I would love to hear your thoughts, ideas, advice...
We have been blessed with a home out in the country and a pool in the backyard. Would it be a good idea to try and make extra money by having private birthday parties for kids a couple times a week during the summer?

Think about liability if someone gets hurt. You need an umbrella policy to cover you. You know how sue happy people are these days.
I'd hate for you to lose your nice home because you were not adequately covered for potential accidents.
You probably better consider liability insurance!!!
If your insurance will allow it, my neighbors growing up used to allow swim instructors to give swim classes in their pool and take a cut. Good luck.
My response is pretty similar to the others... I think it's a great idea IF you have the proper insurance to cover it. The liability from having a pool or even non-pool related injuries is very high and you need to take precautions so you don't lose everything in the event of an accident.
If you're going to do it, you'll need to invest in some tables and chairs, plus a few other party staples, so be prepared to spend some money initially to get the business going.
In this litigious world I would think a great entrepreneurial idea like that will land you a lawsuit in no time. Kudos for thinking outside the box. If you have a computer and internet access you could earn a very nice income right from your home. I encourage you to watch these short videos to see if this opportunity may be a fit for you.
