Lunch Box Sandwich Ideas

Hi Moms:
I pack lunches for my kids and husband at least 4 days a week and would welcome some sandwich ideas. Fortunately hubby's a good sport about having some fairly boring sandwiches (deli meat, cheese, lettuce, maybe some sliced cucumber and hummus or cream cheese), partly b/c he doesn't want any kind of filling that might 'ooze' out (e.g. chicken salad or other chopped and mixed fillings). He's usually eating lunch in a hurry so I don't pack anything that requires warming up. The kids actually get more variety b/c I'll put things like leftover pasta or musubi (rice ball wrapped in seaweed) in their little thermos bottles if they're not in a sandwich mood.
So if you have any low-mess no-heating-required packable sandwich recipes/suggestions, I'm all ears!

So What Happened?

thanks for the suggestions so far. The kids get enough variety, I'll see which ones sound appealing to Dad (I've done roll up sandwiches before with mixed results - pretty much he's looking for something he can eat quickly without much mess so anything that requires reheating is out, and since he takes public transit and usually has a pretty full/heavy stuffed briefcase I didn't want to use a thermos)

Here are some options...

Bean Roll-Ups:
1 small or large tortilla, white, wheat or flavored
1/4 cup or more refried b
2 tablespoons salsa or sliced tomato
2 tablespoons grated cheese (optional)

Pin Wheel Roll Ups:
1 small or large tortilla, white, wheat or flavored
1-3 slices of deli (pat dry w/ paper towel)
2 tablespoons spreadable cream cheese
1 stalk of green onion

Spread cream cheese on the tortilla, out to edges. Place ham slices on tortilla. Then add the green onion stalk. Roll tightly. Cut into slices and stand up right.

*Apple Butter & Sliced Fresh Apples
*Build your own Ritz Crackers, Mild Sliced Cheddar & Fuji

Turkey (Chicken) Salad Stuffed Tomato

You make a beautiful roasted turkey for a special occasion, after words there’s a ton of leftovers. Here’s a delicious way to use those turkey leftovers with fun and style, plus it only takes 6 minutes to make!

Ingredients:

3 Large Tomatoes (Cored, leaving 1/4-1/2)
2 cups Roasted turkey, finely minced
1 small Celery stalk, diced (1/4 cup)
1 small Dill pickle, diced (1/4 cup)
1 Tablespoon Fresh parsley, chopped
3 Tablespoon Mayonnaise, or low-fat mayo
Salt and pepper to taste

Method:

* In medium bowl, add turkey, celery, pickle, parsley, and
mayonnaise.
* Mix ingredients together and salt and pepper to taste.
* Core your tomatoes and stuff with chicken or turkey salad
store in plastic wrap or lunch box container.

I didn't get a change to read the other responses (I need to go to bed) so if this is a repeat I'm sorry. I use to buy the large "wraps" in the tortilla section, they have different flavors. I use cream cheese (about 2 tbl) spread that on it, I normally put lunch meat, shredded lettuce, tomatoes and any other veggies I want. Roll it up and you're good to go.
I was hoping you'd get more responses, I'm SO bored with lunch!

For my kids I'll buy a ham steak and cut up some into cubes or strips and some cheese and crackers. Also having a thermos helps allow some variety and I'll send soup or pasta. We all like sandwiches in pita bread with sprouts. The pin wheel sandwich is a great idea. I would put a search into the internet and I bet a ton would come up.
