Church BBQ Potluck, Need a Side That Goes with Burgers

Our church is having a potluck at the pastors house in a few weeks. They are providing burgers, we are to bring a side or a dessert. Looking for either yummy crock pot recipes (so it will stay hot?) or something...anything...that goes with burgers. I've been thinking about this since Sunday and I can't think of anything. Thanks everyone!!!

So What Happened?

Oh, and I should add, its a new church, there is only about 20 of us, including kids! =) So we don't need to feed a ton of people. THANKS EVERYONE!!!

I rarely use the crock pot so I don't have recipes for crock pot use. We don't eat desserts either... just on rare occasions but my daughter LOVES baking them. My freezer is full of her creations, LOL

Relish tray with pickles, tomatoes, cheeses, olives, etc
Assortment of condiments, mayo, mustard, buns etc.
Potato salad
TX Cavier -- a salad made with black eyed peas.. if you want the recipe, let me know.
Tomato, cucumber, onion salad.... tossed in olive oil, apple cider vinegar.. yummy

Appetizers... salad on a stick, finger foods
Fruit tray
Veggie tray

Peanut butter bars (like Reese's peanut butter cups):
Mix together:
1 cellophane pkg of graham crackers, crushed
1 lb. powdered sugar
1 c. melted butter/ oleo
1 c. peanut butter
Then press into cookie sheet.
Spread over top:
1 pkg. semi-sweet chocolate chips, melted
Refrigerate until firm, then cut into bars.
They're a hit and only take 20 minutes to make (then more time to refrigerate). Have fun!

Hash brown casserole, escalloped potatoes, escalloped corn, baked beans.
On the cold side, potato salad, cole slaw, layered lettuce salad, deviled eggs. Jello salads, fruit salads, fruit pizza.
Condiments: pickles, cheese, lettuce, tomatoes, onion slices, ketchup, mustard, Mayo.
Cookies, brownies, cakes, pies, cobblers
.
EVERYTHING goes with burgers. :) :)

Homemade baked beans!
Get Bush's and add brown sugar, a little ketchup and bake the bejesus (sorry!) out of them.
People BEG me to bring those to pot lucks!

Homemade potato salad or macaroni salad! You could also make your own Jo Jo's too!

Dessert wise, layer cake is always delicious and easy to make. Any type of pie, or cookies, or cupcakes.

I had this once at a church potluck and loved it. Now I make it all the time for potlucks... everyone loves it.
INGREDIENTS:
1 package frozen tiny peas, thawed
1/2 red onion, chopped
4 ounces shredded cheddar cheese
real bacon bits (comes in a jar if you dont want to make your own)
Ranch dressing or mayonnaise (I use the mayo version)
DIRECTIONS:
Mix all together, and serve chilled.

An easy pasta salad would go good with burgers. Also baked beans. You can do those in your crock pot.

I also am making a side this weekend- i decided on macaroni salad because it keeps and I have to do all my cooking on Thursday and I need something kids like. I grabbed a recipe from Paula Dean. Usually I don't go to her but since my sister informed me she is an evil genius, I decided to try her out. And yes, she calls for 2x the amount of mayo than other recipes.

Can you bring both a side dish and dessert?

Dessert: Lemon Squares (real good).

Both of these are REAL easy and GOOD.
And both can be served room temp.
So that is even easier.

My family has always loved the carrot salad I make... it isn't the mayo/creamy based carrot salad... it is just shredded carrots, raisins, and crushed pineapple!

2 lbs carrots, peeled and shredded
1 can (15 oz or so?) of crushed pineapple (or less... I just put some in)
1 C or more of raisins

Shred the carrots, add raisins, and add crushed pineapple. You don't need to drain the pineapple....

Add more or less raisins/or pineapple...... I really don't know how much I put in of each....... it usually disappears!

I like potato salad with diced dill pickles and mustard. I leave the skins on.

Chili. This recipe I made up myself and I've won first place in chili cookoffs with it.
B.'s Smoked Chicken Chili

1 28 ounce of enchilada sauce (I used hot, red sauce)
1 15 oz can of refried beans
4 15 oz cans of chili flavored beans
4 pounds of chicken leg 1/4's (leg 1/4's work better than breasts)
2 tablespoons of chili powder
1 heaping teaspoon of cayenne pepper
1/4 lb of fresh jalapenos. (canned won't work as well)

I used a 6 qt crock pot turned on high.
Smoke the chicken leg 1/4's. Place them in a pan, with 1/4" of water, on a BBQ grill with mesquite wood for smoke. Cook them over very low heat, until done. Put the chicken leg 1/4's and the water in a container in the frig over night. I put Canadian Chicken Seasoning on my chicken in the grill.

Put all the ingredients in the crock pot, including the water in the pan the chicken cooked in, except the jalapenos, and stir. 5 hours later, remove the leg 1/4's and place on a plate to cool. After the chicken is cool enough to handle, remove the bones and place the meat back in the crock pot, then stir. Stirring breaks up the chunks of meat and makes it go through out the chili.

Cut the tops off the jalapenos. Cut them in half length wise. Use the round end of a spoon to scoop out the seeds and white part that holds the seeds. (The seeds and white membrane makes Jalapenos HOT.) Do the scraping under the water or with a fan blowing the fumes away from you. Dice the pods and add them to the chili 15 to 30 minutes before serving. Enjoy!! (For thicker chili, remove 2 cups of sauce only from the pot when you remove the chicken to debone it.)

I sipped/drank the sauce I removed to make my chili thicker. It was HOT, but delicious.

With the weather warming up, I always like to serve something chilled. I make this easy pasta salad & always get raving reviews.....

2 boxes of multi colored pasta
1 large tomato, or cherry tomatoes
1 can sliced black olives
2 blocks cheese (mild cheddar & colby jack)
1 head of broccoli
1-2 bottles italian dressing

Cook pasta according to directions. While that is cooking, chop the cheese into bite size squares, slice the olives if they arent already, cut up broccoli into bite size pieces, slice tomato into bite size pieces or just wash the cherry tomatoes. Once pasta is done & cooled, mix all together with enough italian dressing to coat. Very simple, very good!!!!

For a dessert, you can do a cake in the crock pot..... I had made this on Easter & it was gone faster than it took to mix & put together!!!!

Chocolate Lava Cake

1 package devils food cake mix
3 eggs
1/3 cup vegetable oil
1 2/3 cups water
1 package Chocolate Flavor Instant Pudding Mix
2 cups cold milk
1 bag (12 oz.) semi-sweet chocolate chips

Directions:

1. Prepare cake mix into batter using eggs, oil, and water.
2. Pour into slow cooker.
3. Prepare Jell-O Instant Chocolate Pudding Mix using milk.
4. Pour this over cake mix in slow cooker.
5. Sprinkle chocolate chips all over the top of the batter.
6. Cook in slow cooker on high setting for 2 1/2 to 3 hours until cake is moist but not jiggle, and little volcanoes of spitting chocolate appear on top.

Serve with ice cream, whipped topping, or on its own.

definatley macaroni salad.. when i make it we always have it for daaayyss .. i dont see a point in making just a little bit.. i use 2 boxes of elbow macaroni, lots of mayo, 3cans of tunafish, and chopped up celery and carrots n then stick it in the refrigerator... its awesome

OMG I just made this over the week end....loved it....mac n cheese with bacon!

Follow the receipe and then instead of putting it in the oven....put it in the crock pot to finish off...

I love hashbrown casserole. Just buy the OreIda brand and the recipe is on the package. I've served that at bbq's w/burgers and hotdogs many times- people always like it.
