Help Me Make Chow Mein!

Mamas......help! Ive got a family who craves chinese food but we simply cant afford to eat out anymore. I need a source for AUTHENTIC , dry, chow mein noodles. I did go in othe chinese grocery and they pointed me to packages that say chow mein on them, but truly arent. They are flat and taste just like spagetti noodles...much to soft. I need the noodles that are like top ramen noodles(squiggly and curly and more firm) but i am having a hard time finding these dried noodles.What are they called and where will i find them?

I just buy La Chow chow mein noodles. I can't say I've been thrilled with their other products, but the chow mein noodles are perfect.

Here is a description I found from the Kame website: Chuka Soba is the Japanese name for Chinese curly noodles. They are folded in an intricate curly pattern before they are dried. They are a great substitute for ramen noodles as they are not fried.

We use Hokkien Noodles, you can buy flat and thin ones, they work great! But they're not dried.

I love making chow mein and I'm no pro at all. I use the chow mein noodles I can pick up at the local grocery store boil for a minute and pan fry them in a little saffron oil in a wok prior to adding the eggs and cabbage. I don't care for sprouts or celery in chow mein so I don't use it. The funny thing is I believe that this is truthfully lo mein as from what I've been told by my Filipino relatives chow mein is the dried crunchy noodles. Though what do I know I'm a white girl. ;)

To make chow mein, they fry the noodles in the wok before adding the veggies, that gives them a different texture. You need to use noodles that are not just made with wheat flour, but also have egg added to the dough. It's not hard to make them yourself, my 17yo is making them tonight for us for dinner (I love that boy).
