I'm lacking inspiration and sick of making the same things over and over. What are you planning for dinner? Maybe I'll get some good new ideas.
Yummmmm! I have so many great new ideas now! Thanks ladies! I tried a new one someone mentioned on facebook and it was amazing! You put a 3lb bag of frozen chicken breasts in the crockpot with one jar of salsa and one packet of taco seasoning and set it on high for 6 hours then fork shred it for fajitas or tacos or I put it over Mexican rice. It was amazing!

Last night was pasta shells with peas, pearl onions, mushrooms in Alfredo sauce.
I thought about adding chicken but then decided it didn't need it.
Tonight - cod fish with lemon juice with a little butter, garlic powder with a sprinkle of salt/pepper, mixed veggies on the side.
I just made these Spinach Lasagna Rolls for dinner last night and they were super yummy and very easy ..... we all enjoyed them!!

I use allrecipes.com for a lot of ideas and have signed up for their daily recipe ideas. They have a paid portion and a free portion. I have found the FREE portion of their site to work fine for me. You can also type in what you have on hand and they will give you a whole host of ideas and recipes for those ingredients.
Last night I made taco salad with home grown tomatoes. I love home grown tomatoes.
I bought chili grind hamburger, added garlic granules, chili powder, black beans and a cup of mild salsa. I grated monterey jack cheese lettuce and diced onions.

i made chicken casserole last night.. its like the easiest thing ever it feeds 6 people.. or in my case 4 since my fiance and my dad eat like beasts.. approx. 3lbs chicken cut into bite size pieces and cooked layer them in the bottom of a casserole dish.. 2 12oz bags of broccoli cuts-cooked (i buy the ones u make right in the microwave, much faster) layer broccoli over chicken .. in a bowl mix one can of cream of chicken soup, 1cup of milk and 2 tbsp lemon juice.. pour over chicken and broccoli.. next layer one bag of shreddedchedder cheese on top of that .. in a bowl mix 2 cups of cornbread stuffing mix with one& 1/2 sticks melted butter and layer on top.. bake for 30-35min at 350 .. its freakin amazing
My kids love these:
Chicken & Black Bean Taquitos
1-2 tsp oil
1 medium onion chopped
1-2 cloves garlic chopped
2 cups shredded cooked chicken
1 cup drained and rinsed black beans
1/2 cup jarred salsa
1/2 cup shredded cheese
approx 10 6" flour tortillas
Salsa, Ranch, Guac or Sour Cream for dipping.
Preheat oven to 375 and wrap tortillas in foil. Heat in oven approx 10 minutes to make pliable.
Cook onion on med. heat in oil until begins to soften, add garlic and cook approx another 3 minutes. Stir in shredded chicken, beans, salsa and heat chicken through. Remove from heat and stir in cheese.
You have 2 cooking options:
Remove tortillas from the oven and bring temp down to 300.
Fill tortillas with 1/4 cup filling and roll, secure with a toothpick.
Fry in approx 1/2" heated oil until golden and keep warm on a baking sheet in oven.
OR
Remove tortillas from oven, leave temp at 375.
Fill tortillas with 1/4 cup filling and roll, secure with a toothpick.
Spray lightly with cooking oil and bake about 20 minutes, until browned rotate at halfway point.
The fried version while not as healthy gives you fluffier tortillas. The oven version gives you crunch filling bits on the ends. They're good both ways, the oven version works great if you're able to program your oven since it's all essentially cooked already.
My hubby made the menu for this week. He's planning marinated pork chops (maple syrup, garlic, and soy sauce), roasted cauliflower, and grilled summer squash.
Simple tonight. Grilled flank steak, steamed green beans and salad from the garden.
I second the spinach lasagna rolls except the recipe that I use is made rolled up in corn tortillas. puts a little but of a mexican spin into the lasagna and I love the texture of the corn tortilla after it bakes.
Beef stir fry with peppers, onions and carrots with noodles. For the sauce, just use Kraft Asian Sesame dressing with some soy sauce - super easy. Check out the Kraft foods website for easy ideas.
Tomorrow: burgers on the grill.
Thursday: seafood enchiladas
I wish I knew for tonight! Last night I made chicken fajita's.
Tongiht it will probably be some kind of hamburger since I forgot to take meat out before I left...and the kids have activities tonight. Maybe sloppy joe's.
We had pancakes last night -- some with blueberries & some without. :)
I'm feeling low, so going for easy: yakisoba noodles, tofu, soyaki sauce and cleaning out the crisper of veggies for stir-fry. I can marinate and bake off the tofu earlier today while it's cool and then just stir-fry the veggies this afternoon, maybe drizzle some lime on the whole thing.
We had BLTs with turkey bacon and my garden tomatoes with garden steamed green beans. Since I don't cook my husband was happy. I hate cooking. Too time consuming!
Here's what I'll be making/have made so far this week: all slow cooker meals
Pulled pork sandwiches - made the meat seasoned alone so that everyone could add their own sauces or toppings as desired with roasted rosemary & thyme red potatoes
Beef brisket over onions and buttered herb pasta
Chicken breasts stuffed with 4 various Mexican cheeses, topped with diced garlic and herb tomatoes with broccoli
Beef stew with crusty sourdough bread
Tri tip steak, baked potatoes, corn on the cob
I'm craving bbq pork chops with rice. ( maybe I'll add buttered corn to the plate )
Dessert- ice cream drumsticks. ;)
Not very inspirational:
Today, spaghetti and meatballs and a green salad. Actually, it looks like it is going to be fettuccine instead of spaghetti since that's what I have in the pantry.
Tomorrow is going to be fish. Not sure on the sides. Possibly Spanish Rice and cauliflower.
Thursday is corn soup, fresh bread and watermelon.
Friday is probably going to be chicken broccoli divan over brown rice and some kind of fruit.
Next week's menu is going to include Hungarian mushroom soup because I have a craving.
We had potato soup last night, salads tonight. Something with meat tomorrow I think..not sure. :) I might see if my husband can pick up some tortilla's, I've been craving dairy like a fiend. Maybe make Mexi something.
This week's menu:
Mon: Baked salmon (marinated lime, garlic, olive oil, pepper, fresh basil and parsley), herbed rice, steamed green beans
Tues: Homemade Chili and jalapeno/cheese cornbread
Wed: Phyllo chicken pie and scampi vegetable salad
Thurs: A VERY busy day and evening: this will be leftover chicken pie since we will eat the leftover chili for lunch
Fri: Shrimp-stuffed zucchini on 3 pepper confetti (I'll ask Jer what to serve as sides b/c I dunno...I'm thinking a little saffron rice and some stewed okra/tomatoes)
Sat: Grilled steaks with mushroom piquant, roasted gold potatoes, and a watermelon-feta salad
Sun: Chicken fettucini alfredo, to which I add fresh mushrooms, chopped spinach, and some rotels to....and a nice salad (romaine, radishes, red/yellow peppers, tomatoes, carrots, celery, cucumber, and green onion...mushrooms if there's any left)
Tonight tacos but rest of week we will have:
-rotisserie chicken, corn, pasta salad
-meatloaf, mashed potatoes
-taco salad
-steak on the grill
-fish (salmon or tilapia), pasta
-bowtie pasta w/peas, cubed ham bits & alfredo
sauce
I have a picky household so it has to be plain. :)
I go to tastykitchen.com for ideas, or if you have a tablet/smart phone there is a fun (free) app called PunchFork - it shows current trending recipes from all of the popular food bloggers/recipe sites.
Chicken quesadillas, salad, and some kind of fruit. Simple and fast!
