My favorites for freezing:
Chili (we are primarily vegetarian and, in a hurry, the chili can be whipped up pretty much from canned, although we prefer to start from scratch and just make a ton); chicken or vegetable fried rice or lo-mein (freezes well too, just use either fresh or frozen veges so they don't get too soggy); pasta dishes with tomato bases sauces, soy alfredo, or olive oil and herbs; vegetable or beef stews; have you also thought of "breakfast for dinner"? When I was on bedrest with my third pregnancy, my other two children loved making pancakes and eggs for dinner or even Irish Oatmeal with brown sugar. You also can make your own pizzas and use soy cheeses or make them breakfast pizzas with eggs and bacon or salsas and vegetables on them. A great pizza crust is easy to make: 1 package quick rise yeast mixed with 1 cup of warm water. Then add two cups flour, a few TBSP olive oil, 1-2 tsp sugar, and whatever herbs you'd like to add. We occasionally add a bit more sugar and some soy cheese and merely make really tasty breadsticks for snacks and dipping. The dough freezes well too. Make a ton of pancakes or waffles and freeze them. Lasagna freezes well. The stews can also quickly be baked with a mix of Bisquick or cornbread on top and you have a very simply and quick Shepherd's Pie or, if it's a chicken based soup or a vegetable soup, you can also quickly turn it into a pot pie!
