Left over Pot Roast

So, I made a pot roast for dinner last night. Both my kids had stomach bugs on the weekend and didn't eat any, and I didn't have a huge appetite either. It was a slightly larger than usual roast, and since we ate less we have a fair bit left over. Since I don't usually have pot roast left overs I am not sure what to do with it. What do you do with left over pot roast? (There are only enough sides left for one person to have a pot roast dinner.)

Thanks. Lots of great ideas. I've never had enchiladas and have always wanted to try them. Maybe I'll look for the sauce at Safeway.

I take left over pot roast and chop it. I will make BBQ beef sandwiches or open faced sandwiches with gravy poured over it.

There are lots and lots of things to do with slices or pieces of chopped meat.

You can do fajita's. Just put the seasonings on the meat and let it marinade for a little bit then heat it up on the grill.

Turn it into Beef Strogonoff.

1 Can Cream muschroom Soup
1 Boullion cube
1 clove of garlic
1 table spoon of Worsheire(SP) sauce
1 Sm can of mushrooms
1 cup water

Put in crock pot for 4 hrs low, or 8 hrs on high

Rice , or egg nooles.. add 8 oz of sour cream.. and serve

Or.

Make Beef soup.

Chili
Shred the beef and add a can of stewed tomatoes and chili spices

Quick stew
Cube the beef add to a pot of cooked potatoes, carrots, and onions and thickened beef broth

BBQ
Shred and add favorite bbq sauce - serve on buns

Stroganoff
Dice and add mushrooms and sour cream and serve over egg noodles

Tacos, enchiladas...or pasta!
Get a nice chipotle cream sauce and mix in the meat. Giada has a nice recipe for this with short ribs, but you could very easily sub out pot roast!

Dice it up, thrown in a can of green enchilada sauce, some tomatillo 'salsa' and have burrito verdes for dinner.

Or dice it up, dice up some potatoes and onion, serve with eggs and have it like a hash.

Hash: Brown some potatoes in a skillet with the shredded pot roast and a little onion (this is faster if you pre-boil the potatoes, strain, and then re-heat with the pot roast). My husband likes to put bbq sauce on his, I like melted cheddar. (A little rosemary is good added with the onions, too.)

Dice up all the components (meat plus veggies), then heat and serve over wide egg noodles.

Veggie soup in the crockpot - cut up the meat and add cubed potatoes, a bag of frozen mixed vegetables, crushed canned tomatoes, broth thickened with tomato paste if you have it, and some bouillon cubes. Let it simmer all day.

I always make it with Carrots and potatoes and then make a gravy afterwards. When I have left overs I throw it all in the gravy and make a beef stew out of it.
