I like all of the ideas so far! At the Mall of America they have one of those "Love from Minnesota" stores with all the trinkets and tshirts and such. Sounds like you need a weekend trip to the MOA!! Ya-you-bet-cha!
I would like to send my friend who showed my whole family around her State while we were on vacation. I would like to send her a special thank you package that would be MN themed. She is oriiginally from here and she said she misses a lot of things. Some things I thought of just now were Malt-o-meal (I know not MN made but she said it's not available there), a bottle of butterscotch schnapps (again not available there, can I send alcohol in mail or USPS) Pearson's Salted Nut Rolls and a Tee-shirt from a local touristy town here (Stillwater maybe?)
EDIT: She LOVES coffee, so I thought maybe a local place that roasts it's own beans fresh.

Check out Goodthings (in Maple Grove or White Bear Lake) or Minnetonka General Store. They have some cute MN themed items. I just got a "Minnesota Girl" tshirt at Goodthings. There's also a place I think near Grand Ave that is supposed to have some really cute MN themed stuff but I can't remember the name.
Isn't it strange the "things" we take for granted? When my brother and sis in law moved to SC they don't have Western (french) dressing. We would send her some monthly lol. Yes you can mail alcohol. You have to show the usps person what is in the box your sending and it has to be sealed. If its open they will not allow it.
since she loves coffee, get her coffee like you suggested and a nice big MN coffee mug.
Love From Minnesota...it's a store in Roseville on Fairview, just north of 36, right by the Dunkin Donuts [I think there are others, too]. Tons of everything having to do with Minnesota.

Oooh, not sure if it is still there, but when I was a kid there was a really kitschy Minnesota type store in Bandana Square. They also have specialty stores at the Mall of America that focus on MN items

Spam. How can you think Minnesota without Spam? Of course, I live in Austin...Spamtown, USA. I can smell Hormel on a windy day from my house...and my husband took our oldest daughter to the Spam museum yesterday because they were bored and it's free. :)
Walmart always sells state-themed items - magnets, shot glasses, piggy banks, etc. Maybe you can find an ice-cube try with MN shaped-ice? Or a little stuffed animal with MN's state mammal or bird on it? (I bought some friends little stuffed armadillos once.)
Yes I think legally you can ship alcohol. But USPS often asks if there is something 'liquid' inside. Check their website for that question. I'm not sure.
