Hi everyone! My daughter is having a family fun night at school. Of course our last name has to be in the group to bring a side dish of some sort vs a desert. I can think of a million things for desert but other than doing a veggie and dip am at loss for dinner. Not a fan of pasta salads either. They will be serving hot dogs. Also this picnic is at 6pm and I work until 5pm. So I either need something I can put together the night before or is easy to through together. Thanks in advance for the help!

How about potato salad? It's easy and delicious. You can find any recipe online or in a cook book.

Get green or red grapes or both and cut them into small bunches these are always the first to go at our picnics. We love them.
greek salad? 7 layer dip? spinach dip? cheese toasties? (mix up a bunch of different cheeses, garlic and enough mayo to hold it together, then put on sliced baguettes and toast) caesar salad?

baked beans! You can make them the night before and just put them in the oven to heat up in the am. I got a really good recipe out of the paper if you are interested, just message me and I will send the recipe. but literally beans out of a can would be plenty for a kid's school function. mac and cheese is easy too. is someone bringing potato chips? That is no cooking at all........
picnics are super easy, not much cooking involved.

My absolute favorite to bring is a simple but interesting watermelon, feta, olive and spinach salad. It sounds weird, but tastes awesome. You can do it all the night before.
Scoop out one watermelon with a melon baller so you have round balls of watermelon. Put them in a strainer overnight (or longer) so that all the juice runs out and the watermelon balls shrink up. Then toss with 4 oz feta cheese in crumbles, a couple of handfuls of kalamata olives - chopped and pitted, and a bunch of spinach leaves torn up or sliced. For dressing I use balsamic or lime juice and olive oil.
It's been featured in Oprah magazine and I promise it's good.
I have a ridiculously good taco salad recipe! homemade dressing and everything...but sssooooooo easy!
and you can take it all to work with you in seperate ziploc bags and mix it together at the event.

veggie pizza is always a hit too! and super easy!
all you do is take a pkg of crescent rolls, or crescent baking sheet, spread it out on the bottom of a cookie sheet and bake it until golden.
let it cool
mix together a pack of powdered ranch and a container of sourcream, spread this on the crust.
then top with finely chopped brocolli, cauliflower, shredded carrots and shredded cheddar.
done...
and everyone loves it!

Cold Chinese sesame noodles. I love veggie platters (sorry) with hummus or babaganouj. Ratatouille (great hot or cold and better the second day), fennel salad (finely sliced fennel bulb with lemon, olive oil, +/- a little garlic, +/- fennel seeds), celery root salad (just like the fennel salad above but add slivered carrots for color), cole slaw, home made potato salad. All can be made ahead.
Something like this might be really good too. I usually put a little fresh squeezed lemon in mine too...really brightens up the flavor.

Bean salad is healthy and easy. You can do it the night before and it is pretty fast to do. There are lots of recipes online but I kind of throw it together without an exact recipe (learned it from my mom).
Green beans, about a cup, cut up and slightly steamed (steam or microwave about 2 minutes).
3 or more cans of different beans like Great Northern beans, black beans, kidney beans, chick peas, etc. The secret is to rinse them really well for less gas producing juices.
half a sweet onion, finely chopped
Fresh mint leaves, chopped, aprox. half a cup
Season with olive oil and balsamic vinegar, salt, pepper, garlic powder, Italian seasoning (basil, oregano, thyme)
Turkey Taco Salad. Easy, healthy and not too heavy. Can be prepped the night before and tossed together 5 mins before you walk out the door.
Low Fat Turkey (brown like you are making tacos)
Add Taco Seasoning to meat (once cooked put in fridge till next day)
Cut up tomatoes, Onion, Lettuce and buy shredded cheese.
To serve, mix all together and toss in some broken up Tortilla chips (Baked if you want to be more healthy)
Take a jar of Salsa amd/or Ranch to serve on the side if you want.
Plus you can put it in a throw away tin or bowl so no clean up or hauling away.
I think a potato sald sounds heavenly, I wish I had some right now! Here is a REALLY easy recipe, go to the deli and buy a couple of poiunds of potato salad. Take it home and trasfer it to your own dish, then serve it at the picnic! Another idea that is popular with little kids is a Jello salad, I like to mix a carton of yogurt and some kind of fruit into the Jello. Easy peasy.
