What are your favorite weeknight family dinners? I'm looking for simple but delicious meals we can all enjoy (without any kid complaints). We seem to be in a very boring rut of tacos, homemade pizza, roast chicken and spagetti. What meals do you and your kids look forward to? I'm sure you all have a ton of great recipes to share. Thanks so much!

My husband came up with 2 great meals and my kids absolutely love them.... One is pizza sandwiches.... basically a grilled cheese using mozzarella cheese and pepperoni's (where you would normally just add cheese) cut it in three strips and then you give them pizza sauce to dip them in.

The other sounds a little gross but it absolutely wonderful.... it is called macaroni and cheese pizza...

Basically, you make a box or two of mac and cheese as directed. Then you throw in a egg and mix it up... this helps hold it all together... put in a casserole pan and spread out along the bottom of the pan to be the crust.(does not have to be a thin layer.... Then put on pizza sauce, cheese and whatever other toppings you want... Put it in the oven for 20 mins and then serve.... It is great. Kids love it.

Taco Salad-Lettuce, taco meat, tomatoes, kidney beans, cheese and ranch dressing.

Refried beans w/ cheese, warm whole wheat tortilla

Rice Casserole-Rice, ground turkey or canned chicken, ROTEL in a can(tomatoes and green chilis) 1 can of water per can of Rotel-Brown meat and then combine all ingredients. Place in oven and cook for about 20 min or until rice is done. Then add cheese or fritos. Cook until cheese is melted. You can omit the fritos, we do now that we are eating healthier.

Pizza Pie-Make mashed potatoes first and brown ground turkey. Add 2 cans of tomato sauce, 1 jar of pizza sauce or 1/2 jar of spaghetti sauce to the meat. Put meat on the bottom of a casserole dish, layer with potatoes and top with cheese. Everything is already cooked, so I usually just stick it in the oven for about 5-10 min, so everything can goo together and the cheese can melt. You can add green beans to this as well, but in my experiences the kids like it without:)

Aside from this we just do chicken and veggies, homemade pizza, tacos, etc. We did just have Swedish Meatballs w/ angel hair pasta and the kids LOVED it. They actually like any type of meatballs. We only used ground turkey at our house, but you can always use ground beef for any of the above recipes.

I also just made pizza muffins using the homemade pizza dough. I put the dough in a greased muffin pan, made a hole for the sauce and topped with cheese and they loved that too!

I make all of these for my daycare children too and they all love every recipe! Happy Cooking:)

Hi H., I have a couple favorites of the family. Good old Chili-Mac! Make 2 boxes of mac and cheese, stir in 2 cans of chili! YUM! also, buy a big 6 pound bag of frozen meat balls at Costco, put in a crock pot on low with your favorite BBQ sauce. Serve over white rice. And a salad. Also great for parties!

Also search the internet for "easy recipes". Tons of them come up. One of my favorites is www.razzledazzlerecipes.com but there are many and when you get in them you can search again for quick and easy and it narrows it down more.

There is also a cookbook with 5 and 4 ingredients or less and those are quick and easy.

You could try something like grilled chicken with pasta salad. Cook bowtie pasta and cool it down, then add Italian dressing and some chopped veggies. Serve chilled. We have roasted turkey breast sometimes instead of chicken and I serve it with a baked sweet potato and a veggie. Kinda like Thanksgiving dinner but more modest portions.

We also like to have baked pasta. I brown some ground sirloin and add it to pasta sauce with some chopped mushrooms and a little frozen spinach. After it has cooked together for 15 minutes or so, I add about 1/4 cup of lowfat ricotta cheese and mix in cooked pasta. Transfer it to an oven safe dish and top with shredded mozzarella. Bake at 350 until the cheese melts.

We like fish a lot, but it can get boring. Aside from lemon pepper or garlic dill, I like to grill salmon with teriyaki sauce on it. I serve it with brown rice and steamed broccoli (or carrots for my son who hates broccoli).

I usually try to jot down some meal ideas for the week before I go grocery shopping so I make sure I have what I'll need. I make my husband pitch in his thoughts too. This way I don't have to feel pressed to come up with a dinner plan on a daily basis. :)

My 11 year old made the best dinner ever the other day while I was working my business in the next room and yeld out the recipe to her. It's kinda like a chicken pot pie but better...

4 chicken breasts cut in cubes after cooked
2 cans cream of chicken soup
1 cup of milk
1 bag mixed veggies...

If you are going for the dumpling style use home style bisquets. Just open the can and lay them in the baking dish with everything else.

or

use 1 cup of rice and top with some crushed crackers or corn flakes.

Salt and Pepper and maybe some garlic salt will finish either style. Throw all in the oven at 325 for about 45 minutes (covered). The chicken was already cooked so you don't need to worry about that and the best part is you can precook the chicken in the microwave becasue it will tender back up in the oven with the soup.

If your kids are at an age where they can do it themselves or help you out, it lots of fun and super yummy.

kids really like to eat food they help with. pigs in a blanket. 1 tub cescent rols, hot dogs. separate the biscuits for the girls because they can be sticky. start rolling hot dogs from the wide end to the pointed end and bake as directed for the biscuits. sloppy joes and tater tots, bacon cheese and tomato grilled cheese sandwiches9 i use a george foreman lean mean grilling machine for the sandwiches and they are crispy. cook the bacon first or save it form breakfast. my favorite is potatoe soup. this is really easy and delicious. 6 meduim ptoatoes peeled and cubedinto 1 inch cubes, i medium onion sliced thin, 1 stick butter (margarine doesnt swork as well, sautee the potatoes in the butter until almost done, keep stirring so they wont stick, add onions and cook and stir another minute, add i can evaprated milk and i pint heavy cream, 1 envelope powdered ranch dressing mix and half a cup sour cream. add three cans chicken broth, stir and bring to a boil when it starts boiling turn it down and simmer abotu 20 or 30 minutes or until potatoes are soft. put in bowls and sprinkle with grated parmesan cheese. WARNING this is not a low fat recipe but it is yummy. it gets better as left overs. we also love to do breakfast things for dinner. like omelets, pancakes, egg sandwiches. cheese crisps are also another favorite. i put a large flour tortilla on a pizza pan. put it in a 400 degree oven until it is crispy and about 10 minutes. then bring it out and spread cheese and any other toppings. i use sliced avocado, salsa, choped tomatoes, left over bacon or sausage, left over chicken, bel peppers, green onions, beans, etc. let the kids chose what they want on it . then p[ut it under the broiler until the cheese melts. you can also have the girls help you make mini burgers. make some biscuits. then have the girls form the hamburger patties to biscuit size. grill them out doors and have each of them choose what they want on thier burger,

There's a great cookbook from Southern Living at Home called Easy Weeknight Favorites. It has GREAT and EASY recipes. I'm not much of a cook, and I can do these recipes. There's a recipe for "Nacho Chicken" that's made with crushed Doritos and chicken breast. There's also some really yummy dessert recipes. It's my favorite cookbook ever! I'm not a rep for Southern Living at Home, but I know of one if you need to find one.

My little boy has loved this since he was a baby - Italian Chicken:
1 8oz package cream cheese
1 can cream of chicken soup
1 c. chicken broth
1 package dry italian dressing mix
1.5 lbs chicken - breasts or tenders

Mix all the ingredients except the chicken in a sauce pan until smooth, then pour over chicken in crock pot. Cook on low for about 4 hours, the chicken will be tender and break up nicely. Serve over noodles or rice. This is a great alternative to spaghetti. Goes excellent with steamed brocoli, zucchini, salad, or whatever your family likes. This recipe serves about 4 adults and is easy to double/triple but of course takes longer to cook. You can use all the low/nonfat versions of the ingredients to make it healthier too. It also freezes well if you have a small family or if you like to cook once and have two meals. :)
I have also found that my toddler will eat all kinds of things if it looks familiar even if it's new. We cut different things into triangles so it looks like pizza. I have a friend with 4 children ages 3 to 8 and she cooks all kinds of things in a muffin pan, like meatloaf. Then all the kids get an individual portion and it's fun for them. Good luck, I've also been feeling a bit in a rut, so I've gotten out some of my Pampered Chef cookbooks and there are also tons of great recipes in them. One more thing I've done is bought uncooked tortillas for tacos, fajitas, etc... They are so much better! You basically just heat them up for a few seconds each side in a pan or on a griddle. It may help make tacos a little less boring. :)

One thing I just made, and actually liked, was cheeseburger packages. I browned and seasoned some ground beef, added velveta until melted. I then took pizza crust in a can and cut it up into 3 or 4 inch squares. I put a tablespoon of the beef mixture into the center of the dough, and folded the corners up and to the center to make the packet. I put them in the oven for 15 minutes (I think it was), or until the dough is brown and done. My kids LOVED these, as well as my husband and I. You could use biscuits in a can too, or make your own dough.

My kids love salsbury steak. I buy two boxes, stick it in the oven for an hour, serve with instant mashed potatoes, and microwaved corn. Although this may not be a "healthy choice", it is quick, hasslefree, and the kids are happy with full bellies. We never have left overs!

We also eat alot of meat, chicken, & pork chops which I always find hasselfree, and quick when cooked on the grill. I serve with vegetable kabobs that the kids helped make, and this makes them more willing to eat since they made it.

I see from the other posts you received alot of great ideas. I'll have to check back and copy some of the recipes for myself!

Easy Quiche

In a food processor:
4 eggs, 1.5 cups half and half, blend well and pour into prepared pie crust shell

In food processor:
1 lg can ham, 2 cups broccoli, 1 cup colby jack shredded cheese, chop well, put into egg mixture, distributing well throughout with spoon

bake at 375 for 50-60 minutes, or until knife comes out clean in center...let sit 10 minutes before eating

My kids adore this recipe and our family 4 table eaters (we also have a 10 month old) finishes this off in one sitting. it is very tasty and you can sub carrots, cauliflower or whatever. you can also use leftover chicken or turkey, use swiss or monterey jack cheese, and do the same thing.

I always add a different fresh fruit or veggie to each meal. Try barbecue chicken or briscuit or get out on the grill. You can do all kinds of things on a grill...even grill fruit. My family loves it when I have breakfast night. I do pancakes with fruit and fresh whipped cream, eggs, and sometimes italian sausage. I also make different kinds of wild rice and add veggies or chicken. You can make curries too. It's easy to get into a rut but maybe these will give you a couple new things.

I work with a company called Megan's Pantry. We are a NM based, national home party company. One of the things we make availalbe to people is Meal Plans. Each month we put out a new one with a specific theme. The theme for March was "Kids Cook". This plan was actually featured in a national publication. It has Megan's Pantry products and recipes and a shopping list for 5 different meals that kids love.

These are two of our faves and they are quick and easy!!
This one I got from allrecipes.com, my husband had something simmilar at a resturaunt: It seriously is all ready in 30-40 minutes, make some garlic bread too:)
INGREDIENTS
1 (16 ounce) package penne pasta (the mini or mezze are best!)
2 tablespoons butter
2 tablespoons olive oil
4 skinless, boneless chicken breast halves - cut into thin strips
2 cloves garlic, minced
salt and pepper to taste
1 1/4 cups heavy cream
1/4 cup pesto
3 tablespoons grated Parmesan cheese

DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Heat butter and olive oil in a large skillet over medium heat. Saute chicken and garlic until chicken is almost cooked. Reduce heat and stir in salt, pepper, cream, pesto and Parmesan cheese. Cook until chicken is no longer pink inside. Stir in cooked pasta.

This next one I just made up because I had something at a resturaunt and loved it and no where could I find a simmilar recipe:
3-4 chicken breasts marinade in Lawrys Herb and Garlic -the longer the better
cut up cauliflower (my fave) or any veggie and stem it.
16oz box of angel hair pasta
1/3-1/2 cup of extra virgin olive oil (I really have never measured this but this is my best guess)- this is the "sauce" for the noodles.
minced garlic I really don't measure the spices
oregeno either, couple cloves of garlic and
basil a handful of good shakes of the rest.

grill the chicken, when you flip the chicken steam the veggies,start the water for the pasta cooks in 4 min. When the water is boiling and you put in the pasta heat the oil. When the chicken is done cut into strips or we do bite size peices, drain the noodles, put back in kettle, pour the herb oil on pasta stir it up. And serve it seperatly or all together what ever you like. My kids are a bit picky so they NEED to dip the chicken and veggies in ranch.
The only real busy part is when everything is done and you have to cut the chicken.

I hope you can get use out of either of these recipes, my kids are 5, 3, &1 and have also loved them.

You are always going to get kid complaints at some point. I have an awesome program that has mainstreamed my cooking and provides my family with a balanced healthy meal everynight. It is hard to explains, so e-mail me and I can scan and e-mail the program over. I takes me 30 minutes to make the meals and shopping is a breeze because of it, so I save time and money.. ____@____.com have tons of recipes to go with this program and most of them are really kid friendly.

Create your own Mac and cheese. Use either boxed or homemade and then lay a bunch of veggies and cut up meat like chickien and ground beef. The kids can deck out their mac and cheese any way they want. They have fun making up new ones. My boys like Artichoke hearts and pesto with sour cream with a dash of Balsamic among other things.

Hi H.,
When my kids were young, we ate more red meat than we do now. I made meatloaf as an inexpensive alternative to hamburgers. I served fish sticks when I couldn't get them to eat baked or broiled fish. I made chicken pot-pies, chicken liver and bacon, chicken ka-bobs on the grill, lots of soup, and mac & cheese. I'll be happy to send you recipes if you are interested.
BTW, my kids are in their 30s now, and eat everything, despite being the pickiest of eaters when they were young.

You can change what you make your pizza on... biscuit dough (flattened out) or bagels or tortillas, etc. for individual pizza, chicken nuggets (cut up your own chicken breasts and use Shake-N-Bake), loaded baked potatoes, breakfast for dinner, pita bread filled with their favorite foods (even taco fixings), taco salad, mini meatloaves shaped in their initials or like an animal, "shish-kabobs" made of just about anything (doesn't even have to be cooked), or just cut up a dinner that they might be bored with into bite sized pieces and tell everyone they can only use a toothpick to eat dinner. Have fun!

The formatting gets kind of messed up, but here are a couple!

Spaghetti with Sausage and Mushroom Sauce
If you like it spicy, use hot Italian sausage instead of sweet.

12 ounces sweet Italian sausage, removed from casings
2 cups sliced fresh mushrooms
1 28-ounce can crushed tomatoes, undrained
1 8-ounce can tomato sauce
1 6-ounce can tomato paste
1 medium onion, chopped
2/3 cup water
2 cloves garlic, minced
1 tablespoon sugar
1 teaspoon dried rosemary, crushed
¼ teaspoon ground black pepper

Brown sausage; drain.
Place all ingredients, including sausage, in crock pot. Stir well. Cover and cook on low 6-8 hours or high 3-4 hours. Serve over hot cooked pasta. 6-8 servings.

Skillet Beef Tamales

1 pound lean ground beef (I use ½ pound and add a cubed
onion)
1/3 cup chopped green bell pepper
1/3 cup chopped sweet red pepper
2 cups salsa
¾ cup frozen corn
2 tablespoons water (may need more)
6 corn tortillas (6”), halved and cut into ½-inch strips

Saute beef and peppers (and onion, opt.) until meat is browned. Stir in salsa, corn and water. Bring to a simmer. Stir in tortilla strips. Reduce heat; cover and simmer on low for 10-15 minutes or until tortillas are softened (beware of burning). Sprinkle with cheese; cover and cook 2-3 minutes longer or until cheese is melted. Serve with sour cream/yogurt.

Easy Creamy Tomato Pasta
“Saving Dinner” by Leanne Ely, p. 90

2 Tbsp. butter
1 onion, chopped
1 small red bell pepper, chopped
1 pound penne pasta (I use less)
½ pound Italian sausage, removed from casing
1 pound spaghetti sauce
1 cup low-fat sour cream

In skillet over medium heat, melt butter and sauté onion and pepper. Meanwhile, cook pasta. Add Italian sausage to onion mixture and cook till crumbled and cooked. Drain.
Heat spaghetti sauce. Add cooked pasta, sausage mixture and sour cream. Cook until heated through, about 5 minutes. Serves 6.

SERVING SUGGESTION: Serve pasta with a spinach salad and some baby carrots.

Sweet Bean Burritos
“Saving Dinner” by Leanne Ely, p. 70

2 Tbsp. olive oil
1 onion, chopped
3 cloves garlic, crushed
2 cans black beans, drained (I don’t drain)
2 medium sweet potatoes, cooked & mashed
1 tsp. cumin

6 flour tortillas
6 Tbsp. cilantro
6 Tbsp. cheddar cheese, grated
Jarred jalapenos, tomatoes, lettuce, etc.

In skillet, heat oil over medium-high heat and cook onion and garlic until soft. Add beans, stir in mashed sweet potatoes, add the cumin, and mix well.
Heat tortillas and roll up with bean mixture and added ingredients. Serves 6.

SERVING SUGGESTION: Add a spinach salad and you’re set!

Crockpot BBQ Chicken
“Saving Dinner” by Leanne Ely, p. 223

1 whole chicken
2 onions, sliced
2 cups barbecue sauce

Put chicken in Crock-Pot with onions on top and add the barbeque sauce; cook on low 6-8 hours. Drain off fat and serve.

Note: Cook 3-4 hours if using chicken thighs or drumsticks.

Crock Pot Chicken Indonesian
“Saving Dinner” by Leanne Ely, p. 190
Serves 6

1 tablespoon soy sauce
2 cloves garlic, minced (I use more)
2 teaspoons grated fresh gingerroot
1 ½ teaspoons sesame oil
¼ teaspoon cayenne pepper
6 skinless chicken thighs
1/3 cup peanut butter

In a small bowl, combine soy sauce, garlic, ginger, sesame oil and cayenne. Place chicken in greased Crock-Pot. Pour sauce mixture over the top. Cover and cook on low heat setting 6 ½ - 7 hours (more like 3 ½ - 4 ½ hours) or until chicken is tender and fully cooked. Remove chicken from Crock-Pot and stir peanut butter into juices until smooth. Serve sauce with chicken.

SERVING SUGGESTIONS: Serve with brown rice, steamed broccoli, and baked sweet potatoes.

Crock Pea Soup
“Saving Dinner” by Leanne Ely, p. 10

1 pound split peas, rinsed
1 ham bone, optional (I use a ham hock)
1 onion, chopped
2 carrots, peeled & sliced
1 stalk celery, chopped
2 cloves garlic, pressed
1 bay leaf
1 ½ quarts water (use chicken broth if not using ham bone)
Salt and pepper to taste (salt not needed)

Put all ingredients except S&P in crock pot. Cover and cook on high for 4-5 hours or low for 8-10 hours, or until peas are very soft. Before serving, remove bone and bay leaf. Salt and pepper to taste.

SERVING SUGGESTIONS: A spinach salad and some whole grain rolls.

Honey Mustard Glazed Chicken
“Saving Dinner” by Leanne Ely, p. 104

1 tablespoon olive oil
½ onion, chopped
6 boneless, skinless chicken breast halves (or thighs, preferred)
1 teaspoon paprika
Salt & Pepper, to taste
1 tablespoon lemon juice
1/3 cup Dijon mustard
¼ cup honey
½ teaspoon curry powder.

In skillet, heat oil over medium-high heat and add onion. Sauté till translucent. Sprinkle chicken with paprika, salt and pepper, then add to skillet. Cook till done and browned. Set aside and keep warm.
Mix lemon juice, mustard, honey and curry in small bowl. Add to skillet, mix well, scraping bottom. Return chicken to pan to warm. Serve with sauce.

SERVING SUGGESTIONS: Serve with brown rice, steamed cauliflower, and sweet potatoes.

Crockpot Tangy Rump Roast

1 rump roast, trimmed - 3 - 5 lbs.

1 package onion soup mix

1 can cranberry sauce - jellied

2 T. butter - softened

2 T. flour

Rinse rump roast and pat dry. Salt and pepper.
Brown roast in oil. Deglaze with water.
Sprinkle the onion soup mix in the bottom of the crockpot. Place the rump roast in next. Spoon the cranberry sauce around and over the roast. Add water from pan. Cover and cook on low 10 - 12 hours.

Remove roast from crockpot and allow to rest while you thicken the gravy. Turn the crockpot up to High. Blend the softened butter and flour into a paste and whisk it into the gravy. Cover and cook on high for about 10 minutes, until thick.
Alternate method – Add butter to drippings. Let melt. Put flour in jar with a little water; shake to make slurry; add to drippings and stir to incorporate. Cook 10 minutes or until thick.
Slice the roast into 1/4" thick slices and serve with the gravy.

SantaFe Chicken
I love my crock pot! Here is a favorite of mine. It uses ingredients I usually have on hand. (From Orlando, FL)
Combine the following in your crockpot:
1 can black beans, drained
1 can corn
1/2 cup salsa
After stirring, add:
4 boneless, skinless chicken breasts
1/2 cup more salsa
Cook on low for 3 hours. Then add,
1 block of cream cheese
Cook one more hour. Serve over rice with flour tortillas. Yum!

A couple of things that I do,

Cut up a couple of chicken breasts cook in a skillet, Add a half cup to 3/4 cup of salsa (I use mild) and serve over white rice (or brown rice) My kids love it and they are pretty picky eaters.

Another favorite in my household is:

Get some frozen chicken breasts, turn the burner on medium heat put 1 tablespoon of butter in the pan. Fry the chicken breasts. Toss in a can of cream of mustard soup or cream of chicken soup you can also use taco soup mix or nacho cheese soup and serve it over rice or mashed potato's and a side of green beans or corn.

there is a great recipe on the Campbells Golden Mushroom soup can that is for a stir fry - basically the soup and 3 tablespoons of soy sauce you use some cut up chicken or beef into strips and can use whatever froen or fresh veggies you want - I turn rice on after browing the chicken (or meat)in a couple of tablespoons of oil -add the veggies (we use a Costco frozen variety) and it is all done at the same time. This is one of our favorites.

I second grilling...my kids LOVE shish ke bobs - we cube chicken, get canned new potatoes (or fresh), mushrooms and any other veggie they may eat... this turned out to be a fantastic mean and they can use their fingers to eat...I have learned that putting food on toothpicks or skewers gets my kids to eat more, go figure...(that and a side of low fat Ranch to dip is also good!)
Other ideas...corn on the cob (Sams Club sells it fresh cut in half right now, my kids adore it with grilled chicken...(we grill almost everything).
Also, a great snack (or side) that my friend introduced me to for my kids to eat while I cook is soybeans/edamame with sea salt..I am not a vegetarian and was skeptical that my kids would eat it...they LOVE them since they eat them with their hands and can pop the beans out which is fun. You can buy them in the frozen section at Sams Club in small microwavable trays with sea salt to sprinkle on top...usually we have them as a snack, but had them last nite as our veggie..
Also, fruit with a yogurt/whipped cream dip is always easy at dinner too...

We love cheeseburger macaroni. Make any Mac & Cheese. Add cooked ground beef, 1/4 C ketchup. 2 T mustard.

My 23 mo old loves crustless quiche and calls it pizza. Whip up 1 egg/person w/ 1 T milk/egg. Add cooked meat (sausage, bacon, ham), chopped veggie (spinach, broccholi, bell peppers), and shredded cheese. Pour into greased baking dish, top with more shredded cheese. Bake at 375 for 30 min, until set in middle. Cut into squares or triangles for pizza shapes.

Change up your spaghetti with different pastas...shells, wagon wheels, whatever is on sale. ;) I found that my husband enjoys the variety as well.

Slow cook chicken breast, pork or beef roast. Shred and add BBQ sauce. Serve on buns. The older girls might like helping with the shredding and slow cooking makes the meat practically fall apart.

This is delicious and nutritious, even though it sounds like kids would never touch it, but my three kids (ages 1-7) love it, as does my husband who hates broccoli on its own.

Green Rice

4 cups cooked rice
1 can cream mushroom soup
1 cup sour cream
1 1/2 cup chopped broccoli (fresh or frozen)
1 1/2 cup shredded cheddar cheese
salt and pepper

Combine all ingredients in a greased casserole dish. Season with salt and pepper. Sprinkle more cheese on top and bake at 350 for about 20-30 minutes. Enjoy!
*Just a note, the ingredient amounts are approximate, I never measure. You can also add extra fresh mushrooms if you like them.
