I need a granny smith apple dessert recipe with a crust that doesn't have to be rolled. I'm thinking maybe a shortbread crust or similar that i can push into the pan with my fingers. My rolling pin is packed away right now.
Thanks!

Betty Browns

½ c butter, softened
1 c sugar
1 egg
1 c flour
½ t baking soda
½ t baking powder
¼ t salt
1 t cinnamon
2 c chopped, peeled apples (Granny Smiths work well)
½ c walnuts, chopped

Mix butter, sugar and egg with a mixer. In a separate bowl whisk together flour, baking soda, baking powder, salt and cinnamon.

Gradually add the dry ingredients to the wet mixing thoroughly but not too much. Stir in apples and walnuts.

Spread batter in a 9", greased pan. Bake at 350 for 35-40 min (longer for a doubled recipe) or till a tooth pick inserted in the center comes out clean. Store on counter covered lightly. Cake tends to get soggy if covered too tightly.

Serve with whipped cream or butter sauce.

Butter Sauce
1/3 cup butter
2/3 cup sugar
1/2 teaspoon cinnamon
1/3 cup half and half
Combine all ingredients and heat on low/med heat till butter melts, stirring constantly to combine ingredients and prevent burning. Store leftovers in fridge, reheat to use.

**Can be doubled into a 13 x 9 pan**

if you still want to do a pie, pre-made refrigerated crusts are good too. just make your regular homemade filling. you can use cookie cutters or a knife to make the top crust an interesting pattern.

I use the pillsbury crusts and they are delicious, I have had many ask if I made the crust myself. All you do is open the package and unroll the flattened, prerolled crust. Then, the BEST apple pie is on allrecipes website under Grandma Oples apple pie. Granny smith apples and only a couple other ingredients, so it is easy. It has over 1000 reviews adn still 5 stars. SO GOOD!

Preheat oven to 350.

Mix first three ingredients together. Press half into an 8” or 9” pan.

What about apple crisp?

8-12 Granny Smith apples, peeled, cored, sliced
1 c. butter, room temp.
1 c. flour
1 1/2 c. packed brown sugar
1 1/2 c. oats
1 tsp cinnamon
1/2 tsp nutmeg

Mix butter, flour, sugar, oats, and spices together to make crumb topping. Layer 1/2 crumbs on bottom of greased (I spray with Pam) 2 qt baking dish. Add apples (I usually sprinkle more cinnamon on top of apples). Sprinkle rest of crumb topping over apples. Bake (uncovered) @ 350 for 40-45 min. Don't cover unless it starts getting too brown. Let cool 15 minutes before serving. Serve with vanilla ice cream and caramel sauce if desired.

Good luck!
