Hi! don't we all struggle with this topic! I have an idea for you! Calzones: I use pizza crust (in can by biscuits) cut it in half and put whatever i want on it. I have used ham and cheese, pizza sauce and peperoni..anything will work. I unroll half of the crust, place items on it, unroll other half and place it on top. Pinch edges. i place it on a cookie sheet and bake in oven..usually 350-375 for about 15-20 minutes..you'll start to learn how long it takes for different ingrediants. I make this almost weekly and just find new things to place in it!
Hope this helps!

Rachel Ray's 30 Minute Meals on the food Network is great! Also, something really simple, but a little healthy is a can of chicken, shells and cheese and either broccoli, or peas, tomoatos, etc. Crush some corn flakes bake for 10 minutes and sprinkle with cheese, it is a good caserole. Also, Chicken and cheese enchiladas with spanish rice, you can get the microwave in pouch spanish rice, tortillas, enchilada sauce cheese and canned chicken again. mix half the sauce with the chicken and cheese, spray a pan with pam, roll chicken cheese mix in tortilla, place in pan, cover with sauce and sprinkle with cheese, bake at 350 for about 15 minutes till sauce and cheese bubbles. To keep from drying cover with tin foil depending on how you like your enchiladas. You can also make it spicer, etc.

Good luck!

My girls are 18 months apart (2-1/2 & 1) and I use most of Rachael Rays 30 minute meal recipes. It may take more than 30 mins, b/c I have to pick up one the girls, but for the most part I can get dinner ready pretty fast. Just go to foodtv.com and you can get all of her recipes. I recommend the mini meatloaves, pork tenerloin and the london broil. Good luck!

I have the same problem- I get home from work late sometimes, and it puts a serious crunch on giving a healthy meal. But here are a couple of ideas-
Spoon Tacos: You buy bite size Tostitos and crunch the up small on a plate. Fry up your taco meat and put that on top and all of your "fixings". It eliminates a lot of the mess from kids eating tacos, and it only takes about 15-20 min. to make. Also, Hormel makes prepared meat selections. I always buy the meat tips one. You make some egg noodles, throw this tray in the microwave, stir in some sour cream and you have a really good Beef Stroganoff! Another "quickie"! Hope this helps.

You might want to consider picking up a crock pot. I have been doing that lately and its wonderful because you come home and its ready. I prepare the food in the crock pot the night before (after the kids are asleep or they help sometimes) and then put it in the fridge. When I get up I put it on and when I come home, viola, its ready. I got the the 5 quart one and it automatically turns to warmer when the alloted time is up. I believe I paid $25 for it. It came with a receipe book, but there are additional receipes online. See below
