I wouldn't be concerned as young as LO is, but just keep in mind that some children can have a sensory integration issue - therapy with an occupational therapist worked wonders with a friend's child.
So my 11 month old is a very picky texture eater??? He loves cheerios and puffs and baby food...but when we try to give him for example Mac and Cheese he makes the most horrible face and spits is out then will hold his mouth so tight you can't get anything in it??? Any ideas on how to transition??? He loves big boy food but its all a testure thing...I hate to say it but I am 100% a texture eater too....HELP!!!

make the foods he is not sure of with foods/tetures he likes. make the mac with a crumble on top that is nice and crunchy and see where he goes from there. You just gotta get creative and get those textures into the foods he likes to make the transition.
Pick up a copy of FEED ME I'M YOURS by Lansky. LOTS of ideas including lots for transitioning.

Main thing is that he eats.

Just don't make it a 'battle.'
That is never good, just over food.
He is still really young! Just keep trying and have him watch you eat it. Not every kid likes things like pasta...my son doesn't. What about fruits and veggies? Does he eat those or just cooked foods of mixed textures. Start out with various food of different textures then you can move on to mixed ones. If he loves big boy food, then what is the problem?
My 14 month old DD is the same way. She will eat almost anything we feed her in terms of flavours but if we try to give her the stew like baby food mixtures with chunks of potatoes or carrots she gags on them. She hates the texture of oatmeal, rice, potatoes, yams. She is a very good eater with things like her cheerios and puffs and toast ect, but the texture of some things is a big old no. I myself am like that too so I guess I cant blame her too much

He is still pretty young and cheerioes, puffs etc are still good things for him to practice with. Many times this behavior can be because they don't feel comfortable or safe with a certain food or texture. My son was like that then we found out he had Dysphagia & silent aspiration so no wonder he didn't want to eat most things. His body knew that his gag reflex was not there and he could not protect his airway. Not saying that is your sons issue just simply he doesn't feel safe with certain foods. I am sure he will eat great as he gets older. My ds at 2 years now eats everything (literally)....I can't believe its the same kid!
Have patience, he will get there
