Lunch Ideas for Dear Friend

Ladies,

I've got a wonderful friend coming Sunday for lunch and her dear children will be with her. I would love to have something fabulous for at least the adults to eat but I am completely uninspired. It's not at all that I feel the need to impress this friend, I just want to make the lunch special.

Any ideas out there you Foodies?

Hi J.-

I recently made a fresh mint/feta/watermelon salad with a red wine vinegar & oil dressing. Sounds kinda yukky...but was DELICIOUS and light and cooling.

I carved out the shell...and served the refrigerated salad from the shell. Was very 'festive'.

That, and some nice rolls and cold cuts and cheeses?

Sparkling cider in 'special' glasses may be a nice treat for the kiddos...and champagne for you and your friend?

Bake salmon and make a spinach salad. Add good bread and desert if you want.

Assuming no peanut allergies -

Chicken finger skewers with honey mustard and russian dipping sauces for the kids. thai peanut sauce for the adults. serve with a cold lo-mein salad (shredded carrots, shredded cuccumber, shredded cabbage, and broken cooked vermicelli noodles tossed with chopped tomatoes, top with a teriyaki/ vinegar/ garlic salt & pepper salad dressing.

homemade panini with an arugala salad.

gazpacho and potato cheese casserole (known as tortilla in spain).

spinach, strawberry, goat cheese and red onion salad with open faced tuna melts.

bratwurts and carmelized onion with german style potato salad.

shrimp quesadilla, chips, salsa and home made guac.

I saw the neatest drink on Pinterest. You put Hawaiian punch in the bottom of a glass, then pour blue powerade on top of that, then you put diet sprite or 7 up on top of that. The drink is layered because the one with the most sugar goes to the bottom. It's red, blue, and white. I haven't actually tried it yet.

For the kids... We love cookie dip. Plain yogurt, cool whip, & funfetti cake mix. Mix the three together and dip graham crackers or animal crackers in it. It has been a hit with my kids, at church, and with my class at school parties.
