Donate them! Schools often need them for their holiday bazaars.
I save all my gift bags thinking one day I can use it again but that day never seems to come, should I just throw them out or is there something crafty I can do with them?
Majority are baby shower gift bags.

I donate things like this to the art teacher at school.
Example: gift bags, the cardboard insert that comes in my hubby's shirts from the dry cleaners, etc.
if you have a local charity, call and see if they want them. Several charities put together packages for new mothers that need assistance. Sometimes I take one in the car and use it for trash when i clean out my purse when I am a passenger on a long car ride!
Make a scrapbook for a friend that is expecting. Make one even if you don't know anyone expecting - YET! Cut out the cute pictures of ducks and elephants for some of the pages. Use the plane paper fronts/backs (solids, stripes, polka dot, etc) for backgrounds or for picture frames. Leave room for journaling, either using striped paper or draw lines on other paper.
I do the same thing. I had a ton from my baby shower and wedding, then Hurricane Ike took them all for me. I have a few now, mainly birthday bags. I do reuse them sometimes it it is an oddball shaped item. But I like wrapping presents and find using bags a cheaters way out (my opinion).
You could use them for craft projects. Cut parts out, and glue them as a collage. Use parts and pieces in scrapbooks.
It's funny, everyone I knew was pregnant within 3 years of my first and then there were seconds...within 5 years of my first, I'd used ALL my gift bags!! The PACN (pregnancy assistance center north) right on 45 between Rayford/Sawdust and Woodlands Parkway (going north) will use them. I'm sure there are other locations for them too - I'm not sure where you are in Spring. There's also a Goodwill store on Sawdust next to Hobby Lobby and a Hand Me Up Shop done by Interfaith of The Woodlands on Rayford that's a bit harder to find - I can give you exact address if you're headed there.
I have a large one hung from a clothes hanger in my kids' closets, so we can toss outgrown clothes in there as we discover them.
I have a friend who uses them as a lunch bag until they wear out, then replaces it with a new one.
My 18-month old drags a small one around the house for her "treasures."
