Leftover Ham

What do I do with the leftover ham? I cooked one last night, saved the bone and a few hunks of meat for split pea soup (put it in the freezer to save for winter. It'll be a high of 79 this week - not quite what I call 'soup weather'. ) Husband got a ham sandwich for his lunch today. But a lot of the leftover meat is in big chunks and not slices, so doing sandiwches for dinner wouldn't work quite as planned.

So what other dishes do you make with your leftover ham? (it's not glazed, just nice and salty).
I know there's a potato/ham casserole, but if I can help from going back to the store to buy potatoes, I'd like to hear if you ladies have ideas with food I may have on hand (rice, pasta, butter, veggies, etc - no potatoes on hand).

ADDED: I'm liking the ideas so far. Maybe I could make ham salad for me and son. Doubtful husband would eat that, but maybe. I was planning on saving some for hashbrowns this weekend for breakfast (frozen hashbrowns). Adding it to a salad or pasta sounds like a great idea too. Maybe I'll go to the store and get things for casserole or One&Done's dish. Keep them coming ladies!

ADDED: April - that sounds easy enough. Cheryl - I love your enthusiasm. All sounds great. Is the ranch macaroni thing served cold I assume? I do like doing cold things for lunch, but prefer a hot meal at dinner. So I love that all of you ladies gave me both!

So What Happened?

I appreciate all suggestions. I may try that casserole a lot of y'all mentioned.
I ended up making a dish my mom calls "Salamagundy" which is carrot, cabbage, and ham. I did get a few potatoes (4 reds), so it wasn't enough for a big dinner, plus I was missing some other ingredients for it. So I added the potato to the salamagundy. I searched on allrecipes.com and found a recipe that was potato, cabbage, and ham. I added the carrot and sprinkled some cheese on it and it was super yummy. Will keep this post in mind next ham I make. Thank you!

make some mac & cheese....or some nice white-sauced pasta. Toss in some ham chunks & some broccoli.

I also toss ham, olive oil, & green chilis together as a pasta sauce. Yumm. & I top it with some shredded cheese or grated Parmesan. Oh, & fresh cracked black pepper!

3 cups, shredded frozen hash browns, thawed and drained
4 T (1/2 stick) butter, melted
3 large eggs, beaten
1 c half and half
¾ c diced cooked ham
½ c diced green onions
1 c shredded cheddar cheese
Salt and freshly ground black pepper

Preheat oven to 450 degrees F.

Gently press the drained hash browns between paper towels to dry them as best as possible. In a 9 inch pie plate, toss the hash browns with the melted butter in the plate. Press them into the bottom and up the sides to form a crust. Bake for 20 to 25 minutes until golden brown and starting to crisp. (Might need to brown under the broiler if not crisp enough.)

Meanwhile, in a large mixing bowl, combine the remaining ingredients. When the hash brown crust is ready pour the egg mixture over it and return to the oven.

Lower the oven temperature to 350 degrees F and bake for about 30 minutes until the quiche is light golden brown on top and puffed.

***You to easily substitute any of the following ingredients for this dish:
bacon, spinach, crumbled breakfast sausage, green, red or yellow peppers, sliced mushrooms

Some ham and swiss bits with sliced hard boiled egg on some lettuce makes a great Cobb salad.

There's sooo much to do with it!!!

Not just ham sandwiches!!!

Cube it up and add it with peas to mac and cheese!
Cobb salad with hard boiled eggs and cubed ham....ooh man! I'm getting hungry!!! thinking about this one - a ham and cheese omelet!! YUM!!!! I would make my omelet with the small cubes/diced ham...bell peppers and cheese...don't forget the onions!!!

Split pea soup - you are right - 79 is NOT soup weather!!

I've added in to a green bean casserole...it was good. My best friend makes a tater tot casserole and either uses hamburger or ham (diced)...I'll get the recipe from her and get it posted.

In pasta salad? Ham, sliced black olives, bow tie or shell pasta, cherry tomatoes, ranch dressing, a splash of italian dressing...ooooh my mom used to make this DELISH elbow macaroni salad with leftover ham!! I'll have to ask her about that one too!!!

Now? I'm going to have breakfast!!! thanks for making me hungry!!

Ham and cheese quesodillas.
You could toss diced/cubed ham with pasta, some peas/veggies and hmmmm....some sauce?

I have a recipe that my picky family loves--it's for a hash brown casserole with sour cream, cream of chicken soup, butter, cheese, crushed corn flakes on top, etc. and I add ham to make it more of a complete meal. Let me know if you'd like the recipe!

Well....if you do get the potatoes, make a ham, potato, green bean casserole. Just dump all into a 9 x 13 baking dish, cover with foil and bake. Take the foil off at the end to let the potatoes brown a little. We really like this. We call it "Peasant Food"!

You could also put it in the food processor and add mayo & relish and make ham salad spread.
