Okay so since, I missed out on the Mamapedia cookbook (sounds great) any idea how I can spruce up my leftovers
from last night:

rigatoni noodles w/spaghetti sauce (it was meatless Monday here last night).

I made too much.

What can I add to make it super yummy?

I have:
ground beef (although I hate to add that like a normal dinner but can)
tiny sweet peppers
carrots
more sauce
tomatoes
canned corn
green beans
tomato sauce

Help! Thanks mamas!

What can I do next?

I would take the leftovers, put them in a oven safe dish, add cooked ground beef with a little more sauce, and put some cheese on top (if you have some), and bake in the oven at 375 until the cheese is melted and have Pasta Bakes. Sounds yummy just thinking about it!

I would probably just make some meatballs at this point.

If you had boneless chicken I was going to suggest grilling some chicken & serving it over the pasta. Or chicken parm with a side of rigatoni.

Sorry--not a "dinner visionary"! (can you tell? lol)

Sounds like you have all the fixin's for American Goulash (if you have elbow macaroni). Allrecipes.com has some good recipe versions.

the noodles, corn, carrots and if you have it a can of either cream of mushroom or cream of chicken soup make a side dish casserole
and make hamburgers on the side (like little mini meatloaves)

This might sound a little odd, but I'd be inclined to save the spaghetti leftovers for tomorrow night.

For tonight:

Meatloaf with steamed carrots on the side. You can use some of the tomato sauce in the meatloaf.

I'd make a nice variation on a minestrone soup. Steam or roast the carrots, tomatoes and green beans. Saute some sweet peppers and onions if you have those. Combine the cooked vegetables with the sauce and let it simmer for awhile. Then add cooked pasta. It would be a delicious hearty soup. You could make tiny meatballs and bake those, and add them to the soup if you didn't want a meatless dish.
