So What Happened?

Thanks to everyone for the responses...the candied yams were great..according to my family. Funny thing is I don't even really like them..lol!!!

There are tons of recipes on there, and it is free to sign up, so you don't have to pay a membership fee or anything like that. I use it all the time and love it!

Drain off Most all Juice in caned onces...

Then add some of those oranges and some crused pineapples in it.. add a bit of the juice from the oranges... and duh.. the pineapple... that is fine!!!! it is crushed anyway....

Sprinkly a bit of brown surgar just a hand full

then ya ready!!!!!!

Adddddd some Coconut and pecans or walnuts... Yummmy and thennnnnnnnnn

Carmalssssssssssssssssssssssssssss add a ton hear and their..... ok.. add about 5 or 6... then about half way add a few more so they are alll melted when done and also adddd

YAM BAKE

1 20 oz can pineapple slices or crushed pineapple
2 17 oz cans Yams (drained) I never drained mine as
if makes the yams dry
1/4 Cup Flour
3 Tablespoons Brown Sugar
1/2 Teaspoon Cinnamon
1/8 Teaspoon Salt
3 Tablespoons margarine
1/4 Cup Chopped Nuts (I used pecans)
1 Cup Minature Marshmellows or 10 large marshmellows or
how ever many you want to use. I usually covered the
top.

Drain Pineapple, reserving 1/4 cup of syrup. Line sides of 10" X 6" baking dish with pinapple slightly overlapping edges or if using crushed pinapple just cover the bottom of pan. Arrange Yams in pan. Pour Pineapple Syrup over yams. Combine Flour, Brown Sugar, Cinnamon and Salt. Cut in Margarine until mixture resembles coarse crumbs then stir in Nuts. Sprinkle over yams. Bake in 350 degree oven for 25 minutes. Top with Marshmellows and broil until top is lightly browned.

First of all, sweet potatoes are just plain tough. So, first of all you want to boil them to soften them up. Just enough to be able to peel easily and slice lenthwise, into pieces about as big around as 1-2 fingers.
Place the strips into a large baking pan. Dot with margarine, drizzle with corn syrup, sprinkle with white sugar.
Bake in slow oven, turning occassionally with a pancake spatula. You can add more margarine, sugar and syrup to taste. Potatoes should become a dark orange. I would guess that I cook a batch at 250 for about 2-3 hours, turning every 30 minutes or so. Turn gently so as not to smush.

My grandmother made her sweet potatoes this way and started us on them. She eventually went to squash and pumpkin, prepared the same way, and was able to get us to eat it like that.

Once the potatoes cool, the syrup mixture may harden. Simply turn a stove burner on low, and allow it to heat the syrup until you can lift out with the pancake spatula.

This is how my family has always done it:

Take 3-4 good sized sweet potatos, peel and slice (regular slices not cubes or anything like that - unless you want them that way. However, if you cube, it takes longer to cook.)
Rinse off and put in a large skillet. Don't dry them off as you will need to water to help with the cooking Turn skillet on medium then add 1 cup sugar and 1 cup brown sugar, half a stick of butter (sliced), 1 tablespoon vanilla extract, sprinkle cinnamon and nutmeg on top. Put the lid on and simmer until the potatos are tender. There is no set time because my family always goes by looks, tenderness and taste! You can try them as they are getting tender and if you think they need to be slightly sweeter, add more brown sugar.

Obviously this is not a low-fat recipe. When I decide to make it a little healthier, I will share that one with you. =)

I don't have a recipe for you, but I just wanted to know if you have ever heard of Taste of Home magazine? If you love to cook like me, it is great. I look forward to getting it the mail every month and I save all the issues. Every recipe I have made from it has turned out wonderful. (You can also go on Tasteofhome.com) I also order Simple and Delicious magazine (it is from the same people) and they have great simple recipes that take 30 min or less to prepare. You should check it out.

I buy a large can of yams drain the liquid into a cup and add my B. surgar and some cinnamin(sp) to the liquid. I put the yams in a backing dish then pour the liquid onto it then slice some butter and lay it on top. I bake it till the lquid is bubbling then I add marshmellows and bake until lightly browned.

Hello!
Here is the recipe my family has used for years....
bake however many sweet potatoes/yams you want, 3-4 can feed a family.
slice them and scoop out the inside
mash this up adding a little orange juice...not much just enough to help mush um up!
spinkle on brown sugar according to your tastes(sample itif need be)I like to add about 1/2 cup or more(Im a sweet tooth)Then just a little nutmeg and ginger not much these are strong spice.
smear this into a baking dish
warm it up in the oven about 15 minutes
top with mini marshmellow in the last couple minutes to lightly brown them
I love this with Turkey and ham...cant remember a Turkey day without it!

I have a very easy, fattening, super yummy recipe, but it takes a little while in the oven. Preheat oven to 400. Cube 2-3 sweet potatoes (about 1 inch cubes) and place in a single layer in a pan. Melt 1/2 cup of butter (1 stick) and pour over the sweet potatoes. Sprinkle about a cup of brown sugar over the sweet potatoes. You can also sprinkle a 1/2 cup of pecan pieces, if you like. Bake for about 45 minutes, or until the potatoes or soft. Hope you enjoy it!

Hi L.,
What we always do is get a can of yams, big ones, or use fresh ones that have been boiled until fork tender. Cut them up and place them in a pan, cut up butter and place it over the yams. Sprinkle with brown sugar and cook in the oven at 350 until juice is bubbly. Take out of oven, switch oven to broil, top the yams with miniature or full sized marshmallows and then put in the oven under the broiler. Keep a close eye on them because if you don't the marshmallows will burn!

well, I love them many ways. You can boil fresh yams, peel them, slice them and make a pan of the sauce using butter, brown sugar, nutmeg and cinnamon. put them in a pan and pour the sauce over them and you can even put marshmellows on top, or pineapple, or nothing. I like them baked, the easest, put the butter and brown sugar on when they're done. I'm gonna get my brothers recipe, his are the bomb.

Like you, I do not care for yams (candied or otherwise), but I have a recipe my family loves.

You can use canned or fresh yams (if you use fresh boil them until they are starting to get soft, cool, peel and cut into cubes. About 4-5 yams) If I used canned I use 2 LARGE cans

Place the yams into a 9 X 13 baking dish. Pour 1/2 cup orange juice into the bottom of the pan. Slice butter (I use 3/4 - 1 whole stick) over yams. Sprinkle brown sugar over yams and butter(about 1/2 - 3/4 cups). Then cover with mini marshmallows. Bake for 1/2 hour at 350 on middle rack.
I have never eaten them, but my family fights over them.

I make mashed sweet potatos. Make them just like you make regular mashed potatos. Boil the sweet potatos first then, peel the skins off, put them in the bowl with butter, a little milk and brown sugar to your taste. Then I put a few mini marshmellow's the mixture, then place in a baking dish cover with the rest of the marshmellow's until then are melted or start to turn bronw. Even my kids love them. Have fun!!
