So What Happened?

Thank you al so much for all the suggestions. I ended up making a deli platter, veggie tray ,and hummus with pita chips. I had fruit and fruit dip for dessert. I prepped it all and then took off for the mall with my daughter. My husband's boss was very appreciative and even made a sandwich for the ride back home! Thanks again!!

Trader Joes has these already cooked, breaded, chicken breasts in a bag. I make chicken parmesan with them and they are delicious. Know one ever knows that it's not my own chicken. Get those, some marinara sauce, shredded cheese, assemble the frozen patties on an oven safe dish spoon sauce over each one, sprinkle the cheese and place in 400 degree oven for 20-25 min. Warm some garlic bread, make green salad. Trust me I've done it.

Here is a 'fancy' chicken salad recipe, quick and easy and you can make the day before
http://allrecipes.com/Recipe/Holiday-Chicken-Salad/Detail...
I usually use walnuts instead of pecans, they are cheaper. I would make this and set up a little lunch meat tray in case he prefers that. Buy a few fresh roll, a bed of lettuce, maybe some fresh fruit for dessert. I wouldn't go overboard. Good luck!

Since when is making lunch for someone a demeaning activity, Michelle? Really you need to get a grip. The question was not WHETHER L. should serve lunch to her husband and guest, but WHAT. And no, it's not the 1920's anymore, but does that mean that civility and hospitality have gone out the window as well? Geez! Back to L. now....you've gotten alot of great ideas from the other moms as to what you might serve, so I don't have any additional ideas to offer - just wanted to say best to keep it simple and not stress over it too much! Good Luck with it :)

honestly, you cannot go overboard. just make what you would make for your husband. if it were me, i'd make soup (maybe tomato soup) and sandwiches.
no, i am not from the 20s :) but i think it's just nice gesture if you have something for lunch. most people eat sandwiches for lunch. soup is just an extra thing, if you want to skip the soup, make salad and sandwiches. make it easy, so he sees you didn't stress over it, and yet you fed him.

I would buy some fresh croissants and make a platter of lunch meats & cheeses all the veggies for a sandwich and condiments. That way there is a selection and he & your husband can make what they like. There will be a little something for everyone. Buy a nice bag of kettle chips a special brand, have a fruit plate, soda's, ice tea, water and call it a lunch. If you have a Costco nearby, they have some great pre-made soups in their fridge section that are awesome and as close to homemade you will find & would go great with the sandwiches. OR maybe you will get lucky and they will want to go out somewhere for lunch. Good Luck!

The ONLY reason why I'm responding to this post is because of Michelle G. I actually somewhat agree with her response, but disagreeing at the same time.
Yes, maybe finger bites would be ok....the very idea that NOT serving something is not kosher. Just having ANYBODY in your home welcomes food and drink....that is just polite.
As far as Michelles thought....these are HARD times....so what if you make finger foods? Anything to keep the family dollar going....

My husband says a sub sandwich and chips or a hearty sandwich and a bowl of soup.

Well... sandwiches? Soup? A great salad? Something from a deli like potato salad... nice cold cuts and cheeses...
Or get take out....
Or make a meal from scratch.
Also coffee and soft drinks.

AND... is he a 'casual' type boss? Or all formal and that type?
I usually gauge things that way too.

And, have a nice presentation... clean up the house etc.

Hopefully he is not allergic to anything?

You can buy 'lunch' from like Costco or something... and then just dish it out yourself making it look like home-made... and serving it on your dishes... that's easy.

Club Sandwiches are always yummy.
Or, with a Cobb Salad....

all the best,
Susan

I don't really know many men who don't like this recipe, and it is great served with chips but still looks like you put a ton of effort into it.

American or cheddar cheese slices, honey ham, sliced onion, bacon, and either kaiser rolls, or the big potato rolls work the best.

Make the sammies ahead of time, and you can throw them under the broiler for a couple of minutes right before you are ready to serve.

Layer ham and cheese on bottom of bun, then one layer of sliced onion, and one peice of bacon (uncooked) cut in half and criss crossed on top of sandwich... when your ready, throw it under the broiler without the bun top, and when the bacon is cooked, they are ready... the bacon cooking on top caramelizes the onion and makes for a tasty sandwich... you can pop the bun tops in the broiler for a couple of seconds to toast the underside, but not the whole time the sandwiches are in or they get to hard.

You can put lettuce and tomato on the plate and let him put it on if he wants, and wallah... a 10 minutes meal that tastes great and will fill them up!

DON'T YOU DARE make lunch for your husband and his boss! What is this, the 1920's? This does not happen anymore, and if it does, it shouldn't. Won't you feel awkward, anyway? If I were you, I would make myself scarce, and just show up the last few minutes your husband's boss is at your house to say hello. Your husband and his boss can go OUT TO LUNCH!!!!!!!!!!!!!!!!!!!

I always wonder about these questions and how it all turns out. Lunches differ so much depending upon what part of the country you are in.....

In California, it would be Mexican Food or Sushi.
In PA, what is considered normal fare there?
How formal is your husband's work. How well do you know the boss? Are they big guys and want their red meat or athletes currently in training and want a power lunch? Or they could care less and will eat whatever? Can you order pizza?

We are not big sandwich eaters so I personally would not serve sandwiches, chips and soda to my husband's boss. Unless you have a Foreman type grill for paninis then that would be nice enough. Something with artichokes, or spinach, or arugula.

If you do choose a sandwich, based upon the other recommendations, I would make a Tuna Melt. Make a tuna filling ahead of time. Mix canned tuna with chopped green onion, celery, and mayonaise. Spread on your favorite rustic or whole grain bread or english muffin (DO NOT serve croissants, men usually don't care for them). Layer a slice of favorite cheese (extra sharp cheddar) and broil until melted. Serve with a tossed green salad with avocados, tomatoes, sprouts, carrots, etc. and have a few drink options around.

I don't understand Michelle's issue about making a nice lunch. I love to cook for my husband's colleagues. We are not from the 1920's. There is nothing wrong with supporting your husband if you have the time and desire to. I've had more men ask for my recipes then women and the men have literally told me, "I wish my wife could cook like you." Must be hungry at their home?

Another light fare option is to go mediterranean and serve hummus with pita, olives, feta cheese, type platter. Then make a simple tabouleh salad ahead of time and take out for lunch. Very simple and pleasing.

Hope something works out for you.

I wouldn't stress. I also don't get the big deal one poster has about you making lunch I think it is a nice gesture. I am older so maybe I am from the 1920's lol (not really) I don't get why doing for your husband makes you old fashioned, or wrong. It seems noone likes doing anything for anyone else they just want to be pampered. Sorry but I don't get it. I also love to cook. If you are kind enough to make a lunch for them then make what your husband likes and I am sure his boss will love it. You can put out a deli spread of salads and cold cuts with some fresh bread. Or you can make a quiche with salad that always goes over well. I wouldn't get fancy men are not fancy they just like to eat lol!! You can also do a nice soup and a sandwich that is always delicious and in the cool weather comforting. Good luck I am sure it will be great. Serve coffee and maybe a warm apple pie for dessert and you will be fine. Best of all your husband will appreciate it.

My husband loves those everything bagels! When I had 3 guys helping us move a couple of years ago I made everything bagels as ham and cheese sandwhiches with lettuce and tomatoes and onions. HUGE HIT! I threw a pickle, some chips, some fruit, and a soda...the guys were happy and full! As a matter of fact, just a week ago one of them mentioned to me how much he liked that sandwhich...and it's been 3 years!
Something simple mama...don't work yourself up!

Tough one! Will he be there long enough to need lunch? Was lunch discussed? Will this just be an extra? Someone said Kosher, that makes me think, does he require Kosher? Is he Vegan? It is so hard to prepare for someone you don't know. I would keep it simple. Cheese & Salami chunks with some crackers. As well some drinks.

What about a nice chicken or tuna salad (or both) on buns or croissants? You can add some dried cranberries for a little sweetness. I always put diced apples in my tuna salad.

I would just ask him what he'd like. Since neither of you have any idea, that would be the smart and easiest thing to do. That way you make sure to get something he'd like. That's what I'd do. Good luck!

I guess they're eating in to save time? I would just give them a few takeout menus in the morning to choose from, and you can order and pickup/get delivery at lunch time. I only cook for people I feel reaaaaaalllllyyyy comfortable with. Plus, you just never know what someone unfamiliar likes to eat. A lot of people don't eat meat, or just have a narrower palate. Just make sure you have coffee brewing, and sodas and waters around, and then maybe a little plate of cookies and chips for the afternoon.

I think almost everyone loves lasagna. That's pretty easy to make. You could make some garlic bread to go along with it.

Is it possible your husband could take him to a local restaurant? I think it would be a little awkward to have him eat lunch at your house when you don't know him yet.

No making lunch!! The boss needs to take him out to lunch, you do NOT need to make lunch for them. If they need additional time to work in his home office, fine.
