A couple of things: kids go through stages and one day they will eat something they love, while the next day they won't touch it; this is normal; try melting a little bit of cheese over broccoli and cauliflower (both my kids love this and have for a long time)--if you cook the broc and cauli enough, it's soft enough for them to eat, even with three teeth. =0) Don't feed him the stems, just the florets.
The most reassuring bit of info I received from the doctor's office with my first child: up until about age five, your goal is to help kids eat a balanced diet over a period of three weeks, not each day! So, if one day they don't eat any veggies, and the next day that's all they will eat, great! =0)
Oh, also, check out a great book called the Sneaky Chef; the author's last name is Lapine, I think. It's a great way as your babe gets older to sneak fruits and veggies into foods they love. =0)
