He loved solids but when he started teething with 12 month molars regressed to only wanting stage 2 baby food. Normal? A stage that will pass? Thanks.

For me, this would go into the category of things that are not worth my energy. I just wouldn't worry about it. Is he eating? Great! Is he eating healthy foods? Fabulous!
My boys were both very independent from the get go. They refused baby food simply because they wanted to feed themselves. It took some creativity before they had teeth, but we made it work.
Your son has to eat, so feed him what he will eat. He'll be fine. I mean, sure, if he's still refusing to eat anything but stage 2 by the time he's 3, there might be a problem. But he's only 12 months, so I really wouldn't worry about it.
I agree that nutrition is most important so do what you have to. But don't backtrack entirely especially because a lot of baby food is so bland. If you can manage it, puree a little of what you are eating just to keep your child from regressing too much in terms of taste on top of the texture thing. A lot of them go through phases, as you suggest and as others have said below. You also want to keep him in the habit of using his fingers to pick up food himself, rather than just having you feed him with a spoon. Keep offering choices of color, texture and temperature.
My kids went through phases so I'm thinking it's likely fine. Just as Fanged Bunny suggests, keep offering soft solids - like soft banana chunks, etc. Mine would kind of get sick of some food for times too.
don't sweat the small stuff. his chops hurt, he wants softer food. nothing wrong with that.

I'd say stop offering him the flavored goo and only give him food options. Baby food has about zero nutrition. The company themselves told me that when I called with a question about an expiration date. It was either Gerber or Del Monte.
Real food has more texture. It has more seasoning. Often we add stuff to spice it up without thinking too.
There are a couple of books out there that give great recipes. One is a For Dummies and the other is an Idiots Guide.
