Recipes for Canned Sweet Potatoes

I'm hosting a little Thanksgiving get together for the holidays this year. I've already got a turkey and ham that I'm cooking but I've had some canned sweet potatoes sitting in the pantry that I'd like to use. Does anyone have a good recipe for canned sweet potatoes? My husband is the creative cook in our household but I want to do this by myself :), but I'm more of a by-the-book...got to have the recipe in front of me kind of cook..lol.

I have seven children and they have been raised on this sweet potato casserole recipe! The secret ingredient is the vanilla!

6 cups sweet potatoes
1 cup milk
4 eggs
1 cup sugar
1 stick butter
2 tsp. salt
2 tsp. vanilla

Just combine all ingredients and pour into a greased 3 quart casserole.

Topping:

1/2 stick butter
1 cup pecans
1 cup brown sugar
1/2 cup flour

Cut in flour and butter together. Add sugar and pecans. Bake @ 400 degrees for 30-40 minutes. Enjoy!!!

Drain the liquid from the can into a bowl. Add about 3/4 c of brown sugar and stir to dissolve. Put sweet potatoes in a baking dish and pour liquid over the top...keep stirring until it's all poured out.
Bake till hot. Layer mini marshmallows over the top and cook about 3-5 more minutes until slightly puffy and browned on edges.

candied sweet potatoes

drain liquid from sweet potatoes
melt 3-4 Tblsp butter in baking dish
add 1/2 c brown sugar to baking dish and add to butter
add 1/4 tsp cinnamon
dash nutmeg (alternatively, add 1/8 tsp cayenne pepper for some kick)
stir butter/sugar mixture together
add sweet potatoes and toss in butter mixture
roast uncovered at 350 for 25 minutes

This may not be exactly what you're looking for, but I love to make sweet potato pancakes with canned sweet potatoes. Mash a small can of sweet potatoes, add 2c of your favorite pancake mix (I usually use Aunt Jemima buttermilk pancake mix). Add 1T brown sugar, 1t cinnamon and 1/2t ginger. Mix all together and add water until the batter is pancake consistency. Grease your pan well and cook pancakes according to box (will take a little longer to cook because of high moisture content of sweet potatoes). These are so good plain, with butter and powdered sugar, or with the traditional butter and syrup.

Add a little milk (rice or cow), 1 egg, 1/4 cup sugar per can. Mix in mixer, pour in casserole dish, cover with plain pecans (or a pecan crush - butter, brown sugar, crushed pecans). Bake covered 350 for 20 min.
If the can potatoes have sugar, be careful when adding it. They are sweet by themselves and can easily get overdone. Kids like marshmellow topping, but I think it gets to be too much.

If you log onto foodnetwork.com, there are several good recipes that use canned sweet potatoes and they are really easy too!
