Diabetes and Birthday Cake...

My daughters birthday party is next weekend. We have several family members and friends with diabetes. I was trying to think up a good desert to make for them. In the past I have done a flourless chocolate torte and a cheesecake, both are still fatening, but much lower in carbs than regular birthday cake with frosting. Both were also expensive and quite.labor intensive to make... I was wondering if anyone else had an idea for something yummy that could be a good.alternative to birthday cake?? TIA

My grandma was diabetic and she would have angelfood cake (the fluffy kind,store bought) and strawberries with a dab of cool whip (sugarfree). Or sugarfree jello ,sugarfree cookies,or just fresh fruit salad.Goodluck;0)

It is all about the glycemic index of the various foods.
It is not just "carbs" because there are many different types of carbs.

I would, if I were you, go to the American Diabetes Association website, and look for info there.
Here is the link:

And type in the search words "cake recipes."
And with the cake you make, ALSO include an index card, with the ingredients of the cake, etc., and the servings, and exchanges and glycemic index info on it. And put it next to the cake.

How about an angel food cake? I seem to remember looking that up one time for dessert allowed for diabetics. Check that out. You can buy that and put strawberries on it.

I'm all for non-labor- intensive!!

for a quick & easy "cheat"....just buy the sugar-free/no sugar added readymade cake mix & frosting. Not the best tasting, but easy to do.

So that's my cheat, but here's my all-time fav:
dump a mix of berries/fruit (I use blueberries & crushed pineapple, drained) into the bottom of a sprayed 9x13 glass pan. Dump the above-listed cake mix over the fruit, but add some cinnamon. Pour a can of Diet 7Up over the cake mix. Do NOT stir or mix any of this. Bake at 350 for about 40 minutes or until the topping is golden.

I serve this fruit cobbler with no-sugar-added ice cream....& nobody knows it's a diabetic dessert. The blueberry/pineapple combo is excellent!

Another quickie diabetic dessert: 2 large boxes of sugar-free vanilla pudding...sprinkle the dry mix over a can of crushed pineapple (only 1/2 drained). Add a can of Splenda fruit cocktail, drained. Add some coconut. & let gel in frig for 2 hours or so. Super easy & tasty. The fruit combo can be mixed up to your taste.

One other thought: you could use chocolate or regular graham crackers & make ice cream sandwiches with no-sugar-added ice cream. Yummm.

We did a crustless cheese cake with a fruit compote that could be poured over the cake. It's total cost was around 12.00 and was gotten from the philedelphia website and subbed splenda. Those who are diabetic will make their choice of food. You also could simply offer up sugar free ice cream and go with cake or even an angel food cake(can be made with splenda), Happy birthday to your daughter.

My husband is diabetic so I understand! I don't know if any of my suggestions are a good alternative(nothing beats cake!), but my husband absolutely loves crepes which are low in carbs especially if you sweeten the fruit with Splenda. A cheesecake is a good alternative too-they are easy to make sugar free and I use a nut crust(pecans or hazelnuts) piled high with fruit. You can do stuff like custards or puddings made from scratch-those are really easy and interchangable-if you want chocolate-simply add cocoa, fruit-stir it in, vanilla-same thing!

Diabetes means no sugar and low carbs, you can still have cake just use a sugar substitute.

What about sugar-free gelatin or sugar-free pudding?

Serve a regular cake, but have sugar free ice cream available for the diabetics. They can have a very small piece of the cake.

Fresh fruit is always great this time of year. You could consider making an angel food cake and serving with fresh berries.

Go to whole foods n get the sugar free cake I'm sure they would have frosting. I been doing a lot of sugar free dairy free gluten free foods. They have some at Vince n joes too. Good luck

TRY THIS....I make this all the time for me and my girlfriend...

3, 2, 1 CAKE

These individual little cakes are amazing and ready to eat in one minute! They are perfect for whenever you feel like a treat without all the fat and calories that cake can have. Genius idea!

INGREDIENTS:

1 box Angel Food Cake Mix
1 box Cake Mix - Any Flavor

DIRECTIONS:

In a Ziploc bag, combine the two cake mixes together and mix well. For each individual cake serving, take out 3 Tablespoons of the cake mix combination and mix it with 2 Tablespoons of water in a small microwave-safe container. Microwave on high for 1 minute, and you have your own instant individual little cake!

KEEP remaining cake mixture stored in the Ziploc bag and use whenever you feel like a treat! You can top each cake with a dollop of fat free whipped topping and/or some fresh fruit.

Helpful Tips:

This recipe is called 3, 2, 1 Cake because all you need to remember is

3 tablespoons mix,
2 tablespoons water,
1 minute in the microwave!

TRY various flavors of cake mix like carrot, red velvet, pineapple, lemon, orange, etc. Just remember that one of the mixes has to be the angel food mix; the other is your choice.

The flavor possibilities are endless!

NOTES:

The best thing is that you open both cake mixes into a gallon storage bag, one that 'zip locks' or 'self-seals', or a container that seals tightly, shake the two cake mixes to blend and then make the recipe. Storage of mix is simple, put it on a shelf. No need to refrigerate, since the mix is dry.

Always remember, that one of the cake mixes MUST be Angel Food. The other can be any flavor. The Angel Food is the cake mix that has the eggs whites in it. So, if, anyone is allergic to egg whites, you can NOT SERVE them this recipe.

Write the recipe on the bag or write it on a small index card and drop it into the bag for later reference. Also a good idea if you have kids that want a snack, but you don't want to bake a whole cake.

These little cakes can be served with a dollop of fat-free Cool-Whip and/or fresh fruit such as strawberries or peaches. This would also be good served with fat-free/sugar free Jell-O Pudding in those small Jell-O cups.

This would make a nice gift to give to someone who needs a little help in the kitchen for whatever reason.

You might look around to see what small containers you might have. The first thing that comes to my mind is a sturdy micro-wave pudding cup; or a small measuring cup. Of course, you can make more than one at a time if you wish. The toppings you add can be endless. Hope this is helpful...

I'm not diabetic, but I do follow weight watchers. Lower point items are always desired. For a dessert for fourth of July, we did a layered jello cake, but used sugar free jello.

Start with a Graham cracker crust, then add 1 packet of sugar free jello with 3/4 cup of boiling water. Stir until melted, then add in 1/2 cup of ice. Pour over the crust and let sit in the refrigerator for 10 minutes. Measure 1 cup of cool whip.and spread that over the jello. Mix another flavor of jello the same way as before and pour over the cool whip. Refrigerate for 2 hours or so then serve!
