Super tired this morning with a cold...I found some left over ribs in the freezer, I have some baked beans..but what else? What's a good side....I have potatoes, spinach..I wish I had a pineapple, ate that yesterday.

What do you eat with ribs and beans?

What can I do next?

So What Happened?

Thanks everyone!

We'll probably just have a spinach salad. I toasted up hazelnuts for one yesterday, so I have those, pears and cranberries. I may do some potatoes for the kids, or maybe just a bag of organic veggies.

then make mashed potatoes later in the day.

Sounds like you need a salad to go with that.
Coleslaw is popular but not one of my personal favorites.
Green leafy salad with cukes and cherry tomatoes, a little onion with a ranch dressing is popular in our house.

You need a veggie. Salad is my go to, but corn or green beans would be good too.

Ribs, beans, potatoes, and spinach sounds like a meal to me.
Bake the potatoes or make crashed potatoes out of them.
If the spinach is fresh, make a salad out of it. If it's frozen, make spinach Madeline.

I'd be all over that crockpot! Throw those ribs in. Open up whatever veggie you have in a can, those baked beans and you are more than good. Sorry you're not feeling well.

I'd make a bit of potato salad. Boil a few potatoes and rinse them. Cool them, mix some boiled egg, chopped onion, some pickle relish or chopped dill pickle, and what ever you like in yours. I add mustard to mine and sometimes I add mayo.

Cut the meat off the ribs, and put them in a slow cooker with the beans, and whatever vegetables you have (corn? a can of Rotel tomatoes or other tomatoes? any Mexican-inspired things in your pantry?) and either water or broth, and make a tortilla soup. Just throw in some cumin or taco seasoning. Serve with some tortilla chips or tortillas.

You can cut the potatoes into cubes, sprinkle them with onion powder, garlic powder, salt and pepper and add sliced onions and maybe some parsley or other herbs along with a little olive or veg. oil and then roast them. My family loves them like that. Maybe a light spinach salad? If you have dried cranberries and sliced almonds to add to the spinach, that can make a nice salad, especially if you have a vinaigrette dressing .

Hope the cold isn't long-lasting and you feel better quick

Potato salad would be good with that. Maybe a spinach salad on the side for some green?

any frozen veggie you have. sounds like you don't feel good. don't make a big deal out of dinner tonight. just throw a bag of veggies either in the micro wave or in a dish with some garlic and onion powder and a little olive oil. make roasted veggies in the oven.
