try stir fries...and grill all your meats..the fat drips off rather than coating it in the pan. strong will power comes within...
always stay positive...and remember it isnt what you eat so to speak it is the amount you eat at one time. NEVER EAT BEFORE BEDTIME....dont sit down right after eating...those things cause you to gain weight...I really hope this helps..I am sure you already know most of this. But I just wish someone was there for me when I was going through mine. Good luck and I know you can do it !!

I have the best Chicken Kabobs ever!!
2 green onions, chopped
1 jalapeno, seeded and minced
1 tbsp minced, fresh ginger, or 1 tsp dried ginger
2 tbsp whit wine vinegar
2 tbsp Worcestershire sauce
2 tsp vegetable oil, (you don't have to use this)
1 tsp allspice
1 tsp dries thyme
1/2 tsp salt
1 lb. chicken breast, cut to 12 pieces
1 red pepper
1 green pepper
1 onion
Any other veggie that sounds good
In a food processor, blend green onions, jalapeno, ginger, vinegar, worcestershire, oil, allspice, thyme, and salt until a paste forms.
Marinate chicken in mixture, covered, for 1 hour.
Cut veggies into 1 inch pieces. Mix with salt, pepper, and a little vegetable oil (If you can).
Put everything on skewers.
Then you can grill them, broil them in the oven at the closest position, or I've even put them on a very hot skillet on the stove, until the chicken is done.
They are so good, you won't feel like it's diet food at all!!

Be sure to drink at least 70oz of water. Try to drink about 16oz every 2-3 hours. If the program allows you to eat bread and pastas, be sure it's whole wheat. Enriched or vitamins added indicates that the most importatnt nutrient has been extracted during the process. Also, stay away from food that is fat-free, no sugar added or low fat.If you must sweeten something, use Stevia or honey.GOd bless!

I am assuming that you cannot have pasta or rice? I have been enjoying salads with what you can eat (I know that sounds boring), but another thing would be stir fry. Unfortunately I don't have any special recipes for that, but I am sure you can find many on the website for the Food Network.

a package of chicken thighs
3 onions quartered
6 tomatoes quartered
one squash sliced
one zuccini slided

salt and pepper your chicken and saute in a tbs of olive oil when done add the vegetables cover with lid and let simmer till vegetables are tender. Its really good over brown rice.

do not eat processed foods, try stir frys with brown or basmati rice/ anything you cook in your kitchen will be made with love and good for you/ exercise and do yoga

I'm sure you have heard it before, but diet's will set you up for failure. It really has to be a lifestyle change. Start small instead of changing everything at once. I have been lifting weights for several years and have competed in a local figure competition. During that time I have learned a lot about nutrition and how to make the physical changes we long for. What you put in your mouth is 85 percent of what you look like.
I recommend the "Eat Clean Diet" it is a book written by
Tosca Reno. She is married to the publisher for Oxygen Magazine. It is a easy read and is easy to understand how to make the healthy changes that are easily attainable. It wouldn't be much fun living a lifestyle of only a few ingredients!

What diet are you on?

I have to tell you I have also started a new "diet"
I have started the ALLI PROGRAM - www.myalli.com

Its wonderful - it almost forces you to eat healthy and in moderation. They have tons of recipes and substitutes for things that are on their menus that just dont seem appetizing to you.....

My basic WEEKLY diet consists of Olive Garden Salads, grilled chicken (seasoned with fajita seasoning) and brothy soups, like egg drop or noodle or even chicken noodle.

I still cook other things for my room-mate and my daughter and we still have Sunday night dinners at my house - and Sundays are my ME DAY - where I treat myself to whaever I want within reason. this past Sunday I fried a turkey made some collard greens and some cranberry orange bread....

I started back on the program Jan 2nd and as of Jan 11 I had already dropped 8 pounds.

When I grill my chicken I buy the bag of frozen chicken tenders or checken breasts to make sure I dont make my portion more than 4 oz.... I defrost it, season it with my fajita seasoning, and grill it in a frying pan sprayed with crisco or pam cooking spray - I even found an Olive Oil and hot Pepper spray.

I grill my fish fillets the same way - using cooking spray but I marinade it in a vinagrette salad dressing or even italian. - You can do your chicken this way as well for a variety of flavors.

I also use a lot of the stemable frozen veggies - seasoned with the butter flavored cooking spray and seasoned salt ot Mrs dash seasoning.

Goo dluck on your diet - I hope it works for you!

I was going to say "olive oil" until I read your PS!! You might try cooking in chicken, beef or vegetable stock. They are quite flavorful. I am on a no sugar, no flours & no processed foods diet. I've learned quite a lot and have both lost weight and improved my overall lifestyle. Try going to "allrecipes.com" where you can search recipes using items you want to use as well as not use. I don't want to discourage you from trying to diet but I have found (in my studies/research and personal results of 27 yrs. that making "diet" a way of life is the key to success for most. It may sound crazy, but if you exercise (walking, light aerobics, treadmill, walking in place as you watch tv, etc...15-20 mins. each day) and adapt to eating 6 small meals each day of a variety of foods, your metabolism will increase. If you deprive your body of fats, protein, carbohydrates or any other food group, your body will crave, you may break down, eat the food you were craving and overdo it. Learn more about the food groups, certain cravings are an indication of lack of nutrients your body isn't getting. Learn to eat in moderation...I eat all food groups including my unofficial food group...dessert!!! Good luck
P.S...Make food with alternatives by using cooking spray instead of oils, butter, etc...Watch out for "Diet"(may be high is sodium or have empty calories: no beneficial nutrients) "low calorie"(it may be high in sodium, the low calories may be empty calories) "low fat"(could be high calories, high sodium), etc...they may have hidden nonbeneficial additives, empty calories.

I'm assuming you can't cook with olive oil either? Anyway, the veges and meat you've listed make for some yummy soups and stews. This is the perfect season for those kinds of things. I used to love beef stew (before my hubby became vegetarian) as the beef tips get so tender when they simmer for a couple of hours. You can skip the potatoes and add tons of carrots, cauliflower, tomatoes, etc. I tend to make a soup every couple of weeks by just cleaning out my fridge and using all/any veges I have on hand (celery, onions, chicken/turkey, and white rice makes for a great soup too). Do you own a crock pot? You can make a lot of foods in there with little or no oil/butter. Also, if you're able to eat vege or chicken broth/soup, those are perfect for adding the taste and texture you might miss from butter/oil cooking.

With fish, try baking it with some sea salt, pepper, and lemon (cover with aluminum foil to keep it moist). Pair it with a salad and nuts, and maybe some couscous (if you're allowed). This is especially good with salmon.

Scrambled eggs and sliced tomatoes are super yummy for breakfast (or lunch or dinner!!).
