Potato Cubes. Cook them in water for a bit to soften and then deep fry/pan fry/bake for "big hash browns" or "little fries". We season with whatever mixed seasoning is handy (Cavendish, Jane's Salt, Tony Cratcher's Creole, etc).

I had the same issue the other night!
We are loving the French's onion coated baked chicken and when I looked at the box of mashed potatoes I couldn't do it. But then I found two boxes of scalloped potatoes and made those instead!
BTW Cheryl - I am taking your recipe and going to try it! Yummy!
I got all crazy and bought 9# of red potatoes over the holidays when they were on sale. I made a couple of huge batches of homemade hash browns...just shredded the potatoes and white onions and cooked them together in some oil with salt and pepper until soft.
I made homemade soup the other night and dumped in a bunch of shredded potatoes in that also.
Farmers casserole: 3 cup shredded hashbrowns in greased 2qt pan, top with diced ham, shredded cheddar and chopped green onion (if u like). Mix together 4 eggs and 1 1/2 cups milk (salt and pepper to taste). Pour over hashbrown/ham/cheese/onion and bake at 350• 45 min (although my oven takes about 15 min more)...
Baked potatoes, with sour cream, butter, and cheese in them, so yummy. Some even like chives, or garlic. Bacon bits is good too!
We like loaded baked potatoes...sour cream, cheddar cheese, bacon bits & chives.
Have you ever tried mashing Boursin cheese into your potatoes? It's awesome. I really like the herb and garlic kind, but there are several varities, I'm sure any one would work.

Can you do scallops potatoes?
* 4 cups thinly sliced potatoes, about 6 to 8 medium potatoes
* 2 tablespoons flour
* 1 teaspoon salt
* 1/8 teaspoon pepper
* 3 tablespoons butter
* 2 cups scalded milk
* 1/2 cup shredded Cheddar cheese
In a buttered 2-quart baking dish, place a layer of about 1/3 of the potatoes. In a cup or small bowl, combine flour with salt and pepper. Sprinkle about half of the flour mixture over the potatoes; repeat with another layer of potatoes and the flour mixture and top with remaining potato slices. Dot with butter then pour hot milk over potatoes. Cover and bake at 375° for 45 minutes. Uncover; sprinkle cheese over the top. Return to the oven and bake, uncovered, for an additional 15 minutes, or until scalloped potatoes are tender and cheese has melted. Scalloped potatoes serves 6 to 8.
I add more cheese as we like ours CHEESY!!!
I love scalloped or twice baked potatoes. But tonight I saw a recipe somewhere for cheesy mashed cauliflower. Better for you and supposed to taste very similar! I'm trying that tomorrow!

Too late for dinner tonight, but how about twice baked potatoes? I don't have a recipe but I'm sure you can google one. We like cottage potatoes too. Quarter them, toss with Italian dressing and roast in the oven.
