Ok, so we go to Costco and get the huge packs of chicken breasts (the ones that come in packs of 2). It's the perfect amount for our small family, and I usually only cook 1 packet of 2 at a time. Thing is, with so many I am getting sick of my usual recipes.
I was hoping you all could share some of your favorite....boneless, skinless...chicken breast recipes. =)

Lemon pepper, teriyaki, rosemary, shake n bake, and bbq on the grill.
Wow! Thank you so much everyone. I do occasional tacos/fajitas. I love that we get it at a good price, and even with cooking just 2 breasts we have a half or so left over (usually my lunch the next day), so I don't have to do a ton of cooking (except my BF is picky, but what he doesn't know wont hurt him). I was definately burned out on it this week. So as a trade off we grilled carne asada tonight. =) In a few days it's back to chicken and I am definately going to try the things mentioned here, can't wait! Thanks again everyone!

My husband made these the other night and it was SO yummy:
Cut up chicken breasts into bite sized pieces and pan-fry. Cook cauliflower, broccoli, carrots and onion (also in bite sized pieces) separately. Combine veggies and chicken in one pan and add one can of cream of chicken soup (or two, depending on quanitity). Serve over biscuits.
It's kinda like an inside-out chicken pot pie.

My kids love "crunchy chicken" Dip the chicken into a mix of light mayo and lemon zest, and lemon juice and then into crushed up corn flakes. Bake until they are golden and crispy. My hubs and I eat them over greens. The kids like to dip in ranch and/or BBQ.

How about:
White Bean Chicken Chilli (McCormick packet, chicken and white beans.)
Taco/Fajita Chicken (Breasts and taco seasoning with some water.)
Tomato Basil Pesto Chicken (add a can or two of tomatoes & stock.)
They can all be done in the crock pot on high for 4 hours or low for 6-8.
Of course there's always the fall back ideas, chicken parm, chicken broccoli alfredo, chinese chicken and broccoli. All very easy to make. You can look up recipes online to suit your tastes and cooking ability.

Homemade chicken tenders/nuggets
Cut the breast into strips (or bite size pieces if you want nuggets)
Coat with bbq or honey mustard sauce
Roll in your favorite bread crumbs (Panko crumbs are AWESOME for this)
Pan fry in a SMALL amount of oil Or bake
Look on some manufacturer websites. Campells' and Kraftfoods are some of my favorites. Kraft has a TON of fabulous chicken recipes.
Look in the marinade section in the grocery store. There are a ton of great dry and liquid mixes. I throw mine in a Ziploc bag, throw in about a half a cup to a cup of marinade, squeeze all the air out and throw it in the fridge all day. I like the bag as opposed to a container because you use less marinade and it seems to work better. Then you can cook the chicken however you want.

chicken alfredo buy alfredo noodles for 1.00 and sauce for 1.50 and add your chicken feeds a family of 4 with leftovers for eveyone for lunch. chicken enchiladas shredded cheese 1.28 boil and shred chicken, add mild green enchilada sauce for 1.00 back and top with lettuce, tomato, onions, and sour creeam. chicken sphgetti instead of beed add chicken, sweet chicken strips with instant potatos and mac and cheese buy plain captain crunch cereal crush, have egg mixture cut chicken into strips and do egg wash then cereal and bake. Boneless chicke wings dredge in flour only that is seasoning with pepper, salt, garlic powder, paprika, let sit in fridge for 20 minutes, fry for 10 minutes and then take out put in wing sauce and serve with fries.

I make spicy chicken.
Cut your chicken breast into bite size pieces.
Then add paprika, soy sauce, salt, pepper, and hot sauce to marinate in.
Then i cook it in a pan of oil until cooked through.
We will eat this with potatoes and a veggie or i will add my chicken to some terraki noodles and add broccoli and eat it all together. This is my husbands fav. We eat this at least once a week:)

blackened - smear with melted butter and coat in blackening spices. Sear on both sides in a screaming hot skillet. then put them in the oven to finish cooking the rest of the way.
sprinkle with .....
cajun seasoning
Italian seasoning
cumin
paprika
curry powder
montreal steak
or
garlic pepper
or any combo of the above and either bbq, pan fry or oven roast.
sprinkle with salt, pepper, and garlic and bake in the oven. Smear with bbq sauce 10 mintues before it's ready. You can turn on broiler for a minute to get a nice crust.

I marinade mine like this
low sodium soy sauce
honey
juice of one lemon
garlic powder, or fresh garlic, whichever you prefer
now I don't have my recipe with me, but probably like 1/2 cup of soy sauce and a few tablespoons of honey mixed with the garlic and lemon. Just mix it all together and add more honey if needed. Taste it to make sure it's not too salty. I marinade mine all day and then grill it up, it is delicious and everyone raves about it. It is also good to slice up for fajitas.

I have two boneless, skinless chicken breasts cooking in the oven right now!!! I sprinkled them liberally with Spike seasoning, seared them in a frying pan, then tossed them in a covered Pyrex in the oven. Gonna make fresh mashed potatoes and a veggie.
I sometimes make a wok of what I call "simple chicken" -
sliced onions, fresh garlic, and cubed chicken breast cooked in the wok with a little olive, salt and pepper - deglaze the wok and serve over rice. From this mixture I make other chicken things - Curry, white chili, tacos, pad thai, or just toss more veggies into the wok and make a larger stir fry.

How about chicken stuffing casserole? I boil the chicken in one pot and make turkey stuffing in another pot. When chicken is fully cooked, I start to shread it in piecies ( make sure it's cooled down a bit ) :) In a pan or large bowl I mix chicken and stuffing. Serve the mix on a plate and then add warm chicken condensed soup on top, as a gravy. Sometimes I add veggies on the side and or add corn to the mix. A yummy comfort food :)

Pour some salsa on top and bake. Slice or shred for tacos or fajitas.
Bread with crushed Cheeze-it crackers and bake.
Cut into strips and bake in foil pouches with sliced peppers and onions.
Cook ahead, shred, and roll up in refridg. crescent rolls with cheese.

Last night I:
drizzled a little olive oil on a baking pan
placed 2 frozen chicken breasts on the pan
sprinkled a little crushed garlic and lemon pepper onto the chicken
drizzled the chicken generously with honey mustard salad dressing
baked for an hour at 375 degrees.
We ate it with a romaine lettuce salad with raspberry vinaigrette. It was a really good combination with the honey mustard chicken.
Sometimes I will sprinkle crushed chips or fried onions or crackers on top of the chicken during the last 5 minutes of cooking.

Its funny because I'm makin chicken breast for dinner tonight. Lol. What is sometimes do is season it up really nicely, cut up some red pepper, green pepper and onion and, put it on top of each piece of chicken and put it in the oven. When its almost done, I put bbq sauce or spaghetti sauace on top and sprinkle shredded mozarella on top. Try that. You and your family might like it. :)

Buy some Grillmates Cinnamon Chipotle rub for meat. Rub it on the chicken and grill. It is delicious as a sandwich or over a salad. It's sweet and spicy at the same time.

Instead of shake and bake, have you tried Kraft Oven Fry for chicken? It's delicious. Makes my mouth water just opening the bag when I smell it cause I know it tastes so good and it comes out crispy!!

I too am sick of all the chicken things we make, so I understand. I made something recently that I loved, my husband loved, my daughter (8) liked a little and my son (6) hated. But you never know. Watch the red pepper for the spice (you could probably avoid it). Also, I have started to purchase the tenderloins from Costco. These are also white meat, but amazingly really tender. The receipt below was intended for Shrimp (which it still says in the recipe) but I did it with chicken. Good luck.
Try going to www.pioneerwoman.com. Her recipes are so easy and delicious. One of my favorites is the cajun chicken pasta. My husband LOVES it too. Good luck.

One of my favorite recipes is:
3-4 Tbsp. Olive oil
2 cloves fresh, crushed garlic
1 tsp. lemon pepper
2 tsp. Italian seasoning
Combine all ingredients and pour over chicken in bag and seal, let marinate in refrigerator for 1 hour or less, then grill. We use this chicken for Cesar Salad Wraps. After you grill (we use the George Foreman or bbq grill), you let the meat rest, then slice. Add to romaine lettuce, parmesan cheese, and Kraft Italian Caeser or I use Zesty Italian fat free. Toss salad and chicken together and roll in flour tortillas.

Chicken strips
cut the chicken into strips
get some bread crumbs(i use italian bread crumbs)
1 or 2 eggs(add a drop of milk and mix like your making scrambled eggs)
fill a pan with oil only do about a finger tip maybe like 1/2-1 inch( i use canola oil and about half an inch)
heat oil once the chicken is cut
dip the chicken into egg
put the bread crumbs on a plate and dip the chicken that you dipped into the egg into the bread crumbs (set aside on another plate its easier to fry them all at once or the amount that will fit in your pan)
once all of the chicken has bread crumbs on them and the oil is hot(you dont want it popping of coarse) put all of the chicken in and give it about 3-5 min or however you think is good then flip it and do the same to the other side but you dont want to keep flipping it....once there done make sure both sides are a light golden brown and make sure your chickens done lol
once i take the chicken out of the oil i get a plate and put a few napkins on the plate so when i set the chicken on it its not so oily!
you can do chicken enchiladas ( i find it works best from chicken in a crock pot it shreds a lot easier)
ummm spray the pan with PAM and lightly cook/brown chicken in a pan with a little garlic salt and pepper
get a baking dish( i use a small pyrex one) and 1 can of cream of mushroom soup put a little soup on the bottom then the rest of the can on top and half can of milk(not canned milk but pour milk into the can) or 1 can(i forget it says on the back of the can like your making soup) cut washed fresh mushrooms into thin slices and put ontop or mix in with the chicken if you love cheese like i do add shreaded cheese to the top put it on 300-325 and about 10-15 min just so the cheese and mushrooms are cooked you can cover it if you want with foil i do and then the last 10 min i take it off and let it cook without foil.... you can serve as is or over rice or noodles

Throw a couple of breasts in the crockpot. Sprinkle with taco seasoning. Add a cup of salsa and can of black beans and a can of cream of mushroom soup. Let cook 4-8 hours. I usually do 8, but I cook a bigger batch. Yours may be done in 4. When done, pull chicken apart and mix it all up. Stuff it in a tortilla or serve over rice. Yummy! and easy!

Our favorite:
Cheesy Chicken & Rice
1 can Cream of Chicken condensed soup
1 cup water
3/4 cup uncooked regular (not instant) rice
4 boneless, skinless chicken breasts
shredded cheddar cheese (we use about 1 cup)
Preheat oven to 375 degrees. Combine soup, water and rice in 13x9 pan. Place chicken breasts on to rice mixture- sprinkle with salt, pepper & paprika if desired. Bake covered in foil at 375 for approx. 40 minutes. Remove from oven. Cover chicken in shredded cheddar cheese and bake for about 5 minutes more.

You've gotten some great suggestions below. I just wanted to give you a quick tip that I recently learned in a cooking class ... When you are making stews or long-cooking soups with chicken, don't use breast meat, which will only dry out and harden after a certain point. Rather, you should use dark meat (thighs, legs) for recipes where the chicken cooks/simmers for an extended amount of time. Dark meat tends to soften up the longer you cook it, while white meat gets firmer/drier. Best wishes.
Super easy italian:
Sautee chicken breasts with onions, garlic and mushrooms in olive oil
add italian spices
add 1 large can of tomatoes
cook on low heat about 20 min
Chicken bakes:
start with cooked chicken
Option 1:
make sauce with cream of chicken soup and mayo (can substitute sour cream or all soup for mayo) and your choice of spices (I like to add a little curry and garlic, maybe some cooking wine)
pour sauce on chicken & broccoli
top with cheddar cheese
bake
Option 2:
make sauce with cream of mushroom soup and sour cream
pour over chicken
add stove top stuffing on the top (it is better if you make the stuffing rather than put it on dry)

Ranch Chicken
1 bowl of ranch (enough to coat both breasts)
1 tblsp of flour
Mix Flour and Ranch dressing. Dip the chicken in the dressing, make sure to coat it really well. I sprinkle a dab of cheese on top as well. Cook in over at 350 until done
Cream Cheese Salsa Chicken
1 pkg cream cheese (I use the neufenblahblahblah since it's less fat)
1 small jar of Pace Picante Sauce (I've used others and it honestly tastes best with Pace Mild Sauce)
Beat chicken breasts to kind of flatten them out. I put a chunk of the cream cheese in the middle and then roll up the chicken breast. Pour salsa over chicken and bake at 350 until done.

Ok, maybe it's not suuuuper healthy but I have 2 no-brainers that my family loves.
1, Beat the breasts flat with a mallet (about 1/2 thick or thinner). I do it in a heavy duty ziploc bag to keep the mess under control. Dip the breasts in beaten egg, then dredge in a mixture of 50% bread crumbs and 50% flour, salt and pepper to taste. In a large skillet on med-hi heat melt 1/2 to 1 stick butter. (not margerine... it makes the chicken soggy) cook chicken about 5 minutes each side til golden brown outside, tender inside. YUM. I sometimes serve with gravy and mashed potatoes, or top it with a little marinara and parmesan if I use italian style bread crumbs, and serve w/ veggies or pasta.
#2 is a no brainer casserole. Bake 3-4 chicken breasts til cooked through, cut into cubes. Stir together 1 can undiluted cream of chicken soup, 8 oz of sour cream, chicken, 1 tbs. poppy seeds. spread in a casserole dish, (7 x 11 or 9 x 13). Melt 1/2 stick butter, crush one sleeve (about 40) ritz crackers or other similar "buttery" cracker, stir into butter. Spread crumb topping over casserole and bake at 350 for about 35-40 minutes til bubbly hot and crumbs are nice and crispy.
