This year my family volunteered me to make the sweet potatoes for the thanksgiving dinner. After my crunchy mac n cheese last year, I thought they would tell me to bring the plates this year. lol. I have never made sweet potatoes,... I'm thinking, get some canned sweet potatoes and mix in some sugar, brown sugar, vanilla, cinnamin, and nutmeg. Sprinkle some marshmellows on top. How does this sound? Whats your recipie?
thankyou everyone! I am soooooo proud of myself. lol. This thanksgiving I cooked something that actually was kinda good. I followed you ladies advice and used real sweet potatoes. All of your recipies were pretty much the same and I did just what you all said. Next time I make them I think they will come out better. Practice makes perfect!

Some of my friends take them, slice them length wise, shaped like McDonalds Hash Browns. Then they dot them with butter and bake for about 20 minutes, until they are soft. The sprinkle brown sugar on them and then slide them onto a serving plate. They are so good.
I wouldn't use canned potatoes for sure. Sweet potatoes baked in the oven, skin on, are wonderful and you really cannot overcook them if you are going to mash them up anyway. Baking them brings out the sweetness.
I have a cookbook from back home that is full of southern recipes, and this one is in there. I make it, and it is stupid good.
3 c. cooked, mashed potatoes ( if you bake them, take the skin off before mashing)
1 c. sugar
1/2 c. butter
1 egg, beaten
1 tsp. vanilla
1/3 c. milk
Mix and place in baking dish ( you may want to add more milk/butter, so make certain to taste it before you put in the dish)
Topping:
1 c. brown sugar
1/2 c. flour
1/2 c. butter
1 c. chopped nuts (I use pecans)
Mix well and sprinkle on top. Bake at 350 for 25 minutes, or until the top looks bubbly and brown.

Definitely use fresh sweet potatoes and I know a lot of people do the marshmallow thing, but that's how my grandmother always made them when I was a kid and I hated them. It wasn't until college that I had them without marshmallows and now I love them. This is my favorite way to make/eat them (Mashed Spiced Sweet Potatoes):
3 pounds sweet potatoes
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
2 tablespoons pure maple syrup
1 tablespoon butter, margarine or light vegetable oil
Directions
Preheat the oven to 400 degrees.
Place the sweet potatoes directly on an oven rack (no tray is needed and no need to poke holes in them). Depending on the size of the sweet potatoes, the cooking time will vary. An average-size sweet potato takes about 45 minutes but large ones can take longer, sometimes up to 75 minutes if they are the giant kind.
Once you can easily poke through the potatoes in the center, they are done. Remove from the oven and split them lengthwise; leave them opened to speed up cooling.
When still warm but not too hot to handle, scoop out the sweet potatoes with a spoon and place in a large bowl. Discard the skins.
Add the remaining ingredients and mash everything with a strong fork. Serve warm.
Don't forget the butter!
Start off with mixing in the butter and brown sugar. Then go by taste with the rest. Start off light. Always easy to add more later!!!
Just go eeeeeeasy on the nutmeg. Too much makes it taste alcoholic/ burns your mouth and sinuses and obliterates other flavors . Just a pinch. Nutmeg you don't actually want to TASTE. It brings out the flavors of other spices when it's used sparingly/ adds wonderful depth. But if you can taste it, it's too much.
HINT: Bake. THEN put marshmallows on top and bake COVERED. Uncover once they've melted all gooey to brown them up. SO easy to burn the marshmallows!

If you aren't a seasoned pro with baking them and peeling and then adding all the other stuff, just get the canned stuff.
You don't need regular sugar if you are using brown sugar. We like chopped green apple in ours as well.
Cover, toss in the oven to heat through.
We are a family of yam and sweet potato lovers so we eat them every possible way all the time, but dress them up a bit for the holiday.
I also like to add chopped walnuts, but that's a personal preference with a family with no nut allergies.

My family has never made sweet potatoes like that...we just don't get it. I roast my fresh sweet potatoes wrapped in foil for a few hours on about 400 degrees until they are very very soft. Make sure you wrap each one because they start to leak and can burn. Then unwrap them and remove the skin putting them into a cuisenart or kitchenaid mixer. Start mixing in real butter (I would say 1-2 sticks depending on how rich you like it and how much you are making) and some brown sugar. No more than 1/2 cup. Add salt as well and taste. It should have a nice creamy, roasty, slighty sweet and mildly salty taste.
DO NOT USE CANNED YAMS!! (eeeewww!!)
Candied Yams/Sweet Potatoes
peel sweet potatoes (I usually do 2 or 3 sweet potatoes)
boil to desired tenderness
while boiling preheat over to 350 - if you are cooking turkey at the same time - increase heat 25 degrees
when done to desired tenderness, drain and slice.
place in baking dish
top with SMALL marshmallows (NOT THE COLORED ONES) I admit I don't have a set amount- I ALMOST cover the yams!
chopped walnuts (I usually use about 1/2 to 3/4 cup)
brown sugar (about 2 tablespoons)
Karo syrup (about 2 tablespoons)
bake for 20 minutes or until the marshmallows are "tan".
YUMMY!!!
Peachy Crockpot Sweet Potatoes
To make this a four ingredient recipe, sprinkle the potatoes with your favorite crunchy granola just before serving for a great texture contrast.
Prep Time: 20 minutes
Cook Time: 3 hours
Total Time: 3 hours, 20 minutes
Ingredients:
• 2 lb. dark orange sweet potatoes
• 1 cup peach pie filling
• 2 Tbsp. butter, melted
• 1/4 tsp. salt
• 1/4 tsp. pepper
Preparation:
Spray a 4 quart slow cooker with nonstick cooking spray and place sweet potatoes in the slow coker. Add pie filling, melted butter, salt and pepper and mix well. Cover and cook on high for 2-1/2 to 3-1/2 hours until potatoes are tender when pierced with a fork. 10 servings
My mom always makes a sweet potato casserole for Thanksgiving. I don't eat them at all, but I'll make them and always get compliments when I've used her recipe:
2 2 lb cans yams
3/4 cups brown sugar
1/2 cup margarine
2 eggs
1/2 tsp cinnamon
1 tsp vanilla
Marshmallows
Open the yams and drain the juice. Place the yams in a pot, cover with water, and boil 20 minutes. Drain the water, and put the potatoes in a large mixing bowl. Add brown sugar, margarine, eggs, cinnamon, and vanilla. Whip until mixed, light, and fluffy. DO NOT scrape the beaters into the mixture!
Butter a casserole dish. Transfer the whipped mixture into the dish and cook at 350 for 25 minutes. Add marshmallows and brown the tops.
Can also add:
orange juice
date syrup
raisins
loads of real butter
(no counting calories for this dish :))
If you have never done sweet potatoes before, I think can be a bit tricky.
Choose fresh YAMS/sweet potatoes, smaller size are easier to handle because they are hard to cut, not like white potatoes. Get the brightest colored ones, richer more orange in color than the paler sweet potatoes.
Peel and chunk or slice into fairly large bite size or rounds. They turn dark quickly so sort of need to work fast, place in water to keep from getting dark until you can get them in pan to cook.
I use very large skillet, put in shallow amount of water and cook covered until tender, will need to turn gently during cooking process and they cook fairly quickly maybe 10-15 min. Check for tenderness and watch closely, water should be mostly absorbed, don't let burn or scorch even if you need to add a tiny bit more water. Salt and lightly pepper (optional), generous amount of butter, sprinkle brown sugar over top and gently turn to coat. This makes them more carmelized. If they overcook, they will get mushy and fall apart. (normally, for me, they are done, but for dressing up/fancier go to next step for company dinner)
(salt brings out the sweetness so don't skip it)
Place in large bake dish, place some marshmallows and pecans, broil until the marshmallows are lightly browned and melting.
Other spices could be used in the cooking, like cinnamon or nutmeg, but I think better without. Of course it is a taste thing. I love cinnamon and nutmeg but not with sweet potatoes. I personally don't like overly sweet, so if using marshmallows, go light on the sugar, and I don't like them soupy or floating in lots of liquid either.

I agree, fresh sweet potatoes. I use Jenniferajr's recipe. I found it on allrecipes.com. I love it and I hate sweet potatoes, and I always get asked to make it for all holiday functions that I attend.
Another yummy way to do sweet potatoes is to peel, chop and boil the potatoes, as you would with regular potatoes for mashed potatoes,then drain and add in some butter, a little warm cream or milk, and then mash them with a potato masher )or you can use your Kitchenaid to mash them), then mix in cooked, crumbled bacon, shredded cheddar cheese, salt, pepper, and sliced green onions. I love the sweet versions of the sweet potatoes, with sugar and cinnamon and whatnot, but I made this version not too long ago and it was sooo good, I will be making it for Thanksgiving this year. I cook and peel sweet potatoes. Then slice them laying them in a single layer in a pan. Sprinkle brown sugar on top. Layer marshmallows on top and put them under the broiler to brown the marshmallows.
To cook sweet potatoes: I use the microwave. I cut the potato in half lengthwise and then lay them cut side down in a dish. Add 3-4 T water and zap them until a fork enters them easily. Let cool. Then pull the peel off. Or you can boil them on top of the stove. When I've done that I cut them in thirds or fourths crosswise. Add an inch or two of water and bring to a boil. Then turn heat down to a simmer until fork tender.
That sounds similar to my recipe. I just boil sweet potatoes and then peel them and whip them with a little orange juice and brown sugar and then top them with marshmallows and bake. Its a hit every time! Gook luck!
Get a big shallow baking dish. And however many can's of sweet potatoes you need for your dinner. (you can use fresh also but peel and par boil them first)
we always spray the bottom of the dish with pam. then layer the sweet potatoes in it on top of the sweet potatoes use about a stick of butter and cut it into pieces and layer that over the potatoes use about a cup of brown sugar and layer that over as well. cover tightly with foil or lid if the dish has one. put in oven on 350 for about 30 minutes. pull out and check on them. if the butter and sugar has been melted in they are done. pull out and set aside until right before time to eat. put back in to heat thru and put layer of mini marshmallows over the top and leave in to melt and just slightly start to brown. if you like nuts you can put in either pecans or walnuts and when my mom makes the sweet potatoes she puts in raisens also.
