I have a friend who nearly died recently from her gallbladder going seriously bad. She finally was rushed to the hospital, completely yellow, and the gall had back-washed into her liver or something.
She was almost dead. She has physically healed from the surgery but her digestive tract will never be the same. She cannot eat hardly any fat at all. If she does she is sick for days and in agony. So her diet is nearly fat free. She can eat some oils but even those are super super limited.
When I had gall bladder issues I found I had a 22 mm gall stone. I got mine out and suddenly I can drink OJ and not burp it up for days. I can eat fried foods and hadn't been able to do that before without it hurting me. I do NOT eat a low fat diet and have zero issues with having no gall bladder. I had mine out on a Monday and was back at work on Wednesday for half a day then went back full day on Thursday. I was back 80% for a week or so then back to 100%.
I can pretty much eat anything I want now and am completely grateful to have my gall bladder out.
I suggest you contact another doc that does gall stones and get them treated. One cousin got some sort of treatment to dissolve his. Then another friend took meds to get hers gone.
There's no reason to live with them. None at all. Your doc should have given you meds and arranged for further treatment. That's not what I'd say is good medical care is. Gall stones should be treated.
