There is a great bakery in richardaon called Sugarless Delite, everything they bake is good. Sugar free cakes are tricky, i never have luck getting them right.

Frankly, the cake mixes have very little sugar but lots of carbs which is true of any cake....try Whole Foods, Northlake Health or Central Market for Red Mill mixes - sugar and gluten free if memory serves and are very good. I have lots of recipes but you don't have the time - when my type 1 daughter was younger and on injections instead of pump I used fructose instead of sugar as it does not raise blood glucose levels but still must be counted as a carb.....good luck!

Making a completely sugar free cake can be tricky. Sugar substitutes don't bake well on their own. Splenda.com has some recipes on there she can look at. My MIL is diabetic. I make her the chocolate cake recipe on the back of the hershey cocoa box. I make it 1/2 cup of it sugar, 1 1/2 c splenda. It bakes pretty well, is still moist and rises. Then we frost it with a frosting made of 8 oz sugar free cool whip, 3.5 oz sugar free pudding and 1 c. milk. There are obviously till carbs and sugar...but not nearly the amount of a regular cake. HTH.

I know you were wanting a cake but I thought you might be able to do something with the sugar free cake slices at Walmart. You could combine it with sugar free pudding and fat free Cool Whip in a large bowl and make a nice dessert. Or simply glue the slices together with the fat free Cool Whip and make a nice little cake.

This is an easy cake. My best friend is diabetic and seeks pampered chef. We always make one
of these as our sugar free version everytime we have a party. It's called a Diet Coke Cake. If
you use a dark cake mix like chocolate then use a dark diet drink like diet Coke or diet pepsi. If you use a light mix use diet sprite or 7-up. All you do is take one box of cake mix and mix it with one 20oz diet soda. Stick it in the oven on 350 until done. I can't remember the time but I think it's 30 minutes. You can look it up on the Internet. Good luck

I am alergic to cane sugar and beet sugar, leaving me with no choice but to find "sugarless" recipies. I use a granulated sugar substitute that is 100% natural and has no side effects or aftertaste. It is NOT an artificial sweetner, but is derived from a sugar alcohol from the Birch Tree. "Xylitol" is widely used and recommended for diabetics, but not advertised, I learned about it from my allergy doctor. It does not react with yeast, so cannot be used in yeast products, but is used in equal measure as granulated sugar for all other cooking/tabletop use. I have baked with it successfully with no adjustments; and, made various puddings, cookies, custards and sweet breads. Check the internet, there are lots of recipies using Xylitol. It is available at all health food stores, Sprouts and Nutrition Centers. Xylitol is also very good for your teeth as it helps prevent cavities. "Erythritol" is another product that is very similar to Xylitol with a slighly different formulation, but works the same and the taste is exact to that of sugar. Good luck!
