Once apon a time, I thought I would save money by making candy for everyone for Christmas instead of buying a bunch of commercial gifts. This was about 17 years ago. It was VERY expensive as I recall, but a personal touch that everyone enjoyed. One of the candies was very good, and I have never been able to find a recipe again. I wonder if anyone out there knows it. It was corn flake clusters. It had butterscotch drops, melted, mixed with peanut butter and butter and that might be all. Pour in the corn flakes, stir it up, and drop handfuls onto a plate to cool and dry. It was soooo good. Does anyone out there know this recipe? quantities? other ingredients I may have forgotten? Thank you

These are the ones I've had. You could also use Special K cereal.

Butterscotch-Peanut Butter Cornflake Cookies

Ingredients:

6 ounces butterscotch chips

1/2 cup smooth peanut butter

3 cups cornflakes

Method

In a heavy-bottomed sauce pan over low heat melt butterscotch chips. Stir constantly and watch heat. When chips are melted and smooth, remove from heat and add peanut butter. Stir until peanut butter is incorporated. Fold in cornflakes. Drop by tablespoonful onto parchment lined baking pans (jellyroll pan). Refrigerate until firm. Transfer cookies to covered containers and store in refrigerator.

Yield: 4 dozen
