Need a Recipe for Bonless Skinless Chicken Breasts for Tomorrow Night.

we are entertaining two friends tomorrow and we decided we would have chicken for dinner. I am wanting to try something new, but nothing at allrecipes.com caught my eye. it has to be semi kid friendly as i have a 2 and a half year old daughter. but if its not super kid friendly i can always make her something else to eat. I cannot do spicy either, so that limits it. i'm open to all suggestions though. thanks in advance for all the suggestions!!

So What Happened?

there were lots of recipes that sounded good. we decided to go with MamaO's sweet and sour chicken! it was delicious. i think next time i might add some pineapple to it and claim it as my own, lol. i can't wait to try out more of these recipes! Thank you for the great responses! You mamma's are awesome!

bacon wrapped chicken. As easy as it sounds, wrap chicken breast, bake at 350, top with favorite bbq sauce and cheese, continue baking until cheese is melted, top with green onions, or flat leaf parsley.

Actually making prosciutto wrapped stuffed chicken tonight. Slice chicken about 3/4 of the way in half to create a pocket, stuff with ricotta and spinach (1 box thawed and drained frozen spinach and a container of ricotta) and some shredded parm cheese. wrap stuffed chicken with thin sliced prosciutto and bake at 350.

Sweet & Sour Chicken

1c. Sugar
1c. Ketchup
1/2c. Water
1/2c. White Vinegar
2t. Salt
2t. Worchestershire
1t. Parsley Flakes
6 Chicken Breasts

Mix all ingredients, except chicken. Place chicken in 9x13 baking dish, pour sauce over chicken. Bake at 325 for 1 1/2 hours uncovered.

My family loves it. I will generally make Mashed Potatoes or Jazmine Rice with it. The sauce is so yummy over the potatoes or rice!! Super easy too!!

Seared Chicken with Tomato Chutney
Serves 4
Prep time: 5 minutes
Cook time: 15 minutes

INGREDIENTS
4 skinless boneless chicken breasts
3 tablespoons olive oil, separated
1/2 cup red onion, finely diced
1 cup cherry tomatoes, halved
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
1 teaspoon cornstarch
2 teaspoons water
Salt and pepper, to taste
Chili flakes, optional

INSTRUCTIONS
1. Heat olive oil in a skillet over medium-high heat. Sear chicken until golden brown and cooked throughout, about 6-8 minutes per side. Remove from pan and set aside to rest.
2. Lower heat to medium and add 1 tablespoon of olive oil to the pan. Sauté onions until golden and fragrant, about 1-2 minutes. Add tomatoes and cook 1 more minute.
3. Reduce heat to low, then stir in brown sugar and vinegar. In a small bowl, dissolve cornstarch in water and pour into pan. Stir until thick and syrupy, then season with chili flakes (optional), salt and pepper.
4. Spoon chutney over chicken breasts and serve immediately.

Mix a can of cream of chicken soup with a bit of milk. Place a piece of swiss cheese on each chk breast. Pour cream of chicken on top then top it all with bread crumbs (or I like to take my favorit croutons and chop them up really fine) bake on 350 for about 45minutes. Mashed potatoes and corn are the sides I go with usually but rice would be good too. Good luck on whatever recipe you choose. Have a good time

Chicken in the oven. It is the easiet recipe of all time. Take a baking dish and spray it with cooking spray. Mix a can of cream of chicken, celery or mushroom soup with milk and add a small amount to the bottom of the dish. Lay out the chicken and cut up a bunch of veggies. I usually add carrots, potatoes, onions, green pepper, and garlic. Sprinkle a bunch of salt and pepper over everything and finally add the rest of the soup mix and stir it a bit so that everything is covered with the soup. Pop that in the oven at 350 for about an hour or so and bam dinner.

Something I made yesterday - Creamy Chicken & Broccoli
1 can low fat cream of chicken soup
1/4 cup sour cream
boneless breasts
2 cups of frozen broccoli
shredded cheddar cheese

cook chicken and broccoli in skillet
mix soup and sour cream together and add to skillet after the chicken is cooked.
cook on low for 12 min.
add cheese and serve

it's a crockpot meal and sooo easy (and is pretty mild my 3 and 5 year old boys love it). and it turns out excellent everytime. I serve it over steamed rice and topped with a bit of shredded cheese and fresh cilantro.

cut chicken into strips. dip in egg white. dip in Progresso Italian style breadcrumbs. Place in lightly oiled baking dish and cook on 350 degrees for 5-10 minutes.

Mix up Good Seasons italian dressing with canola oil. Open oven and poor over chicken. Cover lightly with foil and cook an hour or so.

Kids love this! This is my sisters recipe but my kids call it "Mom's Famous Chicken"

sweet & sour chicken my mom made for us growing up. everyone that tries it loves it, even the kiddos. mix 1 small bottle of russian dressing, about 10 oz of apricot preserves and an envelope of lipton's onion soup mix. put chicken in baking dish, cover with sauce and bake at 350˚ for about an hour. you may want to baste it once or twice. we serve it with white rice and a veggie. delish!

What about grilling the chicken and adding it to pasta with alfredo sauce and some steamed broccoli? I made that tonight and it was SO good! Just add a salad.
