So I'm another casualty of the documentary "fork over knives". I'm not going vegan by any stretch, but am looking to lessen the meat and dairy intake in my house. Just want to know what some of your go to foods are. I know for myself I often don't have anything cooked ahead of time so I'm reaching for ready to serve items when I realize its meal time. Lentil soup from a can was a huge hit. they also like hummus. Any other ideas?

Quinoa is great for vegans because it is a complete protein, containing all nine essential amino acids. I have bought a premade version at Trader Joes (just heat and serve) that was good, or you can make all kinds of good salads and dishes with it.

check my DIL's website, it's in my profile, she has lots of good vegan recipes that she feeds my 3 yr old granddaughter. vegobsession.com

She's rubbing off on me some, I do believe there is good things for our health by leaving out meat and meat byproducts, it's hard to get there tho when you've lived a life as a meat eater. It is way easier on your digestive tract tho.

Blueberry pancakes (with oats, flax seed etc) are a "go to" at our house. The recipe calls for an egg, but I've made them without it and they're just as good. Send me a message if you want the recipe.

Otherwise, I'm heading to Austin for dinner with "Laurie A" - her answers sound delicious! :D

Pasta with tomato sauce and veggies is a big hit in our house, and so is vegetarian stir-fry. Bean burritoes or tostados, too.
