What to and How to Cook with Fresh Rosemary Sprigs?

I was just wondering how to cook with fresh Rosemary sprigs and what I could cook it with. I had some left over from a meal I decided to try out that I saw online...but now I don't know what to do with it! I'm trying to get back into cooking since my divorce two years ago...and I am trying to use fresh herbs and spices but don't have a clue what to use them with. Any suggestions?

My favorite way to use rosemary is to stuff it into the carcass of a whole chicken before roasting it. You could also stick it under the skin or just sticking up from the legs and wings. It's nice to stuff a chicken with fresh herbs like this and also some onion and lemon wedges. Simplyrecipes.com has some great recipes that utilize fresh herbs. You can go to their website and and type 'fresh rosemary' into their search box at the top right corner of the page and all their recipes will come up.
Fresh rosemary is also very nice with potatoes. You cut up some potatoes and toss them with olive oil. Add some fresh garlic you chop or mince and then seal it all up in some foil with the sprigs of rosemary and put it in the oven on about 350 for about an hour and that's yummy, too.
I find that when using the fresh sprigs I keep them whole. When using dried rosemary I use a mortal and pestle to grind them up more finely and find this is more 'user and eater friendly'.
It's pretty hard to find a recipe on the above website that isn't great. Have fun!

There's a rosemary, mint, cucumber, lime water as well that's super yummy. Just add water to a pitcher. drop in the above, and let sit for a few hours). I occasionally do a bunch of different flavored waters, and this is one of them. You can add in peppercorns and strawberries as well for a kind of spicy one.

you can drop the whole sprig in soups, just remove before using. Otherwise, strip the leaves off the stem and mince. Breaking the leaves up releases the oils and flavors. Great in pasta sauce with oregeno thyme and basil. great on chicken. Roll the chicken in olive oil and sprinkle on fresh rosemary then bake in the oven. Roasted potatoes are great with a olive oil rosemary garlic and rosted in the oven. Roasting also works great on cut zuchini

Olive oil with garlic, rosemary & some red pepper flakes! Sautée with asparagus or green beans!! Then sprinkle with parm cheese!! Just pull rosemary off after washing & dice up! Can roast on red potatoes too!! I love rosemary! You can also add some to any Italian dishes-gives it a great flavor! Marinate with chicken- yum I could keep going!!

I use rosemary in soups, on pork, lamb and chicken. Just strip off the leaves and sprinkle over the food while cooking.

Steep some rosemary in 1/2 cup olive oil on low heat for 10 min. Discard the rosemary. Drizzle the flavored oil over flatbread spread with goat cheese mixed with chopped up red grapes and some fresh rosemary. Sprinkle with salt and serve with some white wine. Delish!
