What kind of veggies are you eating? Leafy green veggies may be the problem.
I cut out cow's milk products for my baby (2.5 months) but am extremely gassy, which is making him so. what could it be? I think i eat normal. dry cereals, oatmeal, nuts / fruit for snacks, eggs, goat cheese, chicken / fish / meat with veggies for dinner. any ideas?

Lots of raw veggies or anything high fiber could be the cause.
These digestive issues can be quite problematic. Maybe a probiotic would be helpful to help the "normal flora" of your gut. Google "gassy foods" then take your pick on articles. There is a lot of information and listings of foods.
Some people use over counter things like "Beano" or maybe something like Gaviscon.. A dietary supplement like Citrucel or Metamucil might be helpful for you. Sounds like you are breast feeding, so those most likely would not be harmful
It is not terribly unusual to have gall bladder changes during and after pregnancy and IBS that can cause issues. Many gas issues are from swallowing air, like chewing gum, eating ice, or use of carbonated drinks.

There are great suggestions below. Another thing to look at is something my friend experienced. As moms we get so busy and usually rush to take care of ourselves. My friend went back to work 3 weeks after having her daughter. 3 weeks later she noticed she was very gassy and crampy. Very uncomfortable. She did elimination, which was very difficult since she loves dairy and eggs for breakfast and snacks. She did each for 4 weeks. Nothing changed. Then she talked to a nutritionist, and he suggested she pay attn. how she was eating. She timed herself. She was eating too fast. Once she started paying attn. to how she ate, the gassy feelings went away. And she started eating the foods she loves again.
I found that eating broccoli after having a baby gave me (and the baby) gas. Try skipping that and cabbage for a few weeks to see if there is any improvement. When the baby was a little older, I could add it back into my diet without problems.
It is my understanding that there are 3 major food intolerances. They are cow's milk protein, eggs, and nuts. If you cut out dairy for more than 2 weeks and it didn't help, then I would cut out nuts. If you cut out nuts for 2 weeks and that doesn't help, try cutting out eggs for 2 weeks.
If you google "elimination diet" you'll find lots of tips on how to do this.
How long ago did you cut out dairy? It can take several weeks for it to work it's way out of your system, so if you only cut it out recently it could still be the culprit.
