Chili Recipes for the Crockpot

Do you have any crock pot chili recipes that you have made and liked? Preferably something your kids have liked as well. I can look up recipes on line, but don't know anyone who has actually tried them. We actually still have pretty nice weather here, but I can tell it is cooling down so chili would be yummy on a cold day. Thanks!

I use two Crockpots for my chili--one for meat and one for beans. The key to the good flavoring in my cooking is that I cook and season everything separately. I cook the onion and garlic and pepper on the stove before combining with the meat. When they (meat and beans) are ready individually, then I combine them.

I have a chili recipe that I love and my kids love as well -- I just make sure to have oyster crackers for them and they have fun with that. I got this recipe from a magazine a few years ago....

~1lb ground beef (I use a little bit more) or turkey
1 pkt taco seasoning
1 pkt ranch dressing mix
2 cans diced tomatoes
2 cans corn
1 can rotel (tomato/peppers mix)
4 cans of beans (you choose; I usually do 2 black, 1 kidney, 1 garbanzo)
Sour cream & cheddar cheese (optional toppings)

Brown the meat, drain, then add to crock. Sprinkle the packets of seasoning over the meat. Then rinse & drain all beans, add to pot. Add tomatoes and corn without draining. Cook on low 8-10hrs (I think you could even do 6hrs and it would be fine)

We add a little sour cream to our bowl and it is yummy. Left overs can be used in tortillas as burritos, and this also freezes well. (Just beware, if you freeze and have used medium or hot rotel, it gets much hotter after freezing). We live in the same area and I've already made this once! Good luck! Making me want it tonight!

As long as you brown the meat first (in another pan), I think every chili can be made in a crock pot.

I don't have a chili recipe but I just made a tortilla soup in the crockpot last night. It was very good. My hubby n son loved it and asked if I could make it again sometime. Here's the website for the tortilla soup recipe. I believe she has a chili recipe on there too. And I love that she gives a verdict on her recipes.

Note: the fresh veggies I used, for the tortilla soup were; green bell pepper, carrots, and celery. I used whole canned tomatoes, but next time I'll be using crushed or chunky. I omitted the crushed red peppers and just added them to my soup when done so that it didn't come out too spicy for my son. Instead of tortilla strips I just crushed a few into the soup bowl. And I don't think I'll be using the sour cream again either. In my opinion, it did nothing for the soup. I may try roasting fresh corn on the cob next time too. I think the roasting will it give it that extra Uhmph. I couldn't find frozen roasted corn as suggested in the recipe.

My daughter (6) likes McCormick's mild chili. I just follow the recipe on the package!

I use tomato sauce (I don't like diced or chunk tomatoes) and I brown the ground beef on the stove. Then I throw everything in the crock pot on low for a few hours.

i'm not going to pull out the whole recipe unless you pm me, but i hate chunky tomatoes so when my mom was little she would puree the tomatoes and i stll love it like that sooooo good.

I use the McCormick crockpot chili seasoning packet and follow that recipe . Sometimes using whatever beans i have on hand....we eat it with corn chips, cheese n sour cream.

I have been using this recipe from www.allrecipes.com. Just go to the website and type in "It's chili by George" and it should come up." It can be made on the stove top or in a slow cooker. Enjoy :)
