Money. (Sorry, when I finished my degree, I was broke, had no job and needed money!)
If he drinks, I'd buy him a bottle of something nice, either wine, whiskey, port, etc. Buy something he can celebrate with, as oppose to material objects.
Does anyone have any gift ideas to give someone who just earned his PhD in physics? He is in his 30's, single, and has an unassuming personality. Thanks!
Thanks for all the gift ideas! Something congratulatory seems to be the way to go.

I have my PhD, and when I graduated...the best gifts I received were gift certificates - restaurants, spa (even guys like massages!), etc. Another great gift would be a gift certificate to a diploma framing company.
I would say gift card to some eating place. I would say like chipotle, potbelly or if he is in coffee - dunkin donuts or starbucks.
When you are single , may be still doesn't have a job lined up - free food is much appreciated.
I would have loved that when i finished my PhD a year back:)
A bottle of champagne! It's time to celebrate! What an accomplishment!
We got my brother in law a nice sport coat when he graduated with his PhD. It was what we considered a 'professor' sport coat: tweed with leather patches on the elbows! And a bottle of champagne to share!
