Looking for Easy Meals for 3.5 Yo and 1+Yr Old

Hello- I see there have been some recent chatting on getting families to get together with one meal, all good stuff, but would any of you be willing to send some of your favorite recipes, or even just things that your children like to eat for meals? My husband and I sometimes eat later and some ideas would be great to make for the kids and then for us to eat later (when needed). I feel like I am in the same 4-5 meals that I am just rotating for us and the kids. I have good eaters-both like veggies, friuts and meat (for the most part). Would be open to anything.....
Would appreciate any NEW thoughts for meals!

I work 4 days a week, so we have to make quick, easy meals (I'd rather spend my evening playing with my kid than cooking!).

One of our recent favorites:

Easy Southwestern Stroganoff

1 pound (extra lean) ground beef
1 cup water
1 jar (16 ounces) thick-and-chunky salsa
2 cups uncooked wagon wheel pasta (4 ounces)
1/2 teaspoon salt
1/2 cup sour cream

Cook beef in 10-inch skillet over medium-high heat about 6 minutes, stirring occasionally, until brown; drain.

Stir in water, salsa, pasta and salt. Heat to boiling; reduce heat to low. Cover and simmer about 15 minutes, stirring occasionally, until pasta is tender. Stir in sour cream; cook just until hot.

Makes 4 servings, about 1 1/4 cups each

For Saturdays, when we are home but would rather spend all day PLAYING than COOKING, we make this:

Easy Slow Cooker Chicken

* 4 skinless, boneless chicken breast halves
* 1 (10.75 ounce) can condensed cream of chicken soup
* 1 (10.75 ounce) can condensed cream of mushroom soup
* 1 cup white rice

Directions

1. Cut chicken breasts into large chunks.
2. Place the chicken breasts, cream of chicken soup, cream of mushroom soup and the rice in a slow cooker. Cook on high for 3 hours or low for 4 hours.

Make homemade meatball soup in chicken broth,(drop the raw meatballs in the boiling broth, you can water it down some if to strong, then boil little pasta separate to add to the soup, thow in some mixed veggies, your all set, I don't know one person that does not like a good meatball!

Tortilla Pizzas!

It's a GREAT way to use up leftovers! Kids will eat ANYTHING if you put a crust under it, cheese over it and call it pizza! Our favorites are BBQ (BBQ sauce, whatever meat you have in the fridge, onions, peppers and cheddar) and sloppy joe pizza-- leftover sloppy joes and co-jack.

Check out you local library for cookbooks... if they are a Dewey library it'll be around the 641 area. There are TONS of great recipes out there... just gotta know where to look! :)

My kids eat anything we do. I have about the same ages of my youngest children. They love spaghetti, but we sometimes make it with elbow noodles. We find this easier for them to pick up. They like fish, roast, loaded mac-n-cheese, pizza, chicken, pork, beef, etc. We make a strogganof with hamburger,onions (cook together), \then add cream of mushroom soup with a little water to make the sauce. We put this over noodles or it can be put over rice or mashed potatoes. You can add veggies too or put them on the side. My kids really like this.

We are big fans of Allrecipes.com for meal ideas. We use our slow cooker a lot. A favorite of our families is chicken breasts, cubed velveeta cheese, a can of cream of mushroom soup and milk mixed together, and a frozen vegetable. We put it in the crockpot for 4 hours and serve it over rice or noodles.
