OK moms. I had posted a post on my mom being diagnosed with Hepatitis C. Well a mommy suggested that while she was on treatment, to eat lots of avocados. Well I cant contact her, so I am asking all the mommy's out there for your avocado recipe's. These need to be easy to make, as there will be days when she doesn't feel good. I don't live near her, and avocado is not something you can prepare ahead of time, and place in the fridge. If you know of any other foods, or recipe's that will help her during this time, PLEASE GIVE TO ME!!! Thanks moms!!!!!!!!!!

Grill chicken breast BBQ,oven,pan what ever
this can go onto a sandwich with any veg that you want exp. tomato,onion, etc. add the hot chicken breast easier if it is sliced with avacado on top can add alpha sprouts if you like them. YUM

This is soooo good and really simple....
mix sliced avocado with pico de gallo...do not mash like guacamole. Serve with townhouse crackers or a favorite chip. It's really yummy!

Oh, boy, a good avocado salad--avocado, mango, cherry/grape tomatoes (whole), cucumber. I season with salt and pepper and sometimes a little garlic. Yum!

don't forget to squeeze lemon onto the avocado so it doesn't turn brown so quickly.

Hi M.,
I guess I did not see the post earlier. If your mom has Hep c she should be taking mega doses of MilkThistle. It is a natural cure for the liver. I know because my son has this and is in the end stage- he has been flooded with milk thistle and other than the prayers that are going up for him and the prayers over the last 8 years- milkthistle has done a great job. Even his dr. is amazed that his enzime count stays down. Try it- I think you will be pleased with the results.

after a run, i love to take tuna (from a can) and place it on a slice (or two) of bread, put some cheese (usually monterey jack or swiss) on top and broil in the oven until the cheese is melted. then i top with sliced avocado, YUM! high protein, quick, easy and delicious. hope this helps you. good luck to you and your mom!

i know you got lots but if you take half of an avacado put a little bit of cheese shrimp and crab meat and bake it it is a meal it is easy you can use frozen shrimp if you want anyway it is very different from the norm and tastes great..good luck

One of our favorite things, is breakfast for dinner! We LOVE breakfast tacos, and they're SO fast and easy.

Scramble some eggs, warm up some tortillas, slice some avocados, heat up some Ore-ida hash browns (or whatever potatoes you prefer), then throw them all together with cheese and a bit of salsa. YUM!

We eat them all of the time in so many ways.
They are great on top of baked potatoes with chopped tomatoes and toasted sesame seeds. Season with salt, pepper and a little lemon.

Add them to any sandwich. They go well with chicken, ham and turkey, add some fresh sunflower sprouts and cucumber.. Or just have a veggie sandwich with avocado, tomatoes, cucumber slices, shredded carrots and lettuce. Top with a vinaigrette dressing of her choice on a seeded roll..

They are great in omelets with sauteed onions, tomatoes, cheddar cheese and a little bacon.

Add to any salad.

She can make cool enchiladas with corn tortillas filled with cheese and avocado and topped with pico de gallo.

Chicken enchiladas topped with guacamole, Corn tortillas, shredded, roasted chicken, topped with guacamole.

They are good topped even on soups.

Avacados are good on sandwiches and burgers. They are easy to make. Also did you know if you make avacado dip and hide the seed inside of the dip, the dip stays fresh for a day or two? This way you can prepare ahead of time and put in fridge.

Creamy Avocado Pasta



3/4 lb pasta, linguini
2 Tbsp olive oil
3 cloves garlic
1 -2 avocados
2 Tbsp lemon juice
salt & pepper
1/2 Cup freshly grated Reggiano
Parmesan cheese
2 Tbsp cream



Cook pasta according to manufacturers instructions. •Peel and stone avocados. Dice and sprinkle lemon juice, salt and pepper over the top and mix gently. •Heat oil in pan, add crushed garlic and sauté until fragrant, about 2-3 minutes. Add avocado mixture and gently stir until very warm but not boiling. Stir in cream and pour over cooked pasta. •Sprinkle Parmesan cheese over the top.

Avocado tacoes are good. I know it sounds weird but, after trying one, I'm a believer! They're also easy to make. Cook a couple of corn tortillas, add thin slices of avocado, tomato (and very thinly sliced onion if you want). Salt & pepper to taste and enjoy! You can also garnish with a LITTLE BIT of cilantro (a little goes a long way especially with avocado), queso fresco crumbles or a dab of sour cream.
Avocado slices added to a cold cuts sandwich add a special level of flavor to an everyday standby too.
I always add avocado to my salads too.
And, of course, there's my absolute favorite snack in the world which is just cutting the avocado in half lengthwise, remove the seed, sprinkle with salt and eat it like ice cream.
If she wants guacamole, all it takes is a little elbow grease or you can toss it into a blender. I don't believe in adding all of those "extras" you see on tv though. (No chopped tomatoes, onions etc.) I don't even put lime or lemon juice in my guacamole because it alters the naturally beautiful flavor of the avocado. I just mash one avocado at a time. If you do prepare a larger batch, toss the seeds in the guacamole to keep it from turning so fast. Keep in mind that, even tho it may turn grayish green on top after storing overnight, it's still good to eat just not as pretty. Just stir real good & enjoy it again with chips.
Avocado & mango is also supposed to be good. Just cut an avocado & mango in same size dice, toss & eat. I haven't tried it so I can't tell you one way or another on that one though but my daughter eats it all the time.

Yummy! Avocado the super food. Here's an easy recipe that stores pretty well. It makes a great lunch or side dish.

Black Bean and Avocado Salad

1 can black beans (rinsed and drained)
1 or 2 avocados (diced)
1 can corn (drained)
1/4 c chopped cilantro
1/4 of a chopped red onion
salt, pepper, juice of 2 limes, 1 clove minced garlic.
optional: splash of red wine vinegar, 1 tsp sugar

Lastly, to store guacamole, put it in a plasticware dish that has a small surface area on top (such as a tall and narrow plastic cup with a lid. Before putting the lid on top, press plastic wrap over the top of the guacamole and try to press out as many bubbles as you can. Then put the lid on. Oxidation is what causes guac to turn brown and look unappealing. This will keep as much oxygen out as possible.

I eat avacado's right out of the shell. I just split it and take the seed out and eat. I have also mashed them in a bowl and added salsa, and used it as a cracker dip.

Avocados are mother's milk! Love them in salads just diced up or sliced. One very simple recipe (my favorite) is to mash or chop avocado, drizzle with extra-virgin olive oil and a squeeze of lemon juice and a sprinkle of salt to taste, and just eat with a spoon or use as a dip for corn tortilla chips (you can use baked or a healthy brand)

I like to use on sandwiches, too. Love taking a multi-grain or sourdough bread or roll, drizzle with extra-virgin olive oil and sprinkle with italian seasoning herbs. Layer avocado, good oven roasted turkey breast lunch meat, lettuce, tomato, thinly sliced onion and maybe some more avocado before you put the top of the bread on. May leave the meat out for a vegetarian sandwich.

One more: Diced avocado, citrus wedges, (grapefruit, oranges) diced red onion, chopped cilantro, 1 minced fresh jalepeno (opt. but really good) a squeeze of fresh lemon juice, and a pinch of salt, maybe a drizzle of honey if needed to balance if too sour. Again, eat with a fork...could add cooked shrimp, or without with tortilla chips. Super yummy!

Thought of yet one more way to do guacamole...buy premade pico de gallo from the grocery store and add a spoon full to mashed avocado, apply lime juice and salt/pepper...easy breezy!

To cut one open I always cut once all the way around the seed (lengthwise), twist and the halve separate. Take my knife and hit it against the pit so it sticks, twist, so it pops out of the fleshy part. Then I either score the avocado flesh to create cubes and turn the skin inside out (the cubes should pop right off) or just turn the skin inside out to have halves. :) My 2 year old will eat just like this if given the opportunity. :)

I love avacado toast...It is a great breakfast. Just mash an avacado and mix in a little garlic salt and pepper then put it on top a piece of toast. Simple and delicious!

Slices of avocado on a turkey sandwich is one of my absolute favorite things. Also, you can scoop out the flesh, cut it up and mix with some salad shrimp and pico and stuff it back into the shell.

I love avocados alone, as guacamole, or on sandwiches and salads. While I have never mashed it an put it in anything, I am sure it could just be pureed and placed in anything, such as casseroles. Those could be prepared ahead of time and placed in the freezer in individual servings for easy removal and heating. I have heard of pureed avocado being placed in chocolate pudding, so I am willing to bet it would work like that for many other things.

sliced avacado on burgers, salad, and some mexican food restraunts have fried avacado! I mash up avacado and mix it with mayo, a few drops tabasco, garlic and onion powder. For a avacado dip. The pre packaged avacado stays fresh for a while even after opened. We put it on sandwiches also. Alton Brown of the food networks "Good Eats" made an icing out of avacados!!!!
