Good Morning Mamas!

Does anyone have any good chicken breast recipes? I'm tired of making the same chicken dishes. Thank you!

i just started doing this

cut up the chicken breast into strips. get a wing sauce (i use moores buffalo wing sauce) and marinate for as long as you can (min. of 3 hours). flour them and then fry them. they aren't too spicy, but they have the flavor of the wing sauce. if you don't like to fry food, i'm sure that you can get panko bread crumbs and ovenbake them, also.

our current fave (easy) chix is to use McCormick's Southwest marinade. Toss bonless chix in the marinade for an hour or so, then broil it, slice it, and serve it warm on salad. yum!

One that is super ease - buy some of the french fried onions in a cannister. Put the french fried onions in a large plastic bag (smash the onions into smaller pieces first, and sometimes I add some salt and pepper to the mix), beat one egg, dip the chicken breasts in the egg then place in the bag and shake well to coat the chicken with the french fried onions. Bake at 425 for 20 min (or until done) and enjoy! I am pretty sure this recipe is right on the side of the cannister as well.

I also will coat my chicken breasts in a little olive oil and then place fresh minced garlic on top, along with a little pepper, salt, garlic salt, italian seasoning - whatever sounds good to you. Bake at 425 for 20 min (or until done) - because of the addition of the olive oil, the chicken breasts come out so moist!

Mama of 3 I dont know what your recipe is for chicken breast but here is one of mine.

3 0r 4 chicken breast cut into bite size pieces sauteed with some onions, garlic and seasonings (salt, pepper, oregano, and parsley)
add some spinach (i use frozen)
add a couple of cans of diced Italian style tomatoes
put over whole wheat angel hair pasta.
I also add as needed some chicken broth (I use what I boiled the chicken in)
This is very good and all of my kids eat it.

another thing you can try
Stuffing mix (prepare as directed on package adding a little extra liquid)
place in baking dish
place chicken breast on top
put cream of chicken soup on top of chicken breast and bake about 30 to 45 mins. @ 350 degrees.

i second mamao's recipe. i was the one that posted that thread. i used her recipe. i would add a can of pineapple to it to counter the vinegar. i also used cider vinegar instead of white. i also made it with rice, and the sauce was amazing!!

Take 3-4 pieces of pancetta (or bacon) and lay them on a cutting board side by side, overlapping slightly (called shingling).

Lay your chicken breast down on them (making sure the pancetta stick out a bit on the side) and lay 3 sage leaves on top of the chicken breast.

Wrap the pancetta around the breast, and tuck underneath the breast. The whole breast should be covered with pancetta.

Carefully transfer to a skillet, and fry on medium high on all 4 sides, until the pancetta is crispy and the chicken cooked through.

Delicious, and easy!

This question was just posted on April 6th. "MamaO" posted a recipe that I tried. My kids loved it & a friend ate over for dinner & she loved it as well. The very next day they asked me to make it again, here it is:

Sweet & Sour Chicken

1c. Sugar
1c. Ketchup
1/2c. Water
1/2c. White Vinegar
2t. Salt
2t. Worchestershire
1t. Parsley Flakes
6 Chicken Breasts

Mix all ingredients, except chicken. Place chicken in 9x13 baking dish, pour sauce over chicken. Bake at 325 for 1 1/2 hours uncovered.

"MamaO" suggested making it with mashed potatoes or rice & pouring the gravy over it. We used mashed potatoes, this time.

I hate to cook and am very lazy in the kitchen. This is how I cook chicken breasts most often, and my family loves it.

Generously Sprinkle boneless skinless breasts with Lowrey's Seasoning Salt, Salt, and Pepper

Cook over medium high heat in olive oil or grill over charcoal

Enjoy!

My sister gave me this recipie and we love it. Just not on a hot day like today. and i'm doing this from memory so amount will be to your liking.

4 Chicken breasts (we use boneless)
bag of fresh spinach
sundried tomatoes
jack cheese
italian dressing

wash spinach well and drain. place spinach and then chicken breasts in baking pan (i usually do 4 in a 13x9). chop a few tomatoes into small pieces and sprinkle over breasts. these are pretty strong in flavor so use your judgement as to how strong you would like this flavor. especially if your kids don't like strong flavors. sprinkle shredded cheese over the top. shake dressing and pour some over all being careful not to knock stuff off the chicken. Bake at 350 for 30-40 minutes or until chicken is done.
We like it served over noodles.
