Yummy Casserole Dishes

I just found a great recipe for Chicken lasagna. It sounds so good and easy to make.
I am looking for more recipes of yummy casserole or bigger dish items that I can serve one or two nights and maybe freeze the rest. My kids aren't big fans of pasta or potatoes so that limits me a lot of the times. If you have any yummy easy recipes to share I would love to see them and try them out! :) They love baked potatoes but not mashed and they will eat pasta if in spaghetti, mac and cheese and lasagna. Thanks!

I have a great one dish wonder. All you need is rice, cream of chicken soup, canned or boiled chicken(if you want more meat chunks) and a few drops of lemon juice to suit your taste. Just boil as much rice as you want then add the soup and chicken. Measurements all depend on how much you are making and how thick you want it to be. I add the soup in first and then water til its the consistency we like, to each their own. Once heated add some lemon juice, it doesnt make it sour just bumps it up a knotch. My 6yr old and toddler LOVE this and its quick and easy. Hope it helps.

How about Mexican Lasagna? It is basically a layer casserole. Use flour or corn tortillas (your choice), and layer them with refried beans, taco meat, cheese, olives, onions, and salsa (not a really runny one--Pace works well). Keep layering until you reach the top of the pan, and then make the final layer cheese. Bake at about 375 until golden and bubbly.

Chicken Enchilada Casserole -- nothing like real enchiladas, but sooo good!
ingredients:
3-4 chicken breasts
1/2 onion
4-5 celery sticks
1 can chicken broth
1 can corn
1c (about) salsa
cornstarch
1 can green chilis
cheddar cheese (grated)
1 box cornbread mix

about 1c salsa
Take about 3-4 chicken breasts cubed and boil in 1 can of chicken broth (you can add pepper or other spices if you want)
add in about half an onion diced and about 4-5 celery sticks diced
**these are guesses because i never measurer!
boil that until chicken is fully cooked and the onion and celery are a little soft.
Add 1 can of corn and about a cup of salsa (more or less to taste)
simmer for a few min
mix 1 tsp cornstarch with COLD water (so it doesn’t create lumps) and then add to the pot to help thicken
Pour content into 13x9 baking dish and top with 1 can diced green chili’s and cheddar cheese to taste
Prepare 1 box corn bread mix according to directions and then pour over casserole. (it won't look like it covers everything, but once cooked it will spread).
Bake at 425 uncovered for about 30 min or until brown and bubbly
let it rest so that its not too soupy.

Thanksgiving dinner in a casserole
1 package cornbread stuffing (i think they are 8oz)
4 chicken breasts
1c butter
1 can cream of mushroom soup
1 can cream of chicken soup
2 cans chicken broth

cube and boil chicken
melt butter and combine with stuffing
combine both cans of chicken broth with cream of mushroom and cream of chicken soup

use 13x9 baking dish
put 1/3 stuffing in the bottom of the dish
add 1/2 the chicken
add 1/2 the soup
add another 1/3 of the stuffing
the other half of the chicken
the other half soup mixture
top with remaining stuffing
bake at 375 for about 30 min uncovered

Hey D., I love casseroles too. Here is a link to one I use alot! I usually add veggies into it too. My little boy is a very picky eater but he seems to like this one.
