Going Gluten-Free

My youngest daughter has been diagnosed with Celiac Disease. I was just wondering if any of you have advice regarding just regular sandwich bread, make or buy? What is the best? Any advice you can provide will be greatly appreciated.

She is also Type 1 Diabetic so I have been able to come up with very healthy alternatives...

Thanks for the responses. I too was finding so many items processed. After a bit more research I do believe I will be making my own bread. Thanks again.

Get away from the idea of using gluten free products. Many of them are not very healthy. Why not do lettuce wraps instead of sandwiches? There are a ton of delicious meals you can make without bread, pasta, and refined sugar. There are great recipes online for gluten free and paleo type diets.

One of the students at the school I work with is gluten free... his lunches often consist of a peanut butter and jelly sandwich made with rice cakes! He also frequently brings quesadillas made with corn tortillas..... You might also be able to make a wrap using corn tortillas.... just make sure they are gluten free.. (I don't know what other ingredients may be in corn tortillas).

I agree with Nicole G. about many gluten free products - they are still very processed.

That being said, my "go-to" white sandwich bread is made by Rudy's (not Udi's which is another one that's pretty good). I can find Rudy's at both Publix and Whole Foods.

try cooking with coconut flour - it has a low glycemic index.

I prefer gluten free home made bread

Elena's pantry has some good recipes

Cooking with gluten free flour takes alot of trial and error - especially with coconut flour - it is delicious however sometimes you may need to mix the coconut flour with other flours such as brown rice flour or almond flour, etc...

I use Corn Tortiallas, as the are GF and cheap.
There are many products that always were GF.. Try to stick with them.
Rice cakes are yummy, taste like popcorn.

We have a store by us that has a lot of options at a "reasonable" price. It is still expensive. You are better off eating traditionally GF foods.

Corn Flakes-unless it is stated is not GF it has Rye in it.
We have a bakery that makes only GF products. Sweet Ali's in Hinesdale IL, you can check to see if there is a GF bakery near you.

When you make it, it goes stale fast.. cut it to portions you want, and freeze it right away. That is why most of the GF breads are frozen.

They both say about the same thing, one is more recent than the other.

A lot of pizza places have GF pizza for a treat. We have one we buy at the store it is a personal size and is about $6.00 so we get those and then when we order in pizza we eat the normal one. Or it gets way to expensive.

Good luck, it is a big change, but I have lost weight by going GF. And I have no regrets.

Udi's has the best gluton free bread I've found. Toasted it's really really good!

I like Udi's bread, which I get in the frozen section of HEB. I also really like Van's Blueberry Waffles, which HEB and Kroger carry. Just make sure you get the gluten free waffles, because Van's makes regular and gluten free.

I have actually considered using the Van's waffles as sandwich bread. Haven't done it yet though. But I bet a sandwich made with waffles would be very appealing to a kid.
