2 Apples Left

Hi Moms,

I need your help! My mind is not with it today and I can not come up with a dish that uses 2 baking apples - I have 2 Granny Smith's left over from an apple pie and I am trying to figure out what to do with them...

I hate (irrational I know) baked apples so am looking for something with a crust (I have a pie crust in the fridge that I was going to turn into cinnamon twists) or struesel topping.

Thanks Everyone for some great ideas!

I wound of making apple pockets (not quite a turnover)... made an apple pie filling and quarter cirlcle shaped pockets. Sprinkled with cinnamon & sugar baked and YUM!

How about making apple turnovers with the leftover pie crust and apples, just add some brown sugar, cinnamon and a few drops of lemon juice to the apples. Another option is to dice up the apples and make an apple cake which the kids will love and so will you.

what about an apple loaf or muffins? no crust, but you'll only need about a cup of grated apple or so.

Apple cobbler. Fanny Farmer's cookbook has a really good one or you could use Bisquick. Put a little orange juice in the bottom of an 8X8 pan to keep the apples from sticking. Slice the apples and place them on the bottom of the pan. Put your cobbler mixture on top and bake.

why not just get some caramel and slice up the apple and dip and eat!

you could take small portions of the dough, slice up the apples and mix with some cinnamon, sugar and maybe 1/2 tbsp of butter cut into 4 little squares. lay out the dough (roll out or just use your hands to make little circles or squares), lay some of the apple mix in it and pull the dough up to cover the filling and fold at the top, cut a few slits in it and bake like you would an apple pie but just for a few minutes. they're like mini pies.

i've done it a couple times, and even thrown a few cranberries or raisins in the "filling". you could also brush melted butter on top and sprinkle some cinnamon/sugar mix for a sort-of-streusel topping.

my girls just like that they are miniature. they couldn't care less what i've mixed up and put inside. LOL> :)

Waldorf salad.
Actually, apple slices dipped in blue cheese salad dressing is pretty good.

A terrific salad:
- arugula (or arugula & baby spinach mixed)
- gorgonzola cheese (or blue cheese)
- apple slices
- chopped wlanuts

toss lightly w/a balsamic vinaigrette

YUM!!!

Cut the crust in half and make two apple turnovers! Just prepare the apples like you would for a pie, make little crust pockets and seal them with a little water or milk. Cut a vent for steam and bake them!
