What herbs do you use the most for seasoning? When do you start growing them? I have a small area and want to use my space wisely so I want to put herbs in a box on the south side of the porch. But I dont know what to use for seasoning! I have never done the "dash of rosemary, splash of this or that." Help! You guys will hate me before I am done!

I come to you instead of a magazine because you know what is a good recipie for your family and what actually tastes good. I like flavor, and not spicey.

I have a 4x4 herb garden... Fully half of it is parsley & cilantro. Then there also 5 kinds of basil that take up another quarter.

Primarily for
- Chimichurri
- Mexi/Thai
- Pesto

But also for other uses, like salads / sammies/ marinades/ pasta

Of the remainder I have

- Rosenary
- Thyme / lemon thyme / chocolate thyme
- Tarragon
- Chives
- French lavender
- Sorrel
- Dill
- Mint
- Spearamint

Right now I have Basil, oregano, thyme, rosemary, tarragon, 2 kinds of parsley, and garlic chives...... the oregano, rosemary, thyme, tarragon, and garlic chives should be perennials, so I won't have to plant them each year if I remember to keep them well-watered.... (it gets VERY dry here in the summer, and I sometimes forget that part of the garden).

Our most common seasonings for cooking are basil, thyme, and oregano... but I usually reach for them already dried and chopped... I'm still learning to use them fresh, also.

btw... parsley has an AMAZING flavor when it is fresh...... dried parsley really has no flavor.

I grow rosemary, thyme, basil, tarragon, Greek oregano.
At my old house I grew some sage and lavender, but I just can't seem to get them established at my new house - they rot out from too much moisture - I'll try them in a raised container next.
My rosemary would never fit in a box.
I have it in a slightly sheltered space (it get's pretty windy here sometimes) where it gets afternoon sunshine and it's grown to be a few fairly large bushes.
I cook with it but I also soak sprigs of it in vinegar to rinse my hair with.
It's full of lovely blue blossoms right now.

I always grow chives, parsley, basil and oregano. I would like to add cilantro and rosemary.

I grow basil, rosemary, oregano, parsley, marjoram, thyme, tarragon, chives and mint. I also have sage in the landscape (I use it for cooking also). I grow cilantro every spring but it HATES the heat and goes to seed fast. If I was limited for space, I would drop the tarragon (I find it harder to grow) and parsley (supermarket always has it and it is cheaper to buy than the others). Rosemary - you buy a plant. Basil - you can either start from seed indoors NOW (it starts slowly) or buy plants after your last frost date. Parsley you can grow from seed, but start indoors now. Tarragon - buy a French tarragon plant. Russian grows from seed but is tasteless. Everything else you buy plants. You can grow chives from seed but it is perennial. If you buy a plant this spring - you can keep it from year to year.

i have a big herb garden, and love to see what comes back every year (rosemary, sage, chives and spicy oregano usually) and love to pick what new annuals are going to go in.
i usually have about 3 kinds of basil. i love basil. in limited space i'd pick sweet. chives are another must-have. i've put stevia in the last couple of years and adore it. i don't like it as a sweetener, but fresh stevia in salads and smoothies is divine. i've also developed an addiction for pineapple sage.
and mint! can't live without mint. i've got a dozen varieties growing in various spots.

I only have rosemary, thyme and mint because those are the ones that grow and thrive in my yard. I would love to grow basil but I haven't had much luck (not enough moisture I guess, the herbs are on a sunny hillside.)
I use the rosemary in lots of things, I use thyme every time I roast a chicken (stuffed with cut lemons and butter, so good) and the mint is good in drinks and Thai dishes.
ETA: you should really ask your local garden center what grows well in YOUR area, because what grows here may not work there at ALL.
