Need Ideas for Left over Roasted Chicken

I roasted 2 whole chickens today, with the intention that my carnivorous husband would eat most of one and I'd use the second for an amazing Asian Noodle Soup recipe that I have. Well, hubby is working late tonight, so now I have TONS of left over chicken. Anyone out there have a recipe they'd like to share? I suppose I could shred it and make BBQ sandwiches, but I'm looking for something new. Ideas??

There are tons of things you can do with leftover chicken. Homemade chicken pot pie, chicken and dumplings, enchiladas, stir fry, buffalo chicken dip, chicken salad, chicken alfredo, any number of soups that you could make and freeze. Or just chop it up and put it on sandwiches on salads.

I love left over roasted chicken! Here is what I do with it.

(1) Chicken salad is my fav - I will take the carcas apart and reserve portions of about 2 cups of chicken. One portion I will make into chicken salad (mayo, onion, celery or whatever you like) and I will freeze the other portions to make more later. My favorite lunch and the kids love it too

(2) Put the left over chicken in the bottom of a baking dish. Cover with prepared stove top stuffing, corn and cover with chicken dressing. Bake until warmed. Feels like Thanksgiving, much MUCH easier :)

I just used our leftover roasted chicken by taking it off the bone and cooking it in stuffing.. Delish..

It was 2 boxes of instant stuffing (free from the store) so I did it in the, microwave only took 5 minutes to cook!

I just wish I had cranberries to make the relish..

Tacos!

Corn tortillas
Homemade guacamole
Cilantro chopped
Salsa
Chicken cut into strips
Tortilla chips

Warm up your tortillas in a dry saute pan on the stove, put inside clean dish towel to keep warm without getting soggy. Heat up your chicken, build tacos with chicken, cilantro, and salsa...guacamole can be on the tacos or on the side with chips. yum taco night!!

You can shred it, add some cumin, chili pepper, garlic, and rotel in a skillet and make chicken tacos.

Buffalo chicken dip:
Shredded chicken (two breasts, so the equivalent in your roasted chicken)
4 cups shredded sharp cheddar cheese
1 cup hot sauce, not wing sauce
1 block of cream cheese
Combine in a large bowl, put in a 13X9 baking dish, cook on 400 for about 15-20 mins.

This is my life. I always cook two chickens at a time so that I can more easily make dinners/lunches the rest of the week. PM me for any recipes. Most often, I make:
- chicken salad sandwiches (pickle, celery, hard boiled egg)
- garden salad with chicken on top
- garden salad with buffalo-wing-sauce dipped chicken on top
- chicken & rice soup
- "mexican lasagna" made with salsa, noodles, chicken, white beans
- chicken enchiladas
- tacos or nachos (just reheat the meat with salsa on it, toppings)
- "mezetta sandwiches" made with banana wax peppers
- cranberry sandwiches made with the breast and a can of jellied cranberry
- fried rice
- ramen noodle stirfry (I am making this tomorrow. I roasted a chicken tonight)

My family loves this recipe, which calls for cooked chicken. I use low-fat cream cheese & brown rice to make it a bit healthier. Enjoy!

Shred it and make chicken enchiladas!

Get some McCormack taco seasoning (black beans if you like them) and let it simmer.
Heat corn tortilla's in the oven (375) for just 90 seconds. Then you can fill and roll them in a baking dish.
Add enchilada sauce and mexican shredded cheese (as much as you want!!!!) and then put in the oven until cheese is all melted.

I usually do this with leftover thanksgiving turkey!!! And if you like a crispier shell, you can lightly fry the corn tortilla's before filling them.

King Ranch Chicken is one of our family favorites!

There are many recipes out there, but this is pretty much how we fix it, except we use flour tortillas instead of corn tortillas....

When I have leftover chicken or turkey, I de-bone the chicken, and chop the chicken or turkey into bite-size chunks, and put about 2-3 cups in a plastic freezer bag. I really like having meat already prepped in the freezer for quick meal prep.

Enchiladas! Shred chicken, roll up in tortillas with sauted onions and bell pepper strips, put in greased casserole pan. Pour enchilada sauce on top, and some cheese. Cover and bake at 350 for 20 minutes, uncover for another 10.

Easy chicken pot pie:
Line pie plate w crust, mix cream of chicken, cream of potato, 2 cups
Mixed frozen veggies and chicken. Spread filling into pie crust. Top
With second crust and bake at 350 for about hour til golden brown.

I put cooked chicken, cut up, into baggies in the freezer in 2 cup portions. Then use it for tons of different things.

I also make enchiladas - and make put them in the freezer. Roll them up with the stuff in the middle, and place them on a sheet to freeze individually. After an hour in the freezer, then I put them into groups of 5 or 6 in plastic wrap and tin foil. I make the sauce the day of when we'll eat them. Put the enchiladas in the oven without sauce on it for about 20 minutes, then put sauce then, bake a bit longer, then put cheese on, and done!
