Yes I do it...but if using beets, I also add raspberries and/or cherries to sweeten it naturally.
We've gone to a diet of no artificial colors, flavors, or preservatives. This takes food coloring out of the equation. I've been looking at blogs and pinterest and I see that you can do it using other foods. My question is: Does the icing (or whatever) take the taste of the coloring or no? One lady used beetroot to make pink and all I thought was "ew!" Just curious. Having fun learning to live healthy!

I have done it, and I didn't notice any taste. No one else mentioned it. Hopefully, they weren't just being nice!! After making it once, I just bought natural coloring the second time. I don't remember the brand, but I bought it at Whole Foods.
The colors are more muted then the unnaturally bright artificial colorings. I love it, but it won't really work if you want very vibrant colors.
The things I have tried did affect the flavor (but that could have been because it was more of an experiment and we weren't following a recipe). Turmeric can be used to make rice yellow. Mustard powder is used to make pickles yellow. Red rose petals turn green when cooked but tasted very strong (we figured this out by accident).
I never have, but beets are sweet when you boil them, so I'm sure using beet juice would not mess up icing.... and the water does turn quite red.
