Sweet potatoes are very healthy...but I don't have any recipes for them. I want to start incorporating this ingredient into my cooking. I need some ideas and some contributions. Please help.

One of my favorite ways to cook them is to peel, chop up into large bite-size pieces, drizzle olive oil over them, put them on a cookie sheet (line with foil or parchment!)sprinkle with salt and pepper (add rosemary or thyme if you'd like), roast at 350-375 for 10 minutes, flip the pieces over, roast for another 10 minutes, and you are done. Carmelized on the outside, moist on the inside. Hubbie and 16-month-old son love them!

Have you tried sweet potato fries?

This recipe is adapted from Leanne Ely's Saving Dinner, Oven Fries. Just adjust the quantities for how many people you want to feed.

olive oil, for lightly coating
sweet potatoes, peeled and sliced like fries, the thinner the better (and crispier)
salt & pepper to taste

Preheat oven to 425 degrees F.
In a large mixing bowl, drizzle oil over the potatoes and toss to coat. Add salt and pepper and toss. Place sweet potato fries in one even layer onto a baking sheet. Keep space between them so they get crispy on all sides. Bake in batches.

Place into the oven for 10 minutes, then flip them over. Place back in for 10 more minutes. Keep cooking them and flipping them until they're crispy and slightly darker than golden brown. Let them cool for 5 minutes before serving.
My kids (and husband) like them!

I don't know any recipes per say. But they taste great mixed in with red chili and with pasta sauces. You just don't want to add too much.

pancakes:
1c water
1/2 c sweet potato puree
1/4 t cinnamon or pumpkin pie spice
1 c pancake mix
cooking spray
1 T veggie oil
maple syrup

I a large bowl, mix the water, potato, and cinnamon. Add the pancake mix and stir just to combine--the batter should be lumpy

Coat a griddle or skillet with cooking spray and set over medium-high heat. When the pan is ehot, add the oil and spoon the batter onto the griddle using 1/4 c pancake batter.
Cook until bubbles form on top and the batter is set, 2 to 3 minutes. Flip pancakes and cook other side.

If you check out the Sneaky Chef or Deceptively Delicious, they have great recipes that utilize lots of fruits and veggies, that are also kid friendly.

Weight Watchers also has some great recipes, like Sweet-and-Spicy Sweet Potatoes.

2T + 2t ketchup
1T Worcestershire
1 T red wine vinegar
1 t yellow mustard
1/2 t ground pepper
1 pound sweet potatoes, peeled and cut lengthwise into 1/4 inch slices

Spray the grill rach with nonstick spray, prepare the grill for medium fire using the direct method. Combine the ketchup, Worcestershire, vinegar, mustard, and pepper in small bowl, mixing well.

Brush the potato slices on both sides with the mixture. Place slices on the grill rack and grill, turning frequently with tongs and brushing with remaining ketchup, about 8 minutes. Serve hot.

Hi J.! Sweet potatoes are so healthy. This easy recipe is my family's favorite.
For 4-5 servings

3 Lg. sweet potatoes
4 tbs. plain yogurt
2 tbs. fresh chopped dill
2tbs. fresh chopped chives
2 tbs. orange juice

Just bake the potatoes for about an hour. Then peel the skins away, toss them into the blender with the other ingredients and blend. You get a creamy really yummy side dish!

Hi J.,
We eat them often. Like others have said just use them like you would a regular potato. My favorite way is just roasted. Cut up sweet potato, carrot, onion, whatever you like, toss it with a little olive oil, garlic, salt, pepper, and tyme and lay in a single layer in a baking dish. Roast in a 400 oven until tender. Just make sure you buy sweet potato and not yams...very different. Yams are good with sweet dishes.

We like to peel them and cut them up into thin sticks or wedges. Then you toss them with a little olive oil and put on a cookie sheet. sprinkle with lots of salt and pepper.Cook in the oven at 375 for 30 or 40 minutes until they are done. They have a lot of flavor and I like them more then regular potatoes.

Ok, so we got this recipe from a ward relief society cook book, and I kid you not, everyone eats it.

40 oz sweet potatos
1 egg
1/2 c sugar
1 tsp cinnamon
1 c melted margarine or butter
1 c crushed ritz crackers (walmart brand works too)
3/4 c brown sugar
1 stick of butter melted
1/2 c chopped walnuts

Mix potatos, egg, sugar, cinnamon, and margarine with a mixer and pour into 9x13 pan. Mix crackers, brown sugar, melted butter and walnuts by hand and spread on top. Bake 350 for 30 minutes

Best recipe ever. Every kid that we have put it in front of (there are 10 grandkids now, not to mention the four adults) eat it right up. I dont usually go for sweet potatos, but I eat this.

Get Deceptivelt Celicious by Jessica Seinfeld if you have not already. and I use it preed in everything rom pasta sauce to chicken nuggets (mix with the egg).

We often grill out in the summer. Sweet potatoes are a great substitute for regular fries if you are having fries. You can chop them up in large chunks, toss them in olive oil and salt and pepper and then spread them on a cookie sheet. Set the oven for 400 degrees for about 45 min- hour. They are also great with baked chicken wings! We are big fans of them. :-)

I recommend you look up on the web North African/Ethiopian food recipes. Yams/sweet potatoes seem to be a popular ingredient. I've also made some vegetarian recipes by Mollie Katzen such as a tofu and sweet potato main dish.
By the way, I think I read that yams are more healthful than sweet potatoes, especially the "redder" they are. I did a taste-test & liked the ruby yams best. I also found them not stringy. Serve baked with butter, brown sugar & cinnamon or maple syrup. Best recipe? a variation on yams sold by street vendors in Mexico City: Bake for about 1 1/2-2 hrs. Slice. Serve topped with pecans and some condensed milk. Yum!

We absolutely love baked sweet potatoes. The process is the same as regular potatoes and then we put on a little butter and brown sugar.

Cook them just like you would a potato. Make them into strips, put them in light olive oil, salt or season to your liking and bake them in the oven at 350 until crisp on the outside and yummy in the middle. My kids love sweet potato fries. You can boil them, mash them or whatever you would do for a regular potato.

Go get Deceptively Delicious by Jessica Seinfeld. It's an awesome book using vegetable purees in every day cooking for kids. Sweet potatoes, squash, spinach, all kinds of really good veggies and the recipes are fantastic.

Otherwise, you can bake sweet potatoes, mash them, twice bake them, almost anything you can do with a regular potato you can do with a sweet potato.

Hi J. I just wanted you to know that sweet potato's are naturally sweet. I just wash the outer part and put into my microwave for about 8 min. according to potato size and thickness and a little I cannot believe it's butter and just eat.Hope this will work. you can add brown sugar and white sugar, but like I said sweet potato's are naturally sweet.

One of my favorites is to slice the sweet potatoes thin and layer them in a buttered casserole dish with a few butter slices, a pinch of grated fresh nutmeg, and a handful of grated romano or asiago type cheese between all the layers. Then cover and bake until tender in a 350 degree oven. You can also add cream if you like really rich food. This is my version of sweet potatoes o'gratin.

I use them in my stews and soups as well. They are especially nice in very savory or spicy dishes, as the sweetness mixes well. You can also slice them thinly and fry them in good oil like olive, coconut, or sunflower oil, and after about 10 minutes, add some thinly sliced onions to the pan. I fry them on Med. heat so the sugars in the potatoes don't caramelize and burn before the potatoes are cooked through.

They make great potato salad as well. I like to make it with jalepenos and a vinegarette instead of a mayonnaise dressing.

Have you ever tried sweet potato fries? They are great. I have never made them, but I imagine they are similar to regular french fries in preparation. I have also had delicious sweet potatoes on the grill: slice into rounds, marinate with other veggies, then grill a few minutes each side until tender.
