I can't help you with the cookbook, but a good friend of mine who is a high muckety-muck at Mannkind just told me that they're about to receive FDA clearance for they're inhalable insulin product. In other words -- no shots, no pumps, no pain. Also, their clinical trials indicate that it crosses into blood faster and more completely than shots given into a large muscle.
Also, I assume your father has Type II diabetes, given it's late onset. A typical component of this is glucose resistance, rather than nonproduction of insulin (as in Type I). Metformin is standard of care for improving glucose resistance, but eating 1/2 tsp of cinnamon/day has also been shown to improve glucose resistance considerably. I don't recommend that your dad stop taking metformin (if he's on it) and eat cinnamon instead, but including it in his diet could help. This is something he should discuss with his doctor.
I hope all goes well with your father. Controlling diabetes is extremely important as uncontrolled diabetes can lead to cardiovascular disease, neuropathy of the hands and feet, gangrene, and blindness, among other things.
