for traditional shish kabobs, I just like seasoned charred meat. A little salt, pepper, and garlic. Charred on the outside, tender on the inside. Layed on a bed of flavorful rice. Maybe cilantro lime rice or wild rice. The meat is the star, so, you dont want to muddy that.
but skewers - I do those in a lot of differant ways. I like chicken satay - just chicken marintated in and brushed with peanut sauce and peanut sauce to dip it on.
Allegro cajun marinade, and teryaki are alsogreat for very flavorful skewers.
I like to put veggies on seperate skewers, since they seem to cook at differant speeds and I dont want the marinade all over them. I drizzle onion wedges, whole mushrooms, slices of zuchini, and cherry tomoates in olive oil, salt and pepper after I skewer them up. I love the way the tomoates pop! man that is making me hungry
I use a package of Hidden Valley Ranch dressing mix (the one you add sour cream to) mixed according to package directions, 2 Tbs. water, and 1 Tbs. olive or vegetable oil. Brush the mix on before and during grilling.
Just marinating the meat in italian dressing is amazing! Especially for venison, etc. it takes the "gamey" taste out of it. Delicious! Then just drizzling olive oil over the veggies with a little seasoning. Thanks for asking - I can't wait to see some other recipes!
I like using yogurt, mint and red onions for my chicken skewers. Salt and pepper to taste. It helps keep them really moist.
